AGED EGGNOG

Aged Eggnog image

Although most Americans think of eggnog as something they get out of a milk carton during the two-week period leading up to December 25, eggnog actually descends from sack posset, a strong, thick English beverage built upon eggs, milk, and either a fortified wine (like Madeira) or ale. Add depth and complexity to this classic Christmas cocktail by using a mix of spirits and allowing it to age. This recipe first appeared on altonbrown.com.

Time P14DT15m

Number Of Ingredients 10

12 large eggs, pasteurized if you need peace of mind
1 pound sugar
1 teaspoon freshly grated nutmeg
1 pint half-and-half
1 pint whole milk
1 pint heavy cream
1 cup Jamaican rum
1 cup cognac
1 cup bourbon
1/4 teaspoon kosher salt

Steps:

  • Separate the eggs and store the whites for another application.
  • Beat the yolks with the sugar and nutmeg in a large mixing bowl until the mixture lightens in color and falls off the whisk in a solid ribbon.
  • Combine dairy, booze, and salt in a second bowl or pitcher and then slowly beat into the egg mixture.
  • Move to a large glass jar (or a couple of smaller ones) and store in the fridge for a minimum of 2 weeks. A month would be better, and 2 better still. In fact, there's nothing that says you couldn't age it a year, but I've just never been able to wait that long. And yes, you can also drink it right away.
  • Serve in mugs or cups topped with a little extra nutmeg grated on top.

  • In a medium bowl, briskly whisk the egg yolks until they’re smooth and have lightened a bit in color, about 1 minute. Gradually whisk in the sugar, then continue to whisk until the mixture is thick and considerably lightened in color, about 2 minutes. Stash next to the cooktop.
  • Heat the half and half, nutmeg, and grains of paradise in a medium saucepan over medium-high heat until it begins to steam and registers around 165°F, about 7 minutes. Remove from the heat and, while whisking the egg mixture constantly, gradually ladle in about one-quarter of the hot dairy mixture.
  • Whisk the hot egg mixture into the remaining dairy mixture in the saucepan, set over medium heat, and cook, stirring frequently, until the mixture reaches 175 to 180°F, about 3 minutes. Meanwhile, place a second medium bowl inside a large bowl filled with ice. Set a fine-mesh sieve over the bowl.
  • Remove the saucepan from the heat, then pour the custard through the sieve into the bowl. Stir in the bourbon, rum, sherry, and vanilla. Continue to stir frequently until the mixture has cooled to at least room temperature, about 15 minutes. Consume immediately or transfer the bowl of nog to the fridge to chill completely. Add a little extra nutmeg over the top before serving if you so choose.

GO AHEAD, AGE YOUR EGGNOG | PUNCH
2018-12-04 Alton Brown prefers four to six months, while Bennett thinks eight to 12 months is the “sweet spot.” Though, I’m pushing that one in my fridge as long as I can, I think aged eggnog merely two weeks old is quite extraordinary—caramely, minty and just a bit funky, while smooth as silk. The more I talk to people, however, the more

2019-11-06 I first heard about aged eggnog when Michael Ruhlman wrote about it on his blog back in 2008, but it didn't seem to become wildly popular until last year, when folks started recommending making your eggnog up to a year in advance, claiming that mellower, more complex flavor and richness would be the rewards you'd reap.
