6 thick slices French bread
1/4 cup ricotta cheese
1/4 cup cottage cheese, whipped
2 tablespoons low-fat cream cheese
2 teaspoons white sugar
2 teaspoons vanilla extract
3 cups egg substitute
1/4 cup evaporated milk

Steps:

  • cut a pocket in each slice of french bread open carefully,.
  • in a large bowl combine the ricotta , cottage cheese and cream cheese.
  • add the sugar amd flavoring extract and beat until smooth.
  • spread the mixture evenly onto each bread pocket.
  • beat together the egg substitute and milk.
  • bip the slices of bread in the egg mixture.
  • heat on a non-stick pan over medium heat.
  • coat with cooking spray and cook on each side 3-4 mins or until lightly browned.
