PASTA FAGIOLI AL FORNO

- Preheat oven to 350°. Cook pasta according to package directions for al dente; drain., Meanwhile, drain tomatoes, reserving juices; coarsely chop tomatoes. In a 6-qt. stockpot, cook and crumble sausage with onion, carrot, celery and garlic over medium-high heat until no longer pink, 6-8 minutes; drain. Stir in tomato paste, seasonings, chopped tomatoes and reserved juices; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes., Stir in beans and 1/4 cup each Parmesan cheese and parsley. Stir in pasta. Transfer to a greased 13x9-in. baking dish; sprinkle with fontina cheese and remaining Parmesan cheese., Bake, covered, 20 minutes. Uncover; bake until cheese is melted, 10-15 minutes. Sprinkle with remaining parsley. Freeze option: Cool unbaked casserole; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

Steps:
- Heat olive oil in a large saucepan over medium heat. Cook celery, onion, garlic, parsley, Italian seasoning, red pepper flakes, and salt in the hot oil until onion is translucent, about 5 minutes. Stir in chicken broth, tomatoes and tomato sauce, and simmer on low for 15 to 20 minutes.
- Add pasta and cook 10 minutes, until pasta is tender.
- Add undrained beans and mix well. Heat through. Serve with grated Parmesan cheese sprinkled on top.

- Cook pasta in a large pot of salted boiling water according to package instructions for al dente. Drain and set aside.
- Meanwhile, in a large Dutch oven, heat the oil and butter over medium heat until the butter melts. Add the sausage and cook until browned, breaking up the large chunks with a wooden spoon – about 5-7 minutes. Add the garlic and cook, stirring constantly, for 30 seconds. Pour in the broth and wine, scraping any browned bits from the bottom of the pan. Let it bubble, then simmer until the liquid reduces by at least half, about 4 minutes. Fold in the spinach and toss gently, just until the spinach starts to wilt, about 1-2 minutes. Remove from the heat. Stir in the cooked pasta, cheese, and lemon zest. Taste and season with salt and red pepper flakes. Serve immediately and garnish with additional cheese and/or parsley.

- Add 1 tablespoon of the olive oil to a large pot over medium-high heat. Add the prosciutto and cook for 8-10 minutes, stirring frequently, until the prosciutto is crispy (be careful not to burn it). Transfer the prosciutto to a paper towel to drain. Leave the remaining oil in the pot.
- Reduce the heat to medium and add the remaining tablespoon of olive oil, then the onions, carrots, celery, garlic, and rosemary. Cook, stirring frequently, 6-8 minutes, until the vegetables are soft but not browned.
- Add the beans and tomatoes and stir to combine. Add the dissolved Glace de Poulet Gold®and bring to boil over high heat. Return the heat to medium and simmer for 10 minutes.
- Stir in the pasta and simmer for 8-10 minutes, or until the pasta is tender. Stir in the parsley, spinach, and prosciutto. Season to taste with salt and pepper.
