Here's what you need: small acorn squashes, onion, celery, olive oil, salt, pepper, fresh rosemary, garlic, sausage, apple, panko breadcrumbs, parmesan cheese

2 small acorn squashes, or 1 large
1 onion, chopped
2 stalks celery, chopped
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon fresh rosemary
3 cloves garlic, chopped
½ lb sausage
1 apple, chopped
1 cup panko breadcrumbs
½ cup parmesan cheese

Steps:

  • Using a sharp knife cut off the very top and bottom of each squash to create a flat base on each side (being careful not to cut through the center cavity).
  • Slice the squash in half, scrape out seeds to create individual bowls for the stuffing.
  • Drizzle each squash half with olive oil, salt, and pepper.
  • Roast in a preheated oven at 400˚F (200˚C) for 40-50 minutes - or until fork tender.
  • While squash is roasting - in a large fry pan over medium heat - heat oil and add Onion, Celery, Salt, Pepper, and Rosemary. Cook until onions begin to soften.
  • Add Garlic and Sausage, until sausage is browned on all sides.
  • Add Apple until slightly softened. Finally mix in Bread Crumbs and Parmesan cheese just until incorporated. Remove from heat.
  • Once Squash has finished roasting (when you can easily poke it with a fork) remove from oven and fill each with prepared stuffing mixture.
  • Return to Oven for 20 minutes - adding a sprinkle of Parmesan cheese to the top for the final 5 minutes.

1 medium acorn squash
1 medium sweet apple (not granny smith)
3/4 c walnuts
3-4 tsp butter
1/4 c brown sugar
cinnamon to taste

Steps:

  • 1. Pre heat oven to 350 Wash, cut length wise and de-seed acorn squash, I use a small ice cream scoop to do this Place the following in a bowl as you prepare them Peel, core, and corse chop apple Ruff chop walnuts
  • 2. Add brown sugar ( if you are a diabetic you can use plain Splenda), cinnamon, and butter. Mix all well with your hands
  • 3. Add mixture to the hollowed out cavity of both half of the acorn squash Put filled acorn squash half a back together and wrap tightly in aluminum foil Place in shallow baking pan and bake at 350 for 45min to 1-hour, or until squash gives to lite pressure
  • 4. Remove from foil and using a spoon core out the inside, with the filling into a serving bowl, add more brown sugar if needed. ENJOY!!!

1 acorn squash
2 apples, cored and sliced
1 tablespoon butter
2 tablespoons brown sugar
1 tablespoon finely chopped walnuts
½ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • To easily peel the acorn squash without losing a lot of vegetable, gently drop the squash in a large pot of boiling water, and boil for 15 minutes. Pour off the boiling water and fill with cold water and let sit 5 minutes to cool. When cool enough to handle, use a knife to slice off the peel on the ridges and use a teaspoon to dig out the peel in the valleys. Slice the squash in half and remove the seeds and stem. Then slice the halves into sections and finally cut into 1 inch chunks.
  • Place the squash chunks into a large microwave-safe bowl along with the apples. Dot with pieces of butter. Sprinkle the brown sugar, walnuts, salt and cinnamon over the top. Cover with plastic wrap, and poke a few holes in it for ventilation.
  • Cook in the microwave for 7 1/2 minutes on full power. Remove, uncover, and stir. Return to the microwave, and cook for another 7 1/2 minutes on full power, until tender. Serve hot.

This recipe is posted in response to a request for ways to use acorn squash. I've never tried it, but it looks excellent! I got it from Jackie Manni at The Post Punk Kitchen (a website of vegan recipes). I'm sorry the amounts aren't more specific, but this is what she posted!

1 acorn squash
1 little water
2 apples, cored and sliced thin
canola oil
maple syrup
pumpkin pie spice

Steps:

  • Preheat oven to 350.
  • Cut the acorn squash and scoop out the seeds and strings.
  • Put a little water in a baking pan; place the halves face down and bake for 1/2 hour.
  • Then, take it out and put the sliced apples in the middle (some will fall over the sides, it's okay); drizzle with canola oil and maple syrup, and sprinkle with pumpkin pie spice.
  • Bake for another 1/2 hour to 40 minutes (until the apples are soft and browning).
  • Put your acorn squash halves in individual plates; scoop up the stray apples and stray maple syrup and spoon over the squash.

1 tablespoons heavy cream
1 tablespoon walnut oil
1 teaspoon cinnamon
1 teaspoon ground ginger
1 1/2 lbs.acorn squash, peeled and chopped
3 large pippin apples, cut in half horizontally and cored
1 cup chicken stock
4 tablespoons butter
4 tablespoons brown sugar

Steps:

  • Preheat oven to 375 degrees F.
  • Cut squash in half lengthwise and remove seeds and fibers. Place squash cut side down in a baking dish. Pour the stock into the dish. Place in the oven and bake for 20 minutes.
  • Scoop out the fruit from the apples, leaving a 1/4 border. Remove squash from oven, place apples cut side down in baking dish, fitting them around the squash. Return to oven and bake until squash and apples are just tender, about 15 to20 minutes more. Turn squash and apples over. Dot with butter and brown sugar. Return to oven for 10 minutes.
  • Remove squash and apples from oven. Transfer apples to a warm platter and reserve, covered. Scoop squash flesh into a medium bowl. Mash with the cream, walnut oil, cinnamon and ginger, adding salt and pepper, to taste. Scoop the squash into the apple halves and serve.

