This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. 2 cups chopped onions
2 cups chopped celery
1/2 cup butter
4 cups finely crumbled toasted bread (I use homemade)
4 cups finely crumbled cornbread (see recipe I posted for Skillet Cornbread)
1 tablespoon salt
2 teaspoons freshly ground black black pepper
1 tablespoon dried sage
2 teaspoons poultry seasoning
turkey broth (from simmering turkey giblets with 3 1/2 cups water for 45 minutes. You can use unused portion to ma)
4 large eggs, beaten

Steps:

  • Melt butter in a skillet; add the onions and celery and saute until tender.
  • Combine toasted bread and cornbread in a large bowl and mix.
  • Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
  • Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
  • Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

I use Jiffy since my family LOVES the sweet flavor along with the salty/poultry seasonings! It gives the dish a wonderful balance.

2 (8 1/2 ounce) boxes Jiffy cornbread mix, boxes prepared as usual (Or your own favorite cornbread)
1 cup turkey broth, along with dripping (Or you could use chicken bullion or stock, whatever your preference)
1 egg
1/2 medium yellow onion, diced
1/2 bell pepper, diced
2 stalks celery, diced
fresh parsley
1 tablespoon poultry seasoning (Or to taste)
salt and pepper, to your taste
pulled chicken (optional) or turkey (optional)
chicken gizzard (optional)

Steps:

  • Preheat oven to 350.
  • Crumble cornbread into a baking dish.
  • Mix in veggies and meat with hands (or spoon/fork)
  • Beat egg and seasonings into stock and pour onto crumbs to make a consistancy of mud (add a little more for a moist texture).
  • Bake for 15 minutes or until golden brown.

8 cups cornbread, crumbled
4 cups soft white bread shredded
1 cup butter (salted)
1 cup diced celery
1 large onion, chopped
½ cup green pepper, chopped *
1½ teaspoons poultry seasoning
2 eggs, beaten
2 cups chicken broth
Salt and pepper to taste
Oil to sauté
submitter's note - I would omit the green pepper.

Steps:

  • Preheat oven to 350° F. Cut butter and add to breadcrumbs (both corn and white breads). Sauté veggies in oil and add to bread mixture. Mix in seasonings. Add in eggs and broth until thoroughly mixed and moist. Bake in large covered dish for 30 minutes. Remove cover for last 10 minutes to brown.

We've developed a special Cornbread Crumble recipe specifically for this Southern Cornbread Dressing. Our cornbread is a little-bit sweet, but it blends perfectly with the celery, onions, and sage.

1/2 cup butter
3 cups diced celery
2 cups diced sweet onions
1/2 cup finely chopped fresh sage
Cornbread Crumbles
3 cups soft, fresh breadcrumbs
4 large eggs, lightly beaten
7 cups chicken broth
1 tablespoon freshly ground pepper

Steps:

  • Preheat oven to 400°. Melt butter in a large skillet over medium-high heat; add celery and onions, and sauté 5 to 6 minutes or until onions are tender. Stir in sage, and sauté 1 minute.
  • Stir together Cornbread Crumbles and breadcrumbs in a large bowl. Stir in eggs, next 2 ingredients, and celery mixture, stirring until blended. Divide cornbread mixture between 1 lightly greased 13- x 9-inch baking dish and 1 lightly greased 8-inch square baking dish.
  • Bake at 400° for 45 to 55 minutes or until set and golden brown.

