AIP BBQ SAUCE
This BBQ sauces is paleo, AIP, nightshade-free, gluten-free, dairy-free, refined-sugar-free, corn-free, soy-free, nut-free, peanut-free, fish-free, shellfish-free, and egg-free. It is a slight adaptation of the recipe found at http://kaikulifestyle.blogspot.com/2014/04/barbeque-sauce.html. All the credit goes to Sirpa Kaajakari. All the modifications I made were simply to increase the yield (volume) of the sauce and to accommodate what I had in my kitchen and my laziness/inexperience in the kitchen. :) My younger son LOVES barbeque sauce, but we have found that he shouldn't have nightshades. It has been a battle with him to give up BBQ sauce for months. We tried this recipe a couple of days ago, and he is TOTALLY in love. Thank you, Sirpa!!!

Steps:
- For the stovetop method: in a saucepan, sauté slightly the garlic and ginger in coconut oil. Be careful not to burn them.
- Add all other ingredients. Bring to a boil. (Careful, this is a thick sauce and can splatter when hot. That's why I resorted to the microwave method below.).
- Simmer on low for 15 minutes, stirring occasionally.
- For the microwave method: in a large microwave-safe container, combine all ingredients. (If you're using the ground ginger and garlic powder, the coconut oil may be omitted.).
- Cover and microwave on high for 2-3 minutes, or until sauce begins to boil. Stir well.
- Continue heating in 30 second increments for another couple of minutes, stirring well between each 30-seconds.
- Use on your favorite barbeque meats and veggies. Pour the rest into a glass jar and refrigerate.
BBQ SAUCE
Steps:
- Place all of the ingredients in a saucepan and mix together.
- Heat over a medium-high heat, until boiling, then simmer for 5 minutes.
- Turn off the heat and allow to cool before serving or storing.

- Add all ingredients to a medium sized saucepan and whisk together.
- Bring to a simmer over medium/high heat.
- Reduce heat to medium and let simmer for 15-20 minutes, or until sauce has thickened to desired consistency.
- Let cool.
- Store in an airtight container. Will keep for several weeks in the refrigerator.

- Add all ingredients except the bacon fat to a blender and process until smooth and combined, scraping down the sides a few times as needed.
- Pour the blended BBQ sauce mixture into a saucepan over medium heat, heating gently until the bbq sauce comes to a simmer. Add the bacon fat and stir until it melts and combines evenly with the bbq sauce.
- Reduce the heat so that the BBQ sauce simmers gently but doesn’t boil or splash and cook, stirring gently, until the sauce thickens and darkens to a rich, deep brown hue. Don’t worry about the foam that you may see on the top of the sauce at the beginning – just keep stirring regularly and it will dissipate as the sauce cooks, reduces and thickens. If you like your BBQ sauce with a bit more tanginess, add additional apple cider vinegar, to taste, then cook for an additional 5 minutes at the end.
- Pour the finished nightshade free BBQ sauce carefully into jars to cool. You can keep the BBQsauce in the fridge for up to 2 months. You can use it straight from the fridge as a marinade, but you’ll want to gently reheat it to use on the side as the bacon fat will re-solidify when chilled.
