Steps:
- In a cast-iron skillet set over medium-high heat, melt the butter and then add the bologna. Fry until the bologna turns dark golden brown and then flip and fry the other side, about 2 minutes per side. Top each slice of bologna with 2 slices of cheese and let melt.
- Assemble the sandwiches by spreading mayonnaise on 4 slices of the bread and mustard on the remaining 4 slices. Place a slice of cheese-covered fried bologna on a slice of bread topped with mayonnaise, then layer on a piece lettuce and tomato. Top with a slice of bread topped with mustard. Repeat with the remaining slices of fried bologna. Slice each sandwich in half and serve.
FRIED BOLOGNA SANDWICH

Steps:
- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
AIR FRYER FRIED BOLOGNA
This is one of the recipes that you have to try to understand. I have never eaten Bologna before today, and I have to tell you that the entire kitchen smelled like I was making hot dogs. It tastes exactly like a grilled hot dog. Everyone is always making and talking about Fried Bologna sandwiches in the south, which I should have made. Next time, I will make them into sandwiches for my kids to enjoy!

- Start by adding the bologna to the air fryer basket or tray. I used deli cut; if your market has thicker slices, that would be even better.

- Place a large skillet over medium heat. If you have a grill plate, this works even better as you have more surface area.
- Place 1 tablespoon of butter in the pan.
- When the butter is melted place 2 thin slices (1 one thick slice) of bologna (however many you can fit without crowding) in the pan. *note to prevent 'doming' prior to putting the bologna in the pan, cut a slit from the edge to the middle of the slice.
- Cook for 3-5 minutes per side or until the edges are golden brown.
- Flip the bologna over and cook for another 3 minutes or until the edges are golden brown.
- While the bologna is cooking (after you've flipped it) prepare the bread by spreading 1 tablespoon divided evenly on one side of each slice of bread. So if you're frying up only 2 pieces of bologna, only jelly 2 slices of bread.
- Place one slice down, jelly side up and place a small handful of potato chips on top.
- Take your fried bologna from the pan and place on top of the chips.
- Place another small handful of chips on top and then take the other slice of bread placing it jelly side down on top of the chips.
- Gently push down on the sandwich (some chips will break but that's OK).
- Take the melted butter and lightly brush the top of the sandwich.
- Working carefully, flip the sandwich over and place it buttered side down in the pan.
- Grill on each side for 4-5 minutes or until golden brown.
- Repeat steps for each sandwich if you aren't using a grill plate.
FRIED BOLOGNA SANDWICH

- Add sliced bologna to a medium skillet, and cook on medium heat until edges are slightly crispy and middles bubble up
- Add sliced provolone cheese and allow to melt
- Remove from skillet, and place on toasted bread slices. Top with lettuce and tomato, if desired

- Place the bologna halves in a skillet on Medium to Medium High heat and cook till it starts to turn brown on the edges. Remove the bologna from pan when done. Place on a paper towel.
- Butter your bread on one side while the bologna is cooking. I used sourdough for me and whole grain white for my daughter.
- Place the bread butter side down in the skillet. Cook on medium - medium high heat. Add Mayo or Miracle Whip to the side up. Place one slice of cheese on bread. Place your fried bologna on top of the cheese. Use as many halves as you want. I usually go with 3-4.
