- Lightly oil an 11 by 7-inch baking dish. Transfer the hot polenta to the prepared baking dish, spreading evenly to 3/4-inch thick. Refrigerate until cold and firm, about 2 hours.
- Preheat the oven to 250 degrees F.
- Cut the polenta into 2 by 1-inch pieces. Heat the oil in a heavy large skillet over medium-high heat. Working in batches, fry the polenta pieces until golden brown on all sides, about 3 minutes per side. Using tongs, transfer the polenta pieces to paper towels and drain. Place the polenta pieces on a baking sheet and keep warm in the oven while cooking the remaining batches.
- Transfer the polenta pieces to a serving platter. Sprinkle the polenta with the Parmesan cheese and salt. Serve, passing the marinara sauce alongside.
- Bring 6 cups of water to a boil in a heavy large saucepan. Add 2 teaspoons of salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 15 minutes. Turn off the heat. Add the butter, and stir until melted.
POLENTA FRIES RECIPE BY TASTY

- Grease a baking sheet with nonstick spray.
- In a medium pot over high heat, add the milk and vegetable broth and bring to a boil.
- Whisk in the polenta and reduce the heat to low, whisking continuously for about 5 minutes, or until all the liquid has been absorbed and the polenta is creamy.
- Add the butter, salt, pepper, oregano, thyme, and rosemary and stir until well-combined.
- Transfer the polenta to the prepared baking sheet and spread out evenly with a spatula. Chill for at least 2 hours or up to 3 days to set.
- If baking, preheat the oven to 425ºF (220ºC).
- Make the aioli: Combine the mayonnaise, garlic, parsley, and lemon juice, salt, and pepper in a small bowl and mix until well-combined. Chill until ready to use.
- Carefully flip the baking sheet onto a cutting board to release the polenta. Slice in half lengthwise, and then cut into 22 equal-sized fries, each about 4 inches (10 cm) long and 1 inch (2 ½ cm) wide.
- If baking, use a spatula to transfer the fries onto wire racks set over 2 baking sheets. Brush each fry generously with olive oil. Bake for 30 minutes, flipping halfway through and brushing with more oil, until golden brown.
- If frying, heat the canola oil in a large pot until it reaches 375ºF (190ºC). Using a large spider, submerge 2 fries at a time into the oil and fry for 2-4 minutes, until golden brown and crispy. Remove from the oil and transfer to a plate lined with paper towels to cool for at least 5 minutes.
- Serve the fries with aioli.

- Preheat an air fryer to 350 degrees F (175 degrees C).
- Slice polenta into long, thin slices resembling french fries.
- Spray the bottom of the basket with cooking spray. Place 1/2 of the polenta fries in the basket and lightly mist the tops with cooking spray. Season with salt and pepper.
- Cook in the preheated air fryer for 10 minutes. Flip the fries with a spatula and cook until crispy, about 5 minutes longer. Transfer fries to a paper towel-lined plate. Repeat with remaining half of fries.

- Preheat air fryer to 350F / 180C.
- Cut polenta into fries.
- Place Polenta Fries in a single layer inside the air fryer basket and lightly spray with cooking spray.
- Cook for 14-16 minutes, turning half way through until golden and crispy.
- Remove from the air fryer and serve.
- Heat up a 2 tbsp of oil into a heavy based frying pan. Add some of the polenta chips to the pan and fry on all sides until they are golden brown.

- Cook for another few minutes and test again and continue till done at which point they should be golden and cooked through.

HOT AIR FRIED POLENTA ROUNDS
I love Polenta but to crisp it up, you have to fry it in oil. I didn't like that so when I got my Farberware Hot Air Fryer I promised myself I'd try cooking the Polenta in it. I did today and it was delicious. It's good served with some sort of tomato sauce, even Ketchup is good with it.

- 1. Open the Polenta Roll. With a sharp knife, cut the Polenta in 1/2 inch thick slices. Brush both sides of the slices with oil.
- 2. Spray the basket of the hot air fryer with oil. Heat the air fryer for about 5 minutes at 400'F.
- 3. Place the Polenta slices into the preheated air fryer and cook for 25 minutes. Then flip the slices and cook for another 5-10 minutes.

AIR FRYER POLENTA FRIES

- Remove polenta from plastic tube. If it's damp, gently dry it off with a clean kitchen towel.
- Now its time to cut the polenta into fries. (See the blog post for detailed pictures showing how to do it.) Start by laying the polenta log on its side on a cutting board. Cut it in half. Then stand those halves on their ends, cut side down. Cut them in half straight down the middle. Then cut each half into halves. Now you should have 8 flat slabs total. Lay the slabs flat, and cut them into fry-shaped sticks (4 sticks per slab).
- Put the polenta fries into a large mixing bowl. Spray with oil. Then sprinkle on dried basil, dried oregano (or dried parsley), granulated garlic, a dash of salt, and a dash of pepper. Use your hands to carefully toss the polenta fries in the spices, so that they're evenly coated. Be gentle, so that they don't break. Give another spray of oil, if you like.
- Place about half of the seasoned polenta fries into the air fryer basket. (Be careful not to overcrowd, or they won't brown as nicely. You'll likely need to cook in batches.)Air fry at 400 degrees for 10 minutes, or until they are starting to look brown & crispy around the edges. Carefully flip with a spatula. Air fry at 400 degrees for 2 to 4 more minutes, until they are browned & crisp all over.
- Remove the polenta fries from the air fryer basket & put on a serving plate. Cook the remaining polenta fries in the same fashion. Be aware that they may cook slightly faster since the air fryer is now hot.
- Serve polenta fries with warmed marinara or your favorite dipping sauces like vegan ranch dressing, barbecue sauce, hot sauce, or ketchup.
