- Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
- Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.

- 1. Cook the ginger in the oil in a small saucepan over med. low heat for 10 to 15 minutes. Do not burn. let oil cool. Strain out the ginger and discard.
- 2. Place the pear, miso, lime zest, vinegar and garlic in a blender and blend until smooth. Drizzle in the olive oil until emulsified. Taste and season with salt
- 3. Season the tuna with salt. Mix the black sesame seeds with the ginger powder. Roll the outside of the tuna steaks in the seed mixture
- 4. Add a little oil to a cast iron pan. Get pan hot and sear the tuna on both sides. Remove tuna to cutting board and slice
- 5. Arrange salad ingredients together on plate. Top with tuna and drizzle the dressing over top.

- Heat a cast iron skillet to medium-high with enough oil to coat the surface, about 2 tablespoons.
- Stir together the ground cumin, smoked paprika, turmeric, cloves, and sea salt in a small bowl. Sprinkle both sides of the ahi fillet with the spice blend.
- Carefully place the ahi fillet on the center of the surface of the hot skillet. Cook 1 to 1-½ minutes, or until the fillet is golden-brown and crispy. Flip and cook on the other side for 1 to 1-½ minutes, or until tuna reaches desired done-ness. Transfer to a cutting board and allow fish to cool. Once cool enough to handle, cut the tuna into strips. Refrigerate until ready to use.
- Combine all of the ingredients for the dressing in a small blender. Blend until completely smooth.
- Add all of the ingredients for the salad in a large serving bowl. Toss in desired amount of creamy wasabi dressing. Serve salad with seared ahi tuna on top.

PERFECTLY SEARED AHI TUNA STEAK SALAD

- Start by preparing your dressing. In a small bowl, whisk together all of the ingredients for the dressing and let stand for at least ten minutes for the flavors to really combine.
- Next, get to work on the salad. The only slightly tricky prep work is segmenting the grapefruit, but I have faith in you. Use a large sharp knife to peel the grapefruits, making sure to remove all the white pith. Next, carefully cut between the membranes of the grapefruit to remove the segments. Relax, the segments don't need to be perfect. If the Segments are very large, feel free to cut them in half.
- Place mesclun in a large salad bowl and add the edamame, carrots, red onion, grapefruit, and avocado. (Always slice the avocado last so that it doesn't brown.) Set aside while you sear your tuna.
- (If you are using 1 large tuna steak, I recommend cutting it into two smaller steaks. It just makes things easier.) Season both sides of the tuna with a generous amount of salt and fresh ground pepper. Heat 1 tablespoon sesame oil in a large pan over medium-high heat. When hot add the tuna steaks and sear for 1 minute on each side. It should have a nice crust but be rare in the middle. (If you like your tuna more cooked, cook it longer. Duh.)
- Drizzle the dressing over the salad and gently toss to coat.
- Divide the salad among 4 plates. Slice the tuna on an angle and fan it out on top of each salad. Take a bow.

- Whisk together the ginger, lime juice, fish sauce, sugar, salt and pepper in a bowl until the sugar has dissolved. Slowly whisk in olive oil until incorporated. Set aside and refrigerate half of this mixture to be used as a salad dressing later. Whisk the garlic, lime zest, minced chile pepper, and cilantro stems into the marinade. Coat the tuna steaks with the marinade, cover, and let stand for 1 hour at room temperature.
- Preheat a large, heavy-bottomed skillet over medium-high heat. Once the skillet is very hot, remove the tuna from the marinade, and place into the skillet. Sear the tuna until golden brown on both sides, and cooked to your desired degree of doneness, about 2 minutes per side for medium, depending on thickness.
- Place the watercress in a large bowl with the cilantro leaves, cherry tomatoes, and sliced chile pepper. Pour in the reserved dressing, and toss to mix. Serve the seared tuna on a bed of salad.
