Kids especially will eat up this salad, which really does taste like a taffy apple! My whole family enjoys it, and I hope you do, too.

Number Of Ingredients 10

1 can (20 ounces) crushed pineapple
4 cups miniature marshmallows
1 large egg, lightly beaten
1/2 cup sugar
1/4 cup packed brown sugar
1 tablespoon all-purpose flour
4-1/2 teaspoons cider vinegar
1 carton (8 ounces) frozen whipped topping, thawed
3 cups diced unpeeled apples
1-1/2 cups lightly salted peanuts, coarsely chopped

Steps:

  • Drain pineapple, reserving juice. In a large bowl, combine pineapple and marshmallows; cover and refrigerate for several hours. , In a saucepan, combine the egg, sugars, flour, vinegar and reserved pineapple juice; cook and stir until mixture thickens and reaches 160°. Remove from the heat; cool. Cover and refrigerate. , Fold whipped topping into the chilled dressing. Add the apples and peanuts to the pineapple and marshmallows. Fold dressing into fruit mixture. Refrigerate leftovers.

This is a really great recipe that I found in a Taste of Home cookbook. Plan a little bit ahead because it is really easy to make but does involve some chilling time. The salted peanuts really contrast nicely with the sweet ingredients. Make your salad pretty by adding some extra peanuts and apple slices to the top or layer it in a clear trifle dish. Enjoy!

1 (20 ounce) can crushed pineapple (drain and reserve juice)
4 cups mini marshmallows
1 egg, lightly beaten
1/2 cup sugar
1/4 cup packed brown sugar
1 tablespoon flour
4 1/2 teaspoons cider vinegar
1 (8 ounce) carton Cool Whip, thawed
3 -4 cups diced apples, unpeeled (about 3 large)
2 cups salted peanuts

Steps:

  • Drain pineapple, reserving juice.
  • In a large bowl, combine marshmallows and pineapple; cover and refrigerate for several hours.
  • In a small saucepan, whisk the egg and sugars. Turn the heat to low andwhisk in the flour, cider vinegar, and pineapple juice.
  • Cook and stir until mixture thickens and gets a little bit glossy and reaches 160 degrees.
  • Remove from heat (at this time I also pass the liquid through a mesh strainer to remove the little egg bits if there are any. Sometimes this happens if you dont whisk it all together well in the previous step). Cool completely and refrigerate.
  • Fold the cool whip into the chilled dressing.
  • Add the apples and peanuts to the pineapple and marshmallows.
  • Fold dressing into fruit mixture and garnish.

1 20-ounce can pineapple chunks
2 tablespoons apple cider vinegar
1/3 cup sugar
1 large egg (lightly beaten)
1 tablespoon flour
1 8-ounce container frozen whipped topping (thawed)
4 large apples (diced)
1 cup miniature marshmallows
2 cups peanuts

Steps:

  • Drain the liquid from pineapple chunks into a 3-quart saucepan. Add the vinegar, sugar, egg, and flour. Cook over medium heat, stirring constantly, until thick.
  • Remove from the heat and pour into a large bowl. Add the thawed whipped topping, stirring well to combine.
  • Add the pineapple chunks, apples, marshmallows and peanuts. Stir well.
  • Refrigerate for about 8 hours before serving if possible, although it's fine to serve it right away if you're short on time.

1 (20 ounce) can pineapple chunks, juice reserved
2 cups miniature marshmallows
2 tablespoons all-purpose flour
1 tablespoon white wine vinegar
½ cup white sugar
5 apple - peeled, cored, and chopped
1 cup peanuts
1 (8 ounce) container frozen non-dairy whipped topping

Steps:

  • In a large bowl, combine drained pineapple chunks with marshmallows. Cover and refrigerate for 24 hours.
  • In a medium saucepan, whisk together the reserved pineapple juice, flour, vinegar and sugar. Heat until mixture boils and thickens. Cover and refrigerate for 24 hours.
  • Before serving, mix together the marshmallow mixture, pineapple juice mixture, apples and peanuts. Gently fold in whipped topping and serve.
