This crab salad is a blend of imitation crab, vegetables and herbs, all tossed in a simple creamy dressing. A quick and easy salad that's perfect served over lettuce, with crackers, or in a sandwich.

- In a large bowl, combine coleslaw mix and salad greens. Whisk together mayonnaise, sugar and oil; stir in cheese, apple, grapes and raisins. Pour over salad; toss to coat. Top with banana slices.

Steps:
- In a bowl, whisk the oil, 2 tablespoons lemon juice, sugar and salt. Add cranberries; let stand for 10 minutes. In a large bowl, toss apples with remaining lemon juice. Add the broccoli, walnuts and cranberry mixture; toss to coat. Cover and refrigerate for 2 hours or until chilled. Toss before serving.

ABC SALAD
Steps:
- Heat chicken broth to a boil in a medium saucepan Add rice, cover, and reduce heat to simmer. Cook 20-25 minutes until rice is done. While rice is cooking, toast pine nuts at 350 degrees for about 4-5 minutes until medium brown. Shred chicken by pulling slivers off the breast along the grain of the meat. Remove cooked rice from heat, uncover, and let cool for 10 minutes. Transfer rice to a large bowl and fluff with a fork. Add the olive oil, lemon juice, toasted pine nuts, and Parmesan cheese. Toss gently and thoroughly. Add olives and chicken and toss again. Add arugala and toss until all ingredients are lightly coated with the olive oil. Taste and add more olive oil if needed.

- Peel and trim the ends of the carrots, unless very fresh and tender. Boil whole in a large pot of salted water until fork tender, about 15 or 20 minutes.
- While the carrots are boiling, use a food processor or mortar and pestle to mix the garlic, coriander seeds, red pepper flakes, thyme, 1 1/2 teaspoons salt, 1/4 cup olive oil, red wine vinegar, and a dozen turns of fresh black pepper. Set aside. The texture will be like a paste.
- Drain the carrots and transfer to a baking sheet. Spoon the garlic and oil mixture over the carrots. Nestle the halved lemon and orange face down on the baking sheet. Roast for about 20 minutes, or until golden brown. Transfer to a serving platter.
