Fresh summer fruit and lettuce salad made fast and easy.

1 lime - zested, peeled, and sliced
1 mandarin orange (tangerine) - zested, peeled, and sectioned
1 navel orange, peeled and sectioned
1 grapefruit, peeled and sectioned
1 bulb shallots, diced
1 tablespoon lemon juice
1 tablespoon olive oil
½ teaspoon salt
1 head romaine lettuce, torn

Steps:

  • Place lime slices, tangerine sections, navel orange, and grapefruit in a bowl. In a separate bowl, mix the lime zest, mandarin orange zest, shallots, lemon juice, olive oil, and salt. Pour over the fruit. Arrange dressed fruit atop romaine lettuce to serve.

My mom always made this salad for Christmas dinner, so it's been a family favorite for many years. I teach special education at the high school level and often incorporate cooking into my lessons. Whenever we make this recipe at school, it's always a hit with the students.

1 cup cubed fresh pineapple
1 cup fresh orange pieces
1 cup fresh tangerine pieces or 1 can (11 ounces) mandarin oranges, drained
1 cup sour cream
1/2 cup miniature marshmallows
1/2 cup sweetened shredded coconut
Lettuce leaves, optional

Steps:

  • In a large bowl, combine the fruit sour cream, marshmallows and coconut. Cover and refrigerate for several hours. If desired, serve in a lettuce-lined bowl or on individual lettuce-lined plates.

I live in Orange County and, as you might guess by our county's name, there are plenty of orange trees here. This salad is one of my favorite ways to use this delightful fruit. It makes a nice light supper on a hot day.

3 tablespoons red wine vinegar
3 tablespoons orange juice
2 teaspoons honey
1-1/2 teaspoons Dijon mustard
1 teaspoon olive oil
SALAD:
1 tablespoon canola oil
1 pound beef top sirloin steak, cut into thin strips
1/2 teaspoon salt, optional
4 cups torn romaine
2 large oranges, peeled and sectioned
1/2 cup sliced fresh strawberries
1/4 cup chopped walnuts, toasted, optional

Steps:

  • Whisk together first five ingredients., For salad, in a large skillet, heat oil over medium-high heat; stir-fry beef until browned, 1-3 minutes. Remove from heat. If desired, sprinkle with salt., Place romaine, fruit and beef in a serving dish. Toss with vinaigrette. If desired, top with walnuts. Serve immediately.

½ cup canola oil
½ cup white sugar
¼ cup apple cider vinegar
2 tablespoons sesame oil
2 tablespoons minced onion
2 tablespoons poppy seeds
2 tablespoons toasted sesame seeds
1 teaspoon minced garlic
½ teaspoon ground paprika
1 (12 ounce) bag mixed salad greens
1 (8 ounce) can mandarin oranges, drained
½ cup grape tomatoes
½ cup toasted sliced almonds
¼ cup crumbled Gorgonzola cheese
¼ cup chopped green onions

Steps:

  • Combine canola oil, sugar, apple cider vinegar, sesame oil, onion, poppy seeds, sesame seeds, garlic, and paprika in a jar. Close and shake jar until dressing is well mixed.
  • Place salad greens in a large bowl. Pour in half of the dressing; toss to mix. Arrange mandarin oranges, grape tomatoes, almonds, Gorgonzola cheese, and green onions on top.

2 medium navel oranges, peeled and sectioned
2 medium kiwifruit, peeled and sliced
1-1/2 cups halved seedless red grapes
1 cup sliced peeled apple
1 cup diced honeydew melon
1 cup fresh blueberries
1/4 cup orange juice
2 tablespoons honey
1 tablespoon lime juice
1-1/2 cups sliced ripe bananas

Steps:

  • In a large salad bowl, combine the first six ingredients. In a small bowl, combine the orange juice, honey and lime juice. Drizzle over fruit mixture; toss to coat. Chill until serving. Add bananas just before serving. Serve with a slotted spoon.

Sharon the Rocket gifted me with Now Serving: FMB Favourites, a cookbook from the Farmers and Merchants Bank. This recipe sounds so refreshing. Adapted slightly to make it less sweet.

4 large navel oranges
1 lb red grapefruits or 1 lb pink grapefruit
1 fresh pineapple
1 cup seedless grapes
8 ounces canned unsweetened orange juice
1 cup sugar
fresh spearmint (optional)

Steps:

  • Clean, peel and cut all the fruit into bite-size pieces and place in a mixing bowl. Add 3/4 cup of the sugar to the fruit, mix gently and refrigerate.
  • Meanwhile, make orange syrup. Place the orange juice in a saucepan over medium heat. Bring to a boil and add remaining 3/4 cup sugar. Mix well and simmer for about 20 minutes to reduce to half. Mix often and watch closely as it may scorch. When it has reduced to half, remove from heat and cool to the touch before pouring over chilled fruit. Mix well and refrigerate for atleast 2-3 hours before serving.
  • Although it does not state in the recipe, a couple of tablespoonfuls of finely-minced fresh spearmint would be brilliant in this!
