Everyone loves a good banana cake; this is a scaled down version that makes a small cake ideal for the air fryer or for a single person.

⅓ cup brown sugar
3 ½ tablespoons butter, at room temperature
1 banana, mashed
1 egg
2 tablespoons honey
1 cup self-rising flour
½ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat an air fryer to 320 degrees F (160 degrees C). Spray a small fluted tube pan with cooking spray.
  • Beat sugar and butter together together in a bowl using an electric mixer until creamy. Combine banana, egg, and honey in a separate bowl. Whisk banana mixture into butter mixture until smooth.
  • Sift flour, cinnamon, and salt into the combined banana-butter mixture. Mix batter until smooth. Transfer to the prepared pan; level the surface using the back of a spoon.
  • Place the cake pan in the air fryer basket. Slide the basket into the air fryer and set the timer for 30 minutes. Bake until a toothpick inserted into the cake comes out clean.

1 banana, sliced into 1/8-inch thick diagonals
avocado oil cooking spray

Steps:

  • Line air fryer basket with parchment paper.
  • Preheat an air fryer to 375 degrees F (190 degrees C).
  • Place banana slices into the basket, making sure that they are not touching; cook in batches if necessary. Mist banana slices with avocado oil.
  • Cook in the air fryer for 5 minuets. Remove basket and flip banana slices carefully (they will be soft). Cook until banana slices are browning and caramelized, an additional 2 to 3 minutes. Carefully remove from basket.

You can't really go wrong with fried bananas... it really adds a bit of extra banana-ness to the recipe... and a wonderful aroma.

4 very ripe bananas peeled
1 tsp vanilla extract
1/2 to 2/3 cup flour (depending on the size and moistness of the bananas)
1/4 tsp baking powder
Pinch of salt
1 tbsp sugar
1 tsp grated lime zest
Oil for frying
Cinnamon sugar (1 tbsp sugar and a few pinches of cinnamon) for garnish
Lime wedges for garnish

Steps:

  • In a food processor, pulverize the bananas with the vanilla extract. Sift together the flour, baking powder, salt, and sugar. Add the lime zest and dry ingredients to the food processor. Mix until dough is of a light texture. Rest for a few minutes, then form the dough into 15 patties. Fry cakes in 1/2-inch-deep oil, turning to brown evenly on both sides. Drain on paper towels, sprinkle with cinnamon sugar, and serve hot with lime wedges.

3 large ripe bananas (cut into 5 or 6 pieces each )
1/2 cup flour
2 large eggs
1 tablespoon milk
1/2 cup panko bread crumbs
1 tablespoon cinnamon (nutmeg or pumpkin pie spice will work too)
1 tablespoon sugar

Steps:

  • Get out and measure all of your ingredients.
  • Slice each banana into approximately 5 or 6 chunks.
  • Beat together egg and milk until well combined, set aside.
  • On a large plate, combine crumbs, sugar and cinnamon.
  • Spread the mixture around until full blended. Set aside.
  • Cover each banana chunk with flour. Dip each chunk into the egg mixture. Bananas should be fully covered but not dripping.
  • Coat in crumb mixture until fully covered.
  • Pile on platter to cook.
  • Place each fritter in an air fryer. Make sure they do not touch. Cook at 250 degrees for 10 minutes, flipping at midway point. I usually carefully shake the basket until adjusted.
  • When cooking time is complete, remove from the air fryer and serve immediately.
  • Serve warm with chocolate sauce, caramel, honey, cool whip or whipped cream.
  • Enjoy every bite!

105 g Self raising flour (If using all purpose flour, add a teaspoon of baking powder.)
1/4 teaspoon Baking powder

Steps:

  • Prepare the ingredients - Using a weighing scale, measure out the ingredients.Prepare the cake pan - Lightly grease the cake pan with butter and line with parchment paper. Set aside.Preheat Air Fryer - Preheat at a temperature of 150C.
  • In the mixing bowl, add butter and sugar then mix with the electric mixer till it's light and fluffy. This is called creaming.
  • When the butter and sugar is well creamed, add in the eggs and milk then mix with the electric hand mixer.Add in the flour and baking powder and mix till smooth.
  • Pour the cake batter in the prepared cake pan.
  • Put the cake pan in the preheated air fryer and bake at a temperature of 150C for 30 minutes.
  • Insert cake tester or skewer in the cake and if it comes out clean, the cake is done. Bring it out of the air fryer.If the skewer is wet, bake for more minutes.
  • Turn the cake on a cooling rack and leave to completely cool.
  • Cut and serve or decorate with buttercream icing or chocolate frosting.
