Got this from one of my friend's Weight Watchers cooking book. Haven't tried it yet. This counts 2 points per serving

2 teaspoons chicken bouillon cubes
1/2 cup regular long grain rice
1/2 cup wild rice, rinsed
1 lb asparagus, cut into 1-inch lengths
1 red bell pepper, chopped
1 red onion, chopped
1/2 cup chopped parsley
1/3 cup white wine vinegar
1 tablespoon olive oil
1 teaspoon sugar
1/8 teaspoon ground black pepper
12 leaves red leaf lettuce

Steps:

  • In a medium saucepan, combine 2 3/4 cups water and add bouillon cubes, bring to a boil.
  • Add both kinds of rice. Reduce heat and simmer uncovered for 45-50 minutes. Remove from heat.
  • In a large bowl combine rest of ingredients except the lettuce leaves.
  • Add rice to bowl with ingredients and toss to combine.
  • Place lettuce leaves on a larger platter and top with rice mixture.
  • Refrigerate, covered until chill, about 3 hours.

Stir-Fried Wild Rice With Asparagus and Mushrooms image

A wonderful combination of flavors. Serves 4 as an entree or 6 as a hearty side. Add grilled tofu chunks for more protein. If you can't afford shitake mushrooms, it would probably be good with creminis. Cooking time includes rice, which you can do ahead of time. I cooked the 2 different kinds of rice together in a rice cooker with lots of water for about an hour. Adapted from The One-Dish Vegetarian by Maria Robbins.

2 tablespoons extra virgin olive oil
2 large shallots, finely chopped
2 garlic cloves, minced
8 fresh shiitake mushrooms, stems discarded and caps thinly sliced
1/2 teaspoon salt
fresh ground black pepper, to taste
2 tablespoons finely minced fresh parsley
1 tablespoon finely minced fresh dill
1 teaspoon grated lemon zest
1 teaspoon fresh lemon thyme leaves (optional)
1/2 cup vegetable broth or 1/2 cup water
1 lb asparagus, woody ends snapped off and cut into 1-inch pieces
1 1/2 cups steamed wild rice
1 1/2 cups steamed short-grain brown rice

Steps:

  • In wok or large pan, heat oil over medium heat. Add shallots and garlic and cook, stirring, for 1 to 2 minutes. Add mushrooms and sautee, stirring, for 5 minutes.
  • Add seasonings, liquid, and asparagus. Stir, cover, reduce heat to low, and cook for 3 to 5 minutes, until the asparagus turns bright green.
  • Stir in the rices, mix well, and heat through.

1 lb baby asparagus
4 ounces sliced mushrooms
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar, or more to taste
1 teaspoon Dijon mustard
1 clove garlic, crushed
3 tablespoons extra virgin olive oil
1/8 teaspoon fresh ground black pepper
1/2 cup loosely packed chopped basil
2 tablespoons grated parmesan cheese or 2 tablespoons mizithra cheese
salt, to taste

Steps:

  • Trim the asparagus (keeping the darker green and less fibrous parts) and cut into 1-inch pieces.
  • Thinly slice the mushrooms.
  • Simmer the asparagus in 1/2 cup of water with a pinch of salt until it is tender (about 10-13 minutes).
  • While the asparagus is simmering, whisk the lemon juice, vinegar, Dijon mustard, and garlic together.
  • Gradually add the olive oil and then the black pepper.
  • Once you have drained the asparagus and let it cool, gently toss it with half of the dressing to coat it well.
  • Toss the remaining dressing with the basil and the mushrooms, and sprinkle the mixture over the asparagus.
  • Season to taste with salt, garnish with freshly grated Parmesan or Mizithra cheese, and serve.

