2 lbs apples, peeled, cored, cubed
1/4 cup water
2 tablespoons white wine
1 tablespoon sugar

Steps:

  • In a large saucepan, cook apples with water for about 15 minutes or until just tender, stirring occasionally, then stir in the wine.
  • Remove from heat & mash until lumpy but not yet smooth.
  • Add sugar, to taste, then chill before serving.

1/4 cup margarine (or unsalted butter)
6 boneless skinless chicken breasts
1/2 cup dry white wine
2 tablespoons gin
1 teaspoon dill weed
1/2 teaspoon powdered thyme
1/2 teaspoon salt

Steps:

  • In a large skillet, melt margarine over medium heat, then add chicken & brown the breasts, cooking for about 10 minutes.
  • Add the rest of the ingredients, then cover & simmer about 20 minutes or until chicken is tender.

1 (16 ounce) can applesauce
2 tablespoons granulated sugar
1/2 teaspoon pure vanilla extract
1 1/4 cups dried breadcrumbs
1/2 cup margarine, melted
1 cup whipping cream, whipped

Steps:

  • Preheat oven to 450 degrees F, then butter a 1 1/2-quart ovenproof dish.
  • In a bowl, combine applesauce, sugar & vanilla extract.
  • In the prepared baking dish, lay down alternate layers of breadcrumbs & applesauce, ending with breadcrumbs.
  • Pour melted margarine over the top & bake 25-30 minutes or until golden brown.
  • Top with dollops of whipped cream & serve hot.

This is from the cookbook _Best of Scandinavian Cooking_ by Shirley Sarvis and Barbara Scott O'Neill. The original recipe calls for Danish Danbo cheese, but if you can't find that the authors recommend cheddar, jack, or gouda. I will probably lighten this up some when I make it, but I for now I will post as written. Of course one could easily make this vegetarian by using veg stock instead of chicken broth! 2 tablespoons butter
1/4 cup green onion, green and white parts
2 tablespoons flour
2 cups milk
2 cups chicken broth (or vegetable!)
2 carrots, peeled and cut
1/3 cup celery, chopped
2 cups danbo cheese (or cheddar, jack, or gouda)
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
2 tablespoons parsley, fresh
paprika (to garnish)

Steps:

  • In a large pan, melt butter. Add onions and saute until limp.
  • Stir in flour, blending to make a smooth paste. Gradually add milk and stock, stirring to make a smooth sauce.
  • Add carrots, celery, cheese, salt, 1/4 t paprika, and pepper.
  • Cover and simmer until the cheese is melted and the vegetables are tender, stirring occasionally.
  • Just before serving, add parsley.
  • Sprinkle paprika on individual servings.
