ACAPULCO SUNRISE- ADULT DRINK
A light, somewhat tart cocktail, that blends the flavors of lime, orange and black currant with tequilla. If you like tequilla, I think you'll enjoy this. Mix up a shaker or 2, sit back, and imagine yourself in a beach chair watching the Acapulco sun rise.

Steps:
- Into a cocktail shaker, pour tequila, lime juice, curacao, creme de cassis, and plenty of crushed ice.
- Shake until well combined.
- Fill a tall glass half way with ice.
- Strain drink into the glass.
- Pour some club soda on top.
- Stir and garnish with the slice of lime.

- Preheat oven to 350°. In a large skillet, cook and crumble beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Add taco sauce; simmer until slightly thickened, 5-10 minutes., Cover the bottom of a 13x9-in. baking dish with 3 tortillas, tearing them into pieces as necessary. Layer half the meat mixture over tortillas; sprinkle with half the cheese. Layer with 3 more tortillas; spread with refried beans. Cover with sour cream; sprinkle with green onions and olives. Layer remaining tortillas over top; cover with remaining meat mixture and cheese. Bake until heated through, 25-30 minutes. Let stand a few minutes before serving. If desired, serve with chopped tomatoes and avocados.

This is a recipe that my friends and I use to make when we watched Sunday NFL Football... I don't know where it came from but It's quick and easy and goes great with mexican cold beer! Enjoy....

Steps:
- 1. cut up cheese in 1/2 inch cubes and place in a bowl
- 2. Microwave: add 1/2 the jar to the cheese and place in microwave for 2 minutes, take out of the microwave stir, and place back for 2 more minutes... repeat until the cheese and the salsa blend into a cheesy sauce.. Add or minimize the amount of salsa for thickness...
- 3. serve with Chips...
- 4. Small Crockpot: follow step (1) and step (2) once its semi melted place in the small Crockpot, fix it to low temperature and stir keep stirring til smooth. follow step (3)
- 5. Note: when the cheese gets too dry, add 1 or 2 tablespoons of water to thin out the cheese, then place in microwave for a min or so.

Steps:
- Brown meat, drain.
- Add tomato sauce and 1/2 cup peppers, cook over medium heat 5 minutes. Stir occasionally.
- Add beans and 1/4 lb. process cheese spread, continue cooking until process cheese spread is melted .
- Dip tortillas in hot oil; drain. Fill each tortilla with 1/4 cup meat mixture; roll up. Place seam side down in 12 x 8 inch baking dish.
- Top with remaining meat mixture; and Velvetta cheese, continue baking uncovered for 5 to 8 minutes or until cheese is melted.
- Top with remaining peppers and tomato.
