WORLD'S BEST CRANBERRY SAUCE
Your Thanksgiving table is not complete without this Cranberry Sauce made from scratch in just 20 minutes. Fresh or frozen cranberries, a hint of nutmeg, lots of orange juice and zest and a bit of vanilla complete this incredible cranberry sauce.

Steps:
- Assemble the sauce: Add all the ingredients to a smaller pot and stir to combine. Turn the heat to a medium-high and bring to a boil, stirring occasionally.
- Finish the sauce: Reduce the heat to a medium and continue cooking for about 10 minutes, stirring occasionally. You will notice the cranberries will burst as they cook.
- Cool and serve: Let cool completely at room temperature before serving.

This is the perfect thing to make and volunteer to bring to your family Thanksgiving gathering when you want to look like you made an effort! The maple syrup sweetens it perfectly and the walnuts make the texture so much more interesting.

Steps:
- Place cranberries into a large saucepan and stir in orange juice, maple syrup, sugar, port wine, ginger, orange zest, cinnamon stick, and salt.
- Bring sauce to a simmer. Berries will begin to pop. Cook at a simmer until berries are cooked through and soft, about 10 minutes.
- Remove saucepan from heat and let cranberry sauce cool for about 5 minutes.
- Shake walnuts in a dry skillet over medium heat, cooking until golden brown and fragrant, about 5 minutes. Wipe away any small particles of walnut skin from skillet to avoid bitterness. Stir walnuts into cranberry sauce. Let cool to room temperature and transfer to a serving bowl; sauce will thicken as it cools. Cover bowl with plastic wrap, pushing wrap to touch sauce and refrigerate until needed. Sauce can be made several days ahead.

This was adapted from a Weight Loss Surgery recipe site. Mine tastes better, is lower carb, and you don't have to figure out what to do with the orange pulp.

Steps:
- Rinse cranberries, place in 2-quart pan with water.
- Stir in Splenda Crystal Lite Orange powder, cinnamon, raspberry gelatin and unflavored gelatin if desired.
- Bring to a boil (or use crock pot for long simmering) mashing some of the berries with back of spoon.
- When thickened, pour into serving dish and refrigerate overnight.
