AIR FRY TURKEY TAILS, ADOKOUGBI (TOGOLESE CUISINE)
These air fry turkey tails are such a loved turkey parts in west Africa. It is love or hate. For some reason the fat in turkey tail makes this part so delicious and flavorful. This dish is popular in togolese street along with fried turkey wings. Commonly called in Mina language as Adokougbi, this meat often goes with koliko, fry plantain or fry sweet potatoes. Because turkey tail is full of fat, there is no need to deep fry it although it is deep fried originally. I use to bake it with takes longer. Luckily, the airfryer came to the rescue. I always boil seasoned turkey tails before frying them. If using a pressure cooker, poultry setting will of course work. Do not cut the turkey tail befor cooking. Just cook it as is and you can cut it into your desired portion after it is done air frying. After boiling, because the meat is greasy, it is best to place it in the airfry basket for frying. You do not need to overload the airfryer basket as you need to allow even distribution of the heat. Fry turkey tail goes with hot pepper. Here I used green hot pepper sauce; check the recipe here. The meat usually accompagn dishes like Akpan, fry yam, fry plantain, gari pnon, eba,alloco, koliko....

Steps:
- 1 Clean and place the turkey tale in a large pot. 2 Add onion, garlic, ginger, msg-free bouillon, black pepper, salt, bay leaves. 3 Add water to cover and bring to a boil. (You can cook this on poultry setting in your pressure/slow cooker) 4 After 10 minutes turn off the heat. Remove the turkey tails from the liquid and place it in a bowl to let the extra liquid drip off 5 Put the turkey tails in an air fryer basket and place it in the air fryer. Close the air fryer and cook for 15 minutes at 375 degree F. 6 Open the air fryer, flip the meat and cook the other side for 15 more minutes or until all side are nicely golden. You can continue cooking for another 10 minutes depending on how crispy you like the meat) 7 Remove and serve a with hot pepper sauce, it goes really good with bread also as a sandwich
