WINTER TOMATO SAUCE

This is also a wonderful sauce for hearty pasta dishes.

Yield Makes 4 cups

Number Of Ingredients 11

2 28-ounce cans whole Italian-style tomatoes
1/4 cup olive oil
2 cups chopped onions
8 large fresh thyme sprigs
6 garlic cloves, peeled, quartered
4 4-inch-long fresh rosemary sprigs
4 large fresh basil sprigs
1 bay leaf
1 oil-packed anchovy fillet
1 teaspoon coarse kosher salt
1 teaspoon Hungarian or Spanish sweet paprika

Steps:

  • Using fingers, split open tomatoes; remove and discard seeds. Chop tomatoes; reserve juice. Heat oil in heavy large saucepan over medium-high heat. Add chopped tomatoes and reserved juice and all remaining ingredients; stir to combine. Bring to boil; reduce heat to medium and simmer uncovered until sauce is reduced to 4 cups, stirring often, about 1 hour.
  • Remove bay leaf and any stems from herbs. Pass sauce through food mill fitted with large holes. Alternately, transfer to processor. Using on/off turns, process to coarse puree.

A Two Minute Sauce with a

Though I'm reluctant to use out-of-season, commercially produced fresh tomatoes in a sauce, tomatoes from hothouses are a decent alternative. I sometimes dice up such a tomato for a quick skillet sauce, where the texture and color of the flesh are enjoyable, giving a dish acidity and freshness. A good example is the Sauce of Anchovies, Capers, and Fresh Tomatoes on page 91\. Here is an even simpler one, for which a ripe market tomato will do, even in winter. Try this simple sauce with Shrimp and Tomato Ravioli (page 182), or tagliatelle, or capellini.

Steps:

  • For 1 1/2 pound of pasta, dice up a cup or so of tomato pieces (without seeds-or skin, if you are willing to peel the tomatoes). Slice 3 plump garlic cloves. Shred 2 tablespoons of fresh basil.
  • Toast the garlic slices in 2 tablespoons of extra-virgin olive oil for 1 minute in a fairly large skillet. Scatter in the diced tomato, sprinkle on a pinch of salt and a pinch of peperoncino, and toss the pieces for 1 more minute, just barely cooking them. Turn off the heat and stir in the basil leaves and the cooked pasta with 3 or 4 tablespoons of the pasta water. Toss all, then add grated cheese-Parmigiano-Reggiano, Grana Padano, or Pecorino Romano.

RICH WINTER TOMATO SAUCE

1 1/2 ounces (1/2 cup packed) dried tomatoes (not packed in oil)
1 cup boiling hot water
1 large onion, chopped (about 2 cups)
3 garlic cloves, minced
2 tablespoons unsalted butter
a 28- to 32-ounce can whole tomatoes with juice

Steps:

  • In a small bowl soak dried tomatoes in boiling water 30 minutes and drain in a sieve over a bowl. Chop soaked tomatoes coarse.
  • While dried tomatoes are soaking, in a saucepan cook onion and garlic in butter over moderately low heat, stirring, until softened. Add canned tomatoes with juice, stirring to break up tomatoes, chopped tomatoes, and salt and pepper to taste and simmer sauce, uncovered, stirring occasionally, 30 minutes.
  • Purée sauce through the fine disk of a food mill or force it through a coarse sieve set over a bowl. Sauce may be made 1 week ahead and chilled, covered.

1 1/2 cups finely chopped onion
1/3 cup finely chopped carrot
1/3 cup finely chopped celery
3 large garlic cloves, minced
1 tablespoon dried basil, crumbled
1 tablespoon dried oregano, crumbled
1 bay leaf
3 tablespoons olive oil
2/3 cup dry red wine
3 tablespoons tomato paste
two 28- to 32-ounce cans whole Italian tomatoes, drained, reserving juice, and chopped

Steps:

  • In a heavy 5-quart saucepan cook onion, carrot, celery, garlic, basil, oregano, bay leaf, and salt and pepper to taste in oil over moderate heat, stirring, until vegetables are softened and add wine. Boil wine until most is evaporated and stir in tomato paste and tomatoes with reserved juice.
  • Simmer sauce, covered, over moderately low heat, stirring occasionally, 35 minutes and simmer, uncovered, stirring occasionally, 15 to 20 minutes, or until thickened. Discard bay leaf. Sauce may be made 2 days in advance and kept covered and chilled.

