APPLE PIE CHIMICHANGAS
These apple pie chimichangas are so easy to make, you'll make them often!

Steps:
- Heat about 1/2-inch of oil in a large deep skillet over medium heat until oil reaches 350℉
- Mix sugar and cinnamon in a small bowl; set aside.
- To make tortillas more pliable, place the stack of 8 between 2 paper towels and sprinkle towels with about 1 tsp water. Microwave on high for 10-15 seconds.
- Place about 1/4 cup of the pie filling in the center of each tortilla. Roll up egg-roll style. Secure end with a toothpick. Repeat for remaining tortillas.
- Fry 2-3 chimichangas at a time, about 3-4 minutes each side until golden brown. Drain on paper towels.
- Repeat for remaining chimichangas.
- Roll warm chimichangas in cinnamon sugar. Serve with caramel sauce if desired.

APPLE CHIMICHANGAS
Steps:
- Heat a heavy medium skillet over medium heat and melt butter. Add sugar and cinnamon and continue cooking until browned, about 4 to 5 minutes. Add apples and pears and cook until slightly softened, another 6 minutes. Add tequila and continue cooking until browned, another 5 to 7 minutes.
- Place 1 tortilla on a plate, and spoon about 1/6th of the apple/pear mixture into the center. Roll them and tuck the ends, egg-roll style, and secure them with toothpicks.
- In another skillet, heat vegetable oil over medium heat until a drop of water sizzles and pops in the oil, about 350 degrees F, and fry each chimichanga until browned and crispy, about 2 to 3 minutes per side. Transfer them to a plate lined with paper towels to drain. Remove the toothpicks and cut in half.
- Serve hot, topping with a scoop of the vanilla ice cream.

- Heat oil in a medium skillet. Add onion and cook until soft and translucent, 4 to 6 minutes. Add chicken, Neufchatel cheese, diced chiles, chicken broth, taco seasoning, salt, and pepper. Cook and stir until mixture is well combined and Neufchatel has softened been incorporated.
- Heat tortillas in a large skillet or directly on grates of a gas stove until soft and pliable. Place 1/3 cup chicken mixture down the center of each tortilla and top with a heaping tablespoon of Mexican cheese. Fold top and bottom of tortillas over the filling, then roll each into a burrito shape. Mist with cooking spray and place in the basket of an air fryer.
- Air fry at 400 degrees F (200 degrees C) for 4 to 6 minutes. Flip each chimichanga over, mist with cooking spray, and air fry until lightly browned, 2 to 4 minutes more.

- Heat apple pie filling in a small pot over medium-low heat until warmed through, about 5 minutes.
- Place cinnamon sugar in a shallow dish.
- Spoon 1 1/2 tablespoons of filling onto each tortilla. Fold in opposing edges and roll up as you would a burrito.
- Heat oil in a large, deep saucepan over medium heat.
- Place a batch of rolled tortillas seam-side down in the hot oil and fry until browned and crispy, 1 to 2 minutes. Turn and continue frying until all sides are browned, 1 to 2 minutes more. Roll in cinnamon sugar to coat. Repeat with remaining batches.