2 acorn squash (halved through from the stem to the base and seeds removed)
4 teaspoons olive oil
Kosher salt and ground black pepper
1/2 tablespoon olive oil
1 pound Italian chicken or turkey sausage (about 2 links, casings removed, sweet or spicy (we use spicy))
8 ounces cremini baby bella mushrooms (finely chopped)
1 small yellow onion (chopped)
1 medium sweet-crisp apple (cored and finely diced (peel off or on; I left it on))
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
2 cloves minced garlic
1 tablespoon chopped fresh sage (thyme, or a mix (plus additional for serving))
½ cup shredded Parmesan cheese (divided)

Steps:

  • Bake the squash: Place a rack in the center of the oven and preheat the oven to 400 degrees F. With a sharp, sturdy chef's knife, carefully cut the squash in half from stem to base. Scoop out and discard the stringy core and seeds. Arrange the halves cut-sides up on a rimmed baking sheet. Brush each half with 1 teaspoon olive oil and sprinkle with salt and pepper. Place in the oven and bake for 40 minutes, until the edges begin to wrinkle and the flesh is fork-tender. Set aside. Reduce the oven temperature to 375 degrees F.
  • While the squash bakes, prepare the filling: Heat the olive oil in a large skillet over medium-high heat. Add the sausage. Brown the meat, breaking it apart into small pieces for 3 minutes.
  • Add the mushrooms, onion, apple, salt, pepper, nutmeg, allspice, and minced garlic. Cook, stirring frequently, until the sausage is cooked through, the vegetables and apple are softened, have given up liquid, and the liquid has cooked off, about 8 additional minutes.
  • When the squash is cool enough to handle, scoop out its flesh, leaving a wall all the way around that is about ¼-inch thick. Add the scooped squash to the pan with the sausage. Add the herbs and ¼ cup Parmesan. Stir to combine. Taste and adjust salt and pepper as desired.
  • Mound the filling inside of the hollowed squash halves. Sprinkle the remaining Parmesan over the top. Place the pan in the oven and bake until the cheese is melted and the filling is nice and hot, about 15 minutes. Sprinkle with additional fresh herbs as desired. Serve hot.

  • Preheat oven to 350°F.

  • Remove seeds and pulp.

Wanted a savory squash recipe. Tweaked an existing one from Betty Crocker to make a side dish; now I've got a keeper that's a meal!

1 (12 -16 ounce) acorn squash
3 slices bacon
1/2 cup apple, chopped, peeled (I used golden delicious, I'm sure any would work well)
1/4 cup onion, chopped
3 garlic cloves, chopped
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried thyme
ground pepper
1 cup seasoned stuffing mix (I used herbed, cubed bread stuffing)
1/4-1/2 cup water, depending on your preference for stuffing consistency
1/4 cup swiss cheese, shredded (I used deli slices that I finely cubed)
1 tablespoon toasted breadcrumb (optional)
1/8 teaspoon olive oil (optional)
1 tablespoon parsley, chopped (optional)
1 teaspoon green onion, sliced (optional)

Steps:

  • Halve squash.
  • Remove seeds and pulp.
  • Place squash, cut side down, in a shallow baking dish.
  • Add water.
  • Bake at 350 degrees for 30 minutes.
  • In a medium saute or sauce pan over medium heat, cook bacon until some fat is rendered (3 min).
  • Add onion and saute/sweat for 3 minutes-ish.
  • Add sage, rosemary,thyme, and pepper (or anything else you'd like).
  • Add apple and saute/sweat for 2 minutes-ish.
  • Add garlic and saute/sweat for 2 minutes-ish.
  • Drain if needed.
  • Stir in stuffing mix and water.
  • Once stuffing mix is moist, stir in cheese.
  • Spoon stuffing into prepared squash.
  • Cover with loosely with foil.
  • Bake about 20 minutes more.
  • I removed foil; topped with optional topping (below) and baked for last five minutes.
  • Optional topping:.
  • Mix bread crumbs and olive oil.
  • Mix in parsley and green onions.

  • Using a sharp chef's knife, carefully cut the acorn squash in half. Cut a flat spot on the bottom so the acorn squash does not roll around while roasting. Using a spoon, scoop out the seeds and stringy pulp, discard. Careful not to scoop too far through the bottom or it will cause a hole and the stuffing will later fall out.

  • Preheat the oven to 400F. Then, wash the acorn squash, slice each in half from stem to end, and remove the seeds & stringy flesh inside. Add the squash halves to a baking tray covered with parchment paper and season by rubbing with olive oil, salt, & pepper. Then, flip upside down so the fleshy inside is facing down and add to the oven to bake for 40-45 minutes until cooked through. Once cooked, flip over and set aside to be filled.
  • Once the squash is in the oven, add the wild rice and vegetable broth to a small saucepan and stir together. Cover, turn on the heat, and bring to a boil. Once boiling, reduce the heat to a simmer and cook for 40-45 minutes until cooked through. Cooked wild rice will be chewy, but should be tender.

  • Preheat the oven to 400°F then line a baking sheet with parchment paper (or you can also use a shallow baking dish).
  • Slice the top stem off of the acorn squash then cut it in half, lengthwise. Use a spoon to scrape out the seeds and softer pieces then rub the outer edges of the flesh with 1 teaspoon of oil.