1 box stuffing mix (bread crumbs)
1/2 cup Butter
1 cup Onion chopped
2 cups celery including some leaves, chopped
1/4 cup parsley fresh chopped
1 tablespoon sage rubbed or ground
1 tablespoon thyme fresh chopped
1 1/2 teaspoons marjoram ground
1 1/2 teaspoons black pepper ground
1 1/2 teaspoons salt (optional)
5 cups cornbread crumbled
3 large Eggs slightly beaten
1 1/2 cups turkey broth up to 2 cups
giblets chopped

Steps:

  • Heat oven to 350 degrees. Place bread crumbs in large bowl. In large skillet, melt butter. Add onions and celery. Over low heat, simmer until tender but not mushy (about 8 minutes). Remove from heat. Stir in parsley, sage, thyme, marjoram, pepper and salt. To bowl with bread crumbs, add cornbread and vegetable mixture. Add chopped giblets. Stir in eggs and 1 1/2 cups broth. If mixture seems dry, add remaining 1/2 cup of broth. Taste and if necessary adjust seasonings. To cook inside turkey, spoon dressing into body cavity. Do not pack! Spoon any additional dressing into neck cavity and/or buttered baking dish. To bake dressing separately, spoon into large greased baking dish. Cover loosely. to cook along with turkey, add to oven during last 30-45 minutes roasting time.

8 cups coarsely crumbled cornbread
4 hard-boiled large eggs, chopped
1 medium green pepper, finely chopped
1 medium onion, finely chopped

1-1/2 teaspoons poultry seasoning

SUPER MOIST SOUTHERN CORNBREAD DRESSING

I'm southern so my turkey has to be accompanied by cornbread dressing. Except I hate dry dressing and cornbread dressing can be dry! I don't want to have to cover it with a ton of gravy to make it moist, I want it moist on it's own. This recipe does the job.

CORNBREAD
1 c flour
2 c self rising corn meal mix
1 tsp baking powder
1 tsp salt
1 c cream style corn
1 c sour cream
1 c milk
3 eggs beaten
1 stick butter
FOR THE DRESSING
1 recipe cornbread crumbled
1 c chopped celery
1 large onion, chopped
salt and pepper
sage and poultry seasoning to taste
4 c chicken broth

Steps:

  • 1. Preheat oven to 400.
  • 2. For the cornbread - melt the butter in a heavy skillet, mix dry ingredients together, mix wet ingredients together, then combine them and stir in the melted butter.
  • 3. Pour into the hot skillet and bake at 400 degree for 30 minutes.
  • 4. In a large bowl, add crumbled cornbread, celery, onion, salt, pepper, sage, and poultry seasoning. Add the broth. Sometimes I use a little less than 4 cups but don't be scared for it to be very wet. Taste for seasoning. We like lots of sage.
  • 5. Spoon into greased casserole dish and bake at 350 degrees for 25-30 minutes until lightly browned. If you baked you cornbread ahead and it's not still warm, you may need to cook it a little longer. Check for an internal temp of 160 degrees. I often bake the cornbread the night before and wrap it in foil.

4 skinless, boneless chicken breast halves
1 (16 ounce) package dry corn bread mix
1 (1 pound) loaf day-old white bread, torn into small pieces
4 tablespoons margarine
½ cup chopped onions
½ cup chopped celery
1 (10.75 ounce) can condensed cream of chicken soup
⅛ teaspoon garlic powder
2 teaspoons poultry seasoning
½ teaspoon ground black pepper
6 eggs

Steps:

  • Place the chicken breast halves in a large saucepan with enough water to cover. Bring to a boil. Cook 1 hour, or until the meat is tender and easily shredded. Shred chicken and set aside. Reserve 4 to 6 cups of the remaining broth.
  • Prepare an 8x8 inch pan of cornbread according to package directions. Crumble the corn bread into a large bowl. Mix in the white bread.
  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, melt the margarine and stir in the onions and celery. Slowly cook, stirring occasionally, until tender.
  • Stir the onions and celery into the bread mixture. Mix in the chicken, 4 cups reserved broth, cream of chicken soup, garlic powder, poultry seasoning, pepper and eggs. Blend with a potato masher until the mixture is the consistency of gelatin. Use more of the reserved broth as necessary to attain desired consistency. Transfer to a 9x13 inch baking dish.
  • Bake in the preheated oven 30 minutes, or until golden brown.
