- Add water in a large pitcher.

Steps:
- Put the limes, water, and sugar in a blender and pulse 3 to 4 times, just enough to extract the juice from the limes but not crush the skins (which would make the drink too bitter). Strain through a fi ne-mesh sieve into a pitcher. Taste and add more sugar if you like.
- Whisk in the chia seeds and refrigerate for at least 30 minutes, until completely chilled. Stir before serving, then serve over ice.

CANTALOUPE-LIME AGUA FRESCA WITH CHIA SEEDS

Although I make this in a blender, I think it qualifies as an agua fresca rather than a smoothie, as it is made with pure fruit, enriched with a spoonful of soaked chia seeds. The flavor of the drink will only be as good as your melon, so seek out the best cantaloupe, or other sweet orange melon, you can find. I don't add sweetener to the drink, but you can if you think it needs a little something.

- While stirring vigorously, add in the chia seeds slowly to avoid clumping. Taste and add more sweetener or chia seeds to your preferences. Stir constantly for another minute or so, then transfer the jar to your fridge for a few hours.

- In a large pitcher or glass add chia seeds and cover with the water. Add the agave and lime juice and stir to evenly distribute. (Traditionally the chia seeds are soaked in water for at least 30 minutes to 2 hours before adding to the drink but I mixed mine in directly and just waited 30 minutes to consume.)
- Refrigerate for 30 minutes to allow the chia seeds to thicken. Serve at room temperature or pour over ice.
