1 cup butter, softened
1 cup sugar
1 large egg
1/2 cup milk
1 teaspoon almond extract
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups semisweet chocolate chips
1 cup ground pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, milk and extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., Divide the dough in half. On a lightly floured surface, roll out each portion to 1/4-in. thickness. Cut with 2-1/2-in. acorn cookie cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 375° for 8-10 minutes or until edges are firm. Remove to wire racks to cool completely., In a microwave, melt chocolate chips; stir until smooth. Spread chocolate over the stem and cap of each acorn, leaving about a 1/4-in. border. Sprinkle pecans over chocolate. Pipe remaining chocolate in a criss-cross pattern over each acorn. Let stand until firm.

1/2 cup miniature semisweet chocolate chips
48 milk chocolate kisses
48 Nutter Butter Bites

Steps:

  • Reserve 48 chocolate chips. In a microwave, melt remaining chocolate chips; stir until smooth. Spread the flat side of each kiss with a small amount of melted chocolate; immediately attach each to a cookie., Secure one reserved chocolate chip as a stem onto each acorn. Place on waxed or parchment-lined baking sheets; let stand until set. Store in an airtight container.

This is a great cookie to bring on hunting trips or when you're hiking, because they will keep for days. You really get a sense of the acorn flavor here, and the maple and vanilla play a strong backup. Feel free to sub in some other flour for the acorns if you don't have any. It's very important to work with icy cold dough here, or else the cookies will flatten. They'll still taste great, but won't be very shortbread-y.

2 sticks unsalted butter, at room temperature ((8 ounces))
1/2 cup sugar
1/4 cup maple sugar
1/2 teaspoon vanilla extract
A pinch of salt
1 cup all-purpose or King Arthur's "white whole wheat" flour
1 cup acorn flour

Steps:

  • Put the butter in a large bowl and add the sugars. Use a fork or spoon to mix them together until well combined. Add the vanilla extract.
  • In another bowl, mix the salt and the flours with a whisk until combined. Pour the flour mixture into the bowl with the butter and sugar and mix well with the fork or spoon. The dough will come together quickly, but will be sticky. Don't overwork it, but be sure you don't have hidden blobs of butter in your dough.
  • Shape the dough into a disk, cover with plastic wrap and set in the freezer about 2 hours, and up to overnight in the fridge. The dough must be very cold for this to work, or the cookies will collapse.
  • When you are ready to bake, preheat the oven to 350°F. Flatten the disk of dough to about 1/2 inch thick and cut into cookies. I used a 2-inch cutter, but any sort of cutter would do. An acorn-shaped one would be cute. Keep soing this, reshaping the dough, until you've used it all.
  • Arrange the cookies on an ungreased baking sheet and bake for 23 to 26 minutes, or until the edges of the cookies just begin to brown.

Hershey's Kisses Brand Milk Chocolates or Hershey's Kisses Brand Pumpkin Spice Flavored Candies
Mini vanilla wafer cookies
Reese's Peanut Butter Chips or Hershey's Butterscotch Chips

Steps:

  • Prepare royal icing and place in pastry bag with small tip. Remove wrappers from candies. Place mini vanilla wafer cookies on tray or plate with flat side of cookie toward the top. Squeeze small amount of icing onto bottom of candy piece. Immediately press candy bottom onto vanilla wafer cookie. Allow icing to set. Place small dab of icing on bottom of peanut butter chip or butterscotch chip; immediately attach to top of cookie to finish acorn. ROYAL ICING Stir together 1 cup plus 2 tablespoons powdered sugar, 1 tablespoon warm water and 1-1/2 teaspoons pasteurized dried egg whites, meringue powder. Beat at medium speed of electric mixer until spreadable. Add additional water, 1 teaspoon at a time, to get desired consistency. Transfer icing to pastry bag with desired tip. Cover icing and tip of pastry bag with damp paper towel to keep icing from drying out. About 1/2 cup icing.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 sticks (1 cup) unsalted butter, melted
3/4 cup packed light brown sugar
1 teaspoon vanilla
1 cup finely chopped walnuts (4 oz)
For decoration
8 oz semisweet chocolate, melted
1/2 cup finely chopped walnuts (2 oz)

Steps:

  • Make cookies:
  • Sift together flour, baking powder, and salt. Beat together butter, brown sugar, and vanilla with an electric mixer until pale and fluffy. Mix in flour mixture at low speed, then stir in walnuts.
  • Preheat oven to 375°F.
  • Form 2 teaspoons dough into an egglike shape resembling an acorn. Make more "acorns," arranging them 1 inch apart on ungreased baking sheets. Bake in batches in middle of oven until undersides are light brown, about 10 minutes. Transfer to racks to cool.
  • Decorate cookies:
  • Dip half of each cookie in melted chocolate and then in chopped nuts. Place as coated on a baking sheet lined with wax paper to set, about 15 minutes.

Smear a little more frosting onto the flat bottom of a butterscotch chip, and press onto the rounded top of the cookie. Repeat with remaining ingredients. Set aside to dry, about 30 minutes.

  • Lightly whip the butter or coconut oil in a mixing bowl until creamy and fluffy. Add maple syrup, vanilla, cinnamon, and salt, and mix to combine into a uniform mixture. Add in all remaining cookie ingredients and stir to combine with a wooden spoon. Then use your hands to knead the dough for a bit until it forms into a smooth and uniform ball (and stops being sticky). (Note: if for any reason it’s still too sticky even after you’ve been kneading for a while, simply add a tiny bot more flour and starch — about a tbsp at a time — and keep kneading a little longer).
  • Flatten the dough ball into a disk, place on top of a piece of parchment paper. Cover with a second sheet of parchment and roll out the dough into a ¼” thickness. Use a cookie cutter to cut out the cookies, but don’t lift them off the sheet just yet (they are a little fragile at this point and can easily break, especially if small). Place the whole parchment sheet into the fridge (I pull it onto a tray first for easy handling) and allow the cookies to chill for about 10 minutes.
  • In the meantime, preheat the oven to 350F. Line a baking tray with some parchment paper. Once cookies are chilled transfer the cut-out cookies onto the baking tray. Bake for approximately 6 minutes (note: if using larger cookie cutters the baking time will be a few minutes longer). Remove from oven and allow the cookies to cool on a rack. (Note: they will seem a little soft to the touch, but will harden up once they cook).
  • Melt the chocolate bar or chocolate chips using your preferred method (double boiler or microwave on 30 second bursts). Once the cookies are completely cooled, dip each cookie top into the melted chocolate (allowing any excess chocolate to drip off, especially off the back of the cookie). Place on a tray lined with parchment or a rack and refrigerate for 10-15 mins for the chocolate to set. Enjoy!