2 cups chicken broth
1 cup wild rice
1 small bunch broccoli, cut into florets
6 asparagus spears, cut into 1-inch pieces
4 ounces green beans, cut into 1-inch pieces
2 carrots, peeled, sliced
1 tomato, chopped
1/2 cup crumbled blue cheese
1/4 cup olive oil
2 tablespoons white wine vinegar
Salt and pepper

Steps:

  • Bring broth to boil in heavy medium saucepan. Stir in rice. Reduce heat, cover and simmer until rice is tender, about 1 hour.
  • Meanwhile, cook broccoli, asparagus, green beans and carrots in large pot of rapidly boiling water until crisp-tender, about 6 minutes. Drain and rinse under cold water. Drain well.
  • Transfer rice to serving dish. Arrange vegetables atop rice. Sprinkle with tomato and cheese. Combine olive oil and vinegar in small bowl; whisk to blend. Drizzle over salad. Season with salt and pepper. Toss thoroughly and serve.

8 ounces asparagus
1 clove garlic, minced and mashed to a paste with 1/2 teaspoon kosher salt
2 tablespoons minced shallot
1 tablespoon Dijon mustard
Grated zest and juice of 1 large lemon
1/2 teaspoon kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1 cup wild rice, cooked, drained, and room temperature
3 tablespoons pine nuts, toasted
1/4 cup finely diced carrots
1/4 cup finely diced celery
2 tablespoons minced fresh dill
1/4 cup minced fresh mint
1 head Boston or large Bibb lettuce, washed and trimmed (optional)

Steps:

  • Peel and trim the asparagus stalks. Cut about an inch of the tips from the spears and then thinly slice the remaining stalk. Bring a small pot of salted water to a boil. Drop the asparagus into the water and cook until just crisp-tender, about 1 minute. Drain and refresh under cold running water. Set aside.
  • In a medium bowl, whisk together the garlic, shallot, mustard, lemon zest and juice, salt and pepper to taste. Gradually whisk in the oil to make a creamy dressing.
  • In a large bowl, combine the rice, nuts, carrots, celery, asparagus, dill, and mint. Toss with about 1/3 cup dressing. Serve as is or toss the lettuce with some of the dressing. To serve place the lettuce on a serving platter or individual plates and spoon the salad into the center of the leaves. Pass any remaining dressing at the table.

2 envelopes knox unflavored gelatin
1/2 cup cold water
1 (10 ounce) can cream of asparagus soup
1/2 cup mayonnaise
3 (3 ounce) packages cream cheese, softened
1 tablespoon finely grated onion
1 cup sliced stuffed olives
1 cup diced celery
2 (10 1/2 ounce) cans asparagus spears, drained
1/2 cup pecan pieces, toasted

Steps:

  • Soften gelatin in cold water or 1/2 cup of the juice drained from the asparagus tips.
  • Heat undiluted soup to boiling and add gelatin mixture.
  • Stir to thorougly dissolve gelatin.
  • Cool to room temperature.
  • Mix mayonnaise and cream cheese and add to soup mixture.
  • Add onion, olives, asparagus tips and toasted pecans.
  • Pour into serving dish and chill until set.
  • Serve on lettuce leaf.
  • NOTE: Cooking time refers to chilling time.

1/4 cup olive oil
3 tablespoons fresh lemon juice
1 lb asparagus (cut into 1/2-inch pieces)
2 cups corn kernels (shucked 2-4 cobs depending on size)
1 cup cherry tomatoes (whole or cut in half depending on size)
1 teaspoon kosher salt
2 tablespoons of fresh mint (chopped)

Steps:

  • Place lemon juice in a medium bowl and slowly whisk in the olive oil.
  • Prepare an ice bath.
  • In a large pot of boiling water add 1 tablespoon of salt.
  • Add corn and asparagus and blanch till tender crisp.
  • Strain into colander and place into ice bath until completely cool.
  • Strain and let sit to completely drain all the water.
  • Place in a large bowl with the tomatoes, reserved dressing and the mint.
  • salt & pepper to taste.
  • Serve chilled or at room temperature.
