FAVORITE MEAT LOAF
Meat loaf is my all-time favorite dish to cook. One year, an aunt and I put together a cookbook that included over 50 variations of that hearty, old-fashioned main course.-Jim Hopkins, Whittier, California

Steps:
- Preheat oven to 350˚. Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!
A FAVORITE MEATLOAF (1960)
The whole family has always loved this recipe from the 60's. Leftovers make great cold or warm sandwichs. My daughter always said make a recipe the first time as is then add your own tweeks later if need be. So try to use all the ingredients. :)

Steps:
- 1. Mix all ingredients together then add the meat and mixing lightly (so you don't toughen it). You can shape into a loaf on a cookie sheet (with sides) lined with parchment paper. Cook uncovered at 350º for 1 hour if using (cookie sheet) or so. For the last ½ hour of cooking slather on Ketchup which thickens during cooking time and tastes great
