FRUIT SALAD
This is a recipe (if you can call it that) that I concocted. The Jello gives it just enough sweetness and a nice red color. I use canned fruit because I always have it on hand, but (of course) you can always use all fresh fruit. Use your imagination and add (or delete) any fruit. The strawberries and bananas tend to soften if left in the mixture to long. Best to add them just before serving. During the summer months I always have some in my frig.

Steps:
- Drain all canned fruit (save juices- add some to recipe if needed, or desired) Mix all fruit together.
- Sprinkle with Jello (enough to sweeten- not entire package).
- Peel and slice bananas, oranges and kiwi into bite-size pieces.
- Slice strawberries.
- Remove grapes from vine.
- Add oranges, kiwi and grapes to Jello mixture.
- Strawberries and bananas should be added last as they tend to soften.

- Add the berries, water and sugar to a large pan. Let it come up to a simmer on medium heat, but once it does, reduce the temperature to low and let it sit right under simmering point for about 30 minutes. Stir occasionally.
- Meanwhile, find moulds or containers for the jello. I use some small ramekins, but you may also pour it into larger bowls so people can take as much or as little as they want.
- Once the berries have cooked for 30 minutes, take them off the heat. Pour the mixture through a sieve and just let it drip. Do not help with a spoon or spatula, this will make a clearer jello
- Add gelatin sheets to a bowl of cold water for at least 5 minutes to soften up the leaves. If you’re using gelatin powder, you mix the powder with 3/4 cup cold water and let it sit for 5-10 minutes or until it gets thick.

- Boil 2 cups of water and pour in a large bowl. Add the jello and stir until all the gelatin is dissolved. Add the cold water and stir. When the gelatin is completely dissolved and combined, add the drained fruit and mix. Pour into a 2 1/2 quart mold or any other bowl. Place in the refrigerator for at least 4 hours
- After the jello is firmly set, fill a larger bowl with tepid water, or fill the kitchen sink with tepid water. Take the jello mold and put it (only the bottom ) in the tepid water for a few seconds to loosen the jello from the mold. Do NOT let water get into the mold. Remove the mold dish and loosen the sides with a spatula. Invert onto a platter and garnish with fresh strawberries.

- Next measure the gelatin and slowly stir adding it to the pot. Make sure the gelatin has been dissolved in the juice while the juice is still cool. I have tried letting it heat up then pour in the gelatin and I always get lumps of gelatin that need to be dissolved. It is much easier to dissolve while the liquid is cool. Trust me.
- Heat the mixture just until it starts to boil. You will start to see little tiny bubbles coming up. That is when you know to turn off the heat.
- Have your molds or cups ready to pour the fruit juice gelatin into. Then simply set inside your refridgerator and wait. This is a recipe that is good to make at night, so it will be ready the next day.
