APPLE FRITTERS
These apple fritters with caramel sauce are a delicious deep-fried taste of fall. Serve with some ice cream of a cup of coffee for a sweet treat any time of year.

- Heat some frying oil in a large pot over medium high heat until the oil reaches 340 degrees F.
- In a large bowl, mix the eggs, milk, melted butter, vanilla extract, and sugar until well combined.
- Add the all purpose flour, cinnamon, baking powder, and mix until well combined.
- Fold in the chopped apples.
- Using a mini scoop or two spoons, scoop the batter and drop into the oil.
- Cook for 4-5 minutes or until golden brown.
- Drizzle with homemade caramel and enjoy!
- To make the caramel sauce, combine the water and sugar and cook over medium heat in a saucepan until the sugar dissolves.
- Once the sugar dissolves, keep a close eye on it, sugar burns quickly.
- Once it turns into a copper color remove it from the stove.
- Add the butter and heavy cream and mix until well incorporated.
- Once the caramel thickens nicely and is lump free transfer to a heat proof container.

- In a small bowl stir together 1/4 cup water, yeast, and 1/2 teaspoon sugar; let stand until foamy, about 5 minutes. In a medium bowl stir together flour, salt, and remaining 1/4 cup sugar. Add yeast mixture, milk, oil, and egg; stir until a soft dough comes together. Turn dough out onto a lightly floured surface and knead until smooth, 1 to 2 minutes (dough will be sticky). Pat dough into an 8x8-inch square. In a small bowl toss apples with cinnamon. Sprinkle over half of the dough, fold side with no apples over apples, and knead 30 seconds or until apples are dispersed. Transfer dough to a lightly greased bowl. Cover and let rise in a warm place until doubled in volume, about 1 hour.
- Turn dough out onto a lightly floured surface. Cut into 8 pieces. Using floured hands, pat each portion of dough into a 3- to 4-inch oval. Fritters do not have to be uniformly shaped. Place on lightly floured parchment paper. Cover loosely with plastic wrap and let stand until doubled in volume, about 30 minutes.
- Preheat air fryer to 360°F. Place 2 to 3 fritters in a single layer in air fryer basket and cook until golden brown, 5 minutes. Repeat with remaining fritters. Keep cooked fritters warm in a 200°F oven while cooking remaining fritters.
- In a small bowl whisk together caramel sauce and enough hot water to make a smooth drizzling consistency. Place hot fritters on a wire rack set over a rimmed baking sheet to catch drips. Drizzle with caramel sauce and sprinkle with sea salt.

- Prepare the air fryer basket or tray with a piece of parchment.
- Peel, core and dice the apples. Place in a bowl and set aside.
- In a large bowl, whisk together the flour, baking powder, salt, spices and sugar until well combined.
- Shred the butter using a cheese grater and add it into the flour mixture. You can also work the butter in using a pasty cutter, but the cheese grater method will distribute the butter more evenly.
- Stir the butter until well coated with the flour mixture.
- In a glass measuring cup or separate bowl, combine the milk, egg and vanilla.
- Pour milk mixture into the bowl with the flour and gently stir until just combined (do not overwork the batter).
- Fold in the diced apples.
- Using a small cookie scoop (1 1/2 tsp size) cluster 2-3 scoops of batter (to form 1 fritter) onto the parchment lined tray. With the back of the scoop, slightly flatten the top.
- Leave at least 1 1/2 inches of space between each fritter.
- Spray the tops with a neutral oil cooking spray.
- Air fry for 9 minutes at 375 degrees until medium golden brown.
- While the fritters cool, prepare the glaze.
- In a bowl, mix the powdered sugar and milk until smooth.
- Generously top each fritter with glaze. Allow to set 1 hour before storing.
- Will keep for 2-3 days in an airtight container.

- Preheat an air fryer to 350 degrees F (175 degrees C). Place a parchment paper round into the bottom of the air fryer. Spray with nonstick cooking spray.
- Mix flour, 1/4 cup sugar, milk, egg, baking powder, and salt together in a small bowl. Stir until combined.
- Mix 2 tablespoons sugar with cinnamon in another bowl and sprinkle over apples until coated. Mix apples into the flour mixture until combined.