Transform a can of whole peeled tomatoes into a flavorful sauce for pizza or pasta, simply by adding garlic, red pepper flakes, and fresh oregano.

  • In a medium saucepan, heat olive oil over medium-high. Add garlic; cook until fragrant, about 1 minute. Add red-pepper flakes (optional) and tomatoes, breaking them up as you go. Season with salt and pepper. Bring to a boil, then reduce to a rapid simmer. Cook, stirring often, until sauce thickens, about 15 minutes. Stir in oregano leaves.

PASTA WITH WINTER SQUASH AND TOMATOES



Pasta With Winter Squash and Tomatoes image

If we're being truthful, this sweater weather recipe should really be called "winter squash and tomatoes with pasta," as the 2 pounds of squash far outweigh the 1/2 pound of penne it calls for. We think that's a good thing. Every single piece of pasta gets a generous coating of sauce, and there's even some left behind after the pasta is long gone. That's what bread is for.

Salt and pepper
3 tablespoons extra virgin olive oil
1 tablespoon chopped garlic
1/4 cup sliced shallots
1/4 teaspoon crushed red pepper flakes, or to taste
2 cups chopped tomatoes
1 1/2 to 2 pounds peeled, cubed or shredded butternut or other winter squash, about 5 cups
1/2 pound cut pasta, like ziti or penne
Freshly chopped parsley or Parmesan for garnish.

Steps:

  • Bring a large pot of water to a boil and salt it. Put olive oil in a large skillet over medium heat. Add garlic, shallots and pepper flakes and cook for about a minute; add tomatoes and squash, and cook with some salt and pepper.
  • When squash is tender - about 10 minutes for shreds, 15 or so for small cubes - cook pasta until it is tender. Combine sauce and pasta, and serve, garnished with parsley or Parmesan.

You can make a tomato quiche off-season using canned tomatoes for a rich tomato sauce that you blend with the custard filling. When tomatoes are in season I use the same filling but line the tart shell with sliced tomatoes.

1 9- or 10-inch whole wheat Mediterranean pie crust, (or gluten-free version)
1 tablespoon extra virgin olive oil
1/2 medium onion, finely chopped
2 to 3 garlic cloves (to taste), minced
1-14 1/2-ounce can chopped tomatoes in juice (no salt added), with juice
1 tablespoon tomato paste
Pinch of sugar
Salt to taste
1 sprig fresh basil or rosemary
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
Freshly ground pepper
2 eggs
2 egg yolks
3/4 cup low-fat (2 percent) milk
2 ounces Gruyère cheese, grated (1/2 cup, tightly packed)
1 ounce Parmesan cheese, grated (1/4 cup, tightly packed)

Steps:

  • Roll out the crust and line a 9- or 10-inch tart pan. Refrigerate uncovered (place in freezer if using the yeasted crust) while you make the filling.
  • Heat the olive oil over medium heat in a wide, heavy saucepan and add the onion. Cook, stirring, until it begins to soften, 2 to 3 minutes. Add a pinch of salt and continue to cook, stirring often, until tender, about 5 minutes. Meanwhile pulse the tomatoes in a food processor fitted with the steel blade or in a mini-processor.
  • Add the garlic to the onions and cook, stirring, until fragrant, about 30 seconds. Add to the canned tomatoes and turn up the heat slightly. Add the tomato paste, sugar, salt, basil or rosemary spring and thyme and simmer briskly, stirring often, until the tomatoes have cooked down and smell fragrant, about 15 minutes. Taste and adjust salt, and add pepper. Remove from the heat. Remove the basil or rosemary sprig and, if you used rosemary, remove any rosemary needles that may have detached from the sprig. Allow to cool slightly. You should have about 1 cup of the sauce.
  • Preheat the oven to 350 degrees. Beat the eggs and egg yolks in a large bowl. Brush the bottom of the crust with a small amount of the beaten egg and pre-bake for 10 minutes. Remove from the oven and allow to cool for 5 minutes.
  • Beat the milk into the eggs. Add 1/2 teaspoon salt, freshly ground pepper to taste and beat together. Stir in the cheeses and the tomato sauce and combine well. Scrape into the crust, using a rubber spatula to scrape out every last bit from the bowl. Place the tart on a sheet pan for easier handling and place in the oven. Bake for 30 to 35 minutes, until set. Remove from the heat and allow to sit for at least 15 minutes before cutting.
