A.1. CHIPOTLE MEATBALLS
These ain't your grandma's meatballs! (Unless, of course, your grandma got out the A.1. Spicy Chipotle Sauce to make her weekly batch!)

Steps:
- Heat oven to 375°F.
- Mix bread crumbs and milk in large bowl; let stand 5 min. Add all remaining ingredients except A.1. and sugar; mix just until blended. Shape into 75 (1-inch) balls.
- Place on rimmed baking sheet sprayed with cooking spray.
- Bake 20 min. or until done (160ºF). Meanwhile, mix A.1. and sugar until blended.
- Add meatballs to slow cooker; top with A.1. mixture. Cover with lid. Cook on LOW 2 to 4 hours (or on HIGH 1 to 2 hours).

- Add all ingredients (except the orange) to a small pot. Cut orange in half and squeeze it into the mixture and then place them in the pot. Bring to a boil, stirring constantly. Reduce heat and simmer for 10 minutes. Grab a bowl and a mesh strainer and pout the mixture into the strainer (you don't want the big pieces or anything - you want a smooth liquid). Allow to cool and pour into a clean A-1 bottle or air-tight container. Store in fridge.

- Combine all ingredients, well.
- Bring a large pot to boiling, boil meatballs for 5 minutes.
- This will seal the juices inches.

Steps:
- Add all the meatball ingredients to a stainless steel bowl. Use your hands to mix together the meat. Roll meat into medium sized meatballs. Mine made 16
- Heat sauté pan on medium and add oil. Once that heats up, place meatballs in pan and sauté for 10 - 12 minutes turning them every once in a while. Once they are done, turn the heat off under the pan
- Add butter in a medium sauce pan and heat it on medium low. Once the butter has melted, add flour and whisk until it becomes a paste. Make sure to whisk at least for 1 minute
- Add all the other ingredients for the sour cream sauce EXCEPT for the sour cream. Whisk together until it thickens somewhat - about 10 minutes
- Turn heat off under pan and let the sauce cool for 5 minutes before adding the sour cream. Stir until combined
- If you are putting these on zoodles - you can make them before starting the recipe
- Turn the heat back on under the meatballs and add the sour cream sauce to the pan. Heat for 5 minutes. If you are having zoodles, sauté them in a big pan for 3 minutes
- Plate zoodles
- (Decide if you want your Swedish meatballs on your zoodles or on the side.) Ladle the meatballs with sour cream sauce on your zoodles
- Serve
- Eat
- Enjoy

- Mix the sirloin, eggs, bread-soaked in the half and half, salt, pepper, bread crumbs, parmesan cheese, and onion.
- Mix very well together.
- Form the meatballs into ping-pong ball size and roll in the flour.
- Get 2 large frying pans hot; add the butter.
- When pan is hot, fry the meatballs until browned on all sides.
- Brown them really good then they will not fall apart.
- Turn the heat down when they are browned and simmer.
- Add the whole bottle of A-1 sauce and 1/2 cup catsup. Let simmer for 15 minutes more.

- Preheat oven to 400F. Prepare large baking sheet with olive oil.
- Combine pork, beef, bread, pork fat, parsley, 1 tablespoon salt, oregano, fennel seeds, and chili flakes with your hands in a large bowl.
- In a separate bowl, just combine ricotta, eggs, and milk. Combine this mixture into the meat mixture until just incorporated. Do not overwork.
- Form 1½ inch balls and place on the baking sheet or a roasting pan. You should have about 30 meatballs.
