This agua de limon con chia is the perfect summer drink. Tangy, sweet, and full of nutrients, you won't believe how easy is to make!

1 Tbsp chia seeds
6 cups water (room temperature)
4 limes (juice)
4 Tbsp brown sugar (read notes)
1 lime or lemon (cut into slices)
mint leaves (optional)
ice cubes (as needed)

Steps:

  • Add water in a large pitcher.
  • Add lemon juice and then stir in chia seeds slowly while whisking vigoroulsy.
  • Add sugar and mix until dissolved, taste and adjust sugar to your liking.
  • Add mint leaves and the lemon slices.
  • Mix and serve in glasses with ice.

3 large limes, quartered
4 cups water
1/2 cup sugar, or more if needed
1/4 cup chia seeds

Steps:

  • Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
  • Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.

Although I make this in a blender, I think it qualifies as an agua fresca rather than a smoothie, as it is made with pure fruit, enriched with a spoonful of soaked chia seeds. The flavor of the drink will only be as good as your melon, so seek out the best cantaloupe, or other sweet orange melon, you can find. I don't add sweetener to the drink, but you can if you think it needs a little something.

Mint sprigs

Steps:

  • First, add the water to a large mason jar or pitcher. Squeeze in the lime juice, and add sweetener of choice (cane sugar, agave, piloncillo, etc).
  • While stirring vigorously, add in the chia seeds slowly to avoid clumping. Taste and add more sweetener or chia seeds to your preferences. Stir constantly for another minute or so, then transfer the jar to your fridge for a few hours.
  • Serve over ice with more lime wheels or mint garnishes. Happy drinking!
