JERK RIB-EYE WITH HONEY GLAZED PLANTAINS AND SAUTEED COLLARD GREENS

Steps:
- Preheat grill or grill pan on high heat.
- Rub jerk seasoning on steak. Place steak in a plastic bag to marinate for 1 hour in the refrigerator. After marinating for 1 hour, remove steak from refrigerator and let sit for 15 minutes. Grill steak for 10-12 minutes (4-6 minutes on each side). Remove from grill with tongs and let rest for 8 to 12 minutes. Serve with plantains and collard greens.
- In a medium bowl, combine all ingredients with 2 tablespoons of canola oil.
- Preheat a medium frying pan and coat with canola oil. Slice plantains on bias, then saute until brown. Mix in butter and scallions. Then remove from the heat. Stir in honey and parsley with a large spoon.
- Wash collard greens thoroughly. In a medium stock pot, place collards in hot water for 3 minutes, remove and drain.
- In a large saute pan, melt 1 tablespoon of butter, then add onions and crushed red pepper, saute. Then add collards and chicken stock to saute pan. Cook on high heat, stirring occasionally for 5 to 7 minutes. Season with salt and pepper, to taste.

- In a small bowl combine all of the spices. Press a heaping tablespoon of the spice mix onto each fillet so that both sides are liberally coated. Allow the fish to sit for 15 minutes at room temperature prior to cooking.
- In a large skillet, heat the oil over medium-high heat. Once the oil is almost smoking, add the fillets and cook for 2 to 3 minutes on each side. Sprinkle with lemon juice and transfer the fillets to serving platter.
ONE AND DONE COCKTAIL

- Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with foil and grease the foil well. It's important to line the pan to prevent some major cleanup as the honey caramelizes.
- In a small bowl, using a fork, combine the first nine ingredients (all of them except the chicken) to make a paste.
- Arrange the chicken pieces in a single layer on the prepared baking sheet. Spoon the paste on top, spreading it all over the drumsticks. (See important comment in the Notes section below).
- Bake until the chicken is fragrant, well-browned and cooked through, 35-45 minutes, depending on your oven. Baste the chicken midway through baking, and keep a close eye on it after it's been 30 minutes in the oven. If it's darkening too much on top, loosely cover it with foil and continue baking until it's cooked through. Aim for an internal temperature of 165 ºF.
