Tropical Fruit Salad Recipe - a simple and refreshing tropical fruit salad starring pineapple, mangoes, papaya and kiwi coated in a simple syrup with lime and lemon juice and passion fruit pineapple pulp.

Steps:
- In a medium saucepan combine sugar and water. Bring to a boil, keep stirring until sugar has dissolved- about 5-7 minutes. Let it cool.
- Combine all fruits in a large bowl. When ready to serve, mix the fruit pulps and lime and lemon juice. Add simple syrup as needed. Pour over the fruit salad. Adjust with more water and/or simple syrup. Refrigerate until ready to use.
- Serve cold.

In Western Africa, the closest thing to a dessert course is the "after-chop" and a popular "after-chop" is fruit salad. In Eastern Africa, Swahili people make a Saladi ya Matunda for dessert (See note at bottom of recipe). One interesting thing about the African fruit salad is the use of the avocado. A perfectly fine fruit salad can be made from just three or four of the ingredients listed below. A fruit salad makes a fine dessert course for an African-style dinner." Steps:
- If using canned fruits: drain and save the liquid. Peel and remove seeds from the fresh fruit as necessary, cut fruit into bite-sized pieces.
- Combine all fruit in a glass bowl. Add the lemon juice, some of the liquid from the canned fruits or honey/sugar. Stir gently. There should only be enough liquid to coat the fruit; it does not have to be covered in liquid.
- Cover the fruit salad and allow it to stand at room temperature for a half hour before serving. The fruit salad may be refrigerated after it has stood up to an hour. It should be eaten the same day it is made.
- Garnish with freshly grated coconut or chopped roasted peanuts right before serving.
- NOTE: Eastern Africa's Saladi Ya Matunda is made without the lemon juice, coconut or peanuts; it substitutes sugar/honey for the liquid from the canned fruits.

- First, you want to dice up your pineapple, mango, papaya and apples into bite sized pieces. Also, slice the banana into thin slices. When all of the fruit is bite sized, combine it into a large bowl ( you will need a very large bowl for this volume of fruit). Mix the vanilla extract and the sweetened condensed milk into the fruit.
- Meanwhile, pour the heavy cream into a medium mixing bowl and use a hand mixer to whip it into stiff peaks. When the cream is fluffy, you can mix that in with the fruit mixture as well. Top the bowl with sweetened shredded coconut and chill in the refrigerator until you're ready to serve it.
- Fruit Fool took awhile to prepare because it required a lot of knife work, but it was easy and worthwhile. It made a wonderful dessert for the party and was a good contrast to the other desserts we served (cake/cookies).
- Alongside our safari themed menu, we also wanted to serve one of our favorite drinks from Boma, Frunch. If you have ever been to Boma for breakfast, you've probably been served this delicious juice. I was glad that we were able to find a recipe for this family favorite.
