My mom taught me how to make egg rolls, and since she has passed away I think of her every time I make them. These air-fryer egg rolls taste so good, you'll never want a fast-food egg roll again. -Jenniffer Love, South Waltham, Massachusetts

2 cups hot water
3 cups fresh bean sprouts
1 pound ground chicken
6 green onions, chopped
1 tablespoon minced fresh gingerroot
3 garlic cloves, minced
1 jar (11 ounces) Chinese-style sauce or duck sauce, divided
1 tablespoon fish sauce or soy sauce
1 teaspoon soy sauce
1 package (14 ounces) coleslaw mix
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
18 egg roll wrappers

Steps:

  • Pour hot water over bean sprouts in a small bowl; let stand 5 minutes. Drain., Meanwhile, in a Dutch oven, cook chicken over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Add green onions, ginger and garlic. Cook 1 minute longer; drain. Stir in 1/2 cup Chinese-style sauce, fish sauce and soy sauce; transfer to a large bowl. Wipe pan clean., In the same pan, cook and stir coleslaw mix, spinach and drained bean sprouts until crisp-tender, 4-5 minutes. Stir into chicken mixture. Cool slightly., Preheat air fryer to 400°. With one corner of an egg roll wrapper facing you, place 1/3 cup filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat., In batches, arrange egg rolls in a single layer in greased air-fryer basket; spritz with cooking spray. Cook until golden brown, 8-12 minutes. Turn; spritz with additional cooking spray. Cook golden brown, 4-6 minutes longer. Serve with remaining Chinese-style sauce.

1 (8 ounce) package mozzarella cheese
1 (10 ounce) package egg roll wrappers
1 cup marinara sauce, divided
10 ounces mini pepperoni
2 tablespoons olive oil, or as needed
2 teaspoons Italian seasoning
1 teaspoon garlic salt

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Cut mozzarella cheese into 6-inch sticks.
  • Place 1 egg roll wrapper on a flat surface, positioned to look like a diamond. Add 1 teaspoon marinara sauce, 1 mozzarella stick, and 2 tablespoons mini pepperoni to the bottom third of the egg roll wrapper.
  • Roll up the bottom point over the filling, towards the center of the wrapper. Fold in the left side of the wrapper to cover the center. Fold in the right side of the wrapper to cover the left fold, like an envelope. Roll up the egg roll until just the top point is exposed. Brush some water on the top point and fold down. You may need to brush a bit more water over the edges to create a seal.
  • Repeat for the remaining egg rolls. Brush olive oil over the tops. Sprinkle Italian seasoning and garlic salt over the tops.
  • Brush some olive oil over the air fryer basket. Add egg rolls to the basket seam side-down, without letting them touch each other. Reduce the temperature to 360 degrees F (180 degrees C) and air fry for 8 minutes, flipping at the halfway point. Serve with remaining marinara sauce.

  • To wrap the egg rolls, place the egg roll wrapper so that one corner is towards you. Place a tablespoon of filling in the bottom half (towards you) and wrap that corner over the filling. turn both sides over the wrapper and then continue rolling away from you (like a burrito), till you reach the end. Seal the edges with some water or a beaten egg. Repeat till all the wrappers are made.
  • Spray the basket of the air fryer with olive oil spray. Place the egg rolls in the basket and lightly spray the tops of the egg rolls with the olive oil spray. Cook at 400 degrees for 6 minutes. Then flip the egg rolls and cook for an additional 6 minutes.
