We in PA love our pierogi's; and here is an easy, tasty casserole that substitutes the real deal. Most commonly served as a main dish, but can be served as a side.

Ingredients

3/4 lb noodles, cooked and drained (lasagna noodles or wide egg noodles)
3/4 cup butter
3 cups instant mashed potatoes, prepared
16 slices American cheese
2 large onions, minced

Steps:

Cook noodles, drain.
Melt butter and saute the onions until tender, meanwhile cook mashed potatoes according to package.
*Steps1 and 2 should be done around the same time.
Place half of the cooked noodles in the bottom of a 13x9 casserole dish.
Layer with 8 slices of cheese, all potatoes, the remaining noodles and top with remaining 8 slices of cheese.
Poke holes through the top layer of cheese; pour butter and onion mixture over top, making sure it seeps through the holes.
Serve.

Ingredients

1/2 lb wide egg noodles, cooked and drained
1/4 cup butter
1 1/2 cups mashed potatoes, prepared
5 slices American cheese
1/2 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1/4 large vidalia onion, minced
2 garlic cloves, minced
salt and pepper, to taste

Steps:

Cook noodles, drain.
Preheat oven to 350.
Melt butter and saute the onions and garlic until tender. Season with salt and pepper to taste.
Place half of the cooked noodles in the greased bottom of a casserole dish.
Layer with ½ of the cheese, all potatoes, the remaining noodles and top with remaining cheese.
Poke holes through the top layer of cheese; pour butter mixture over top, making sure it seeps through the holes.
Bake at 350 for 10 minutes.

(Prepare your potatoes and set aside) Meanwhile, boil your noodles but reduce cooking time by 4 minutes to avoid overcooking. Drain and set aside. Prepare your onions by cooking in the 4 tbsp. of butter over medium heat until tender.
Add milk, 1 cup of cheese, salt and pepper, and onion mixture to your potatoes. Mash using a large wooden spoon or a hand held potato masher. Mash until soft, but some chunks remain. You don't want a completely smooth texture. Add in your noodles and toss to coat. Taste for seasoning and add more if necessary. If mixture seems dry, add more milk and butter until the entire mixture is lightly coated. Place in casserole dish. Sprinkle with the remaining 1/2 cup of cheese.
