1 (26 ounce) can spaghetti sauce
1 pound cottage cheese
8 ounces shredded mozzarella cheese
8 ounces shredded Cheddar cheese
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a blender or with an electric mixer, blend tomato sauce and cottage cheese together until smooth. Spoon a little of the sauce mixture in the bottom of a 9x13 baking dish. Place a layer of cooked noodles over the sauce, and sprinkle a portion of the mozzarella, the cheddar and the parmesan over the noodles. Repeat layering of sauce, noodles and cheese; finish with a cheese layer.
  • Bake in preheated oven 30 to 45 minutes, until cheese is bubbly and golden.

1 (16 ounce) package lasagna noodles
4 cups ricotta cheese
¼ cup grated Parmesan cheese
4 eggs
salt and pepper to taste
1 teaspoon olive oil
3 cloves garlic, minced
1 (32 ounce) jar spaghetti sauce
1 teaspoon Italian seasoning
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
  • In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
  • In a medium saucepan, heat oil over medium heat and saute garlic for 2 minutes; stir in spaghetti sauce and Italian seasoning. Heat sauce until warmed through, stirring occasionally, 2 to 5 minutes.
  • Spread 1/2 cup of sauce in the bottom of a 9x13 baking dish. Cover with a layer of noodles. Spread half the ricotta mixture over noodles; top with another noodle layer. Pour 1 1/2 cups of sauce over noodles, and spread the remaining ricotta over the sauce. Top with remaining noodles and sauce and sprinkle mozzarella over all. Cover with greased foil.
  • Bake 45 minutes, or until cheese is bubbly and top is golden.

1 yellow onion, diced
6 cloves of garlic, minced
15 oz ricotta cheese
1 egg
1 teaspoon dried oregano
1 cup freshly grated parmesan cheese
25 oz jar of good quality pasta sauce
2 cups shredded mozzarella cheese
9 lasagna noodles
1/4 cup chopped fresh parsley

Steps:

  • Add garlic and onion to a skillet with a splash of olive oil. Cook over medium high heat for around 10 minutes, until onion is soft. Add sauce, stir, and set aside
  • In a bowl, stir to combine the freshly grated parmesan cheese, ricotta cheese, oregano, egg, and fresh parsley.
  • Grease a 9 X 13 casserole dish with cooking spray
  • Add 1/3 cup sauce to the bottom of the dish and spread it out
  • Add 3 lasagna noodles
  • Place 1/2 cup of the ricotta mixture and spread out over the noodles
  • Add 1 cup of the sauce and spread out over the top
  • Sprinkle on 1/2 cup of mozzarella cheese
  • Add the next layer: 3 noodles, 1/2 cup ricotta, 1 cup of sauce, and 1/2 cup of mozzarella
  • For the final layer, add 3 noodles, the rest of the ricotta, the rest of the sauce, and the remaining 1 cup of mozzarella over the top
  • Cover with foil and bake at 375 degrees for 50 - 60 minutes, until hot and bubbly
  • For crispy edges and top, remove foil for the last 5 minutes (optional)

1 medium onion, chopped
2 garlic cloves, minced
1 can (28 ounces) tomatoes, undrained

1 teaspoon dried basil
1/2 teaspoon pepper

2 cups 4% cottage cheese

1-1/2 cups shredded part-skim mozzarella cheese, divided
2 large eggs
1 pound lasagna noodles, cooked and drained

Steps:

  • In a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink and onion is tender; drain. In a blender, process the tomatoes until smooth. Stir into beef mixture along with mushrooms, tomato paste and seasonings; simmer 15 minutes. , In a bowl, combine cottage cheese, Parmesan, cheddar, 1/2 cup mozzarella and eggs. Spread 2 cups meat sauce in the bottom of an ungreased 13x9-in. baking dish. Arrange half the noodles over sauce. Spread cheese mixture over noodles. Top with remaining noodles and sauce. , Cover and bake at 350° for 45 minutes. Uncover; sprinkle with remaining mozzarella. Return to the oven for 15 minutes or until cheese is melted.

48 oz Jar Spaghetti Sauce
30 oz Ricotta Cheese
2 Eggs
1/2 cup grated parmesan cheese
2 tsp parsley (dried or finely chopped)
2 cups grated mozzarella cheese
12 lasagna noodles (do not need to be "no bake", regular are fine)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 13x9 inch baking pan.
  • In a large bowl, combine ricotta cheese, eggs, parmesan cheese, parsley and one cup of mozzarella cheese. Mix until well combined.
  • To assemble lasagna, place 1 and 1/2 cups of spaghetti sauce in the bottom of the prepared baking pan. Gently place four lasagna noodles onto sauce. Most 13x9 inch pans will fit three noodles length (13" side) wise, and a shorter, broken noodle width (9" side) wise.
  • Add approximately 1/3 of the cheese mixture to the top of the noodles, and gently spread across noodles. Top cheese with 1 cup of sauce, then noodles, then cheese again. Repeat one more time, finishing with a final layer of sauce. Sprinkle remaining mozzarella cheese evenly over the sauce.
  • Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 10 minutes. Remove from oven and allow to stand for ten minutes prior to serving.

1 pound lean ground beef
1 large white onion (diced)
5 cloves garlic (minced)
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
1/2 cup white wine
2 tablespoons white sugar
1/2 cup chopped fresh basil
1 teaspoon fennel seeds
1 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley
1 pound lasagna noodles
30 ounces ricotta cheese
2 tablespoons chopped fresh parsley
1 large egg
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 pound thinly sliced mozzarella cheese (about 24 slices)
1 cup freshly grated Parmesan cheese

Steps:

  • In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and wine*. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally.
  • Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water.
  • In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna.
  • Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan.
  • To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/3 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, then sprinkle with 1/4 cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes to allow cheese to brown. Serve hot.

Lasagna Sauce
1 pound lean ground beef
1 pound lean ground pork
1 onion, very finely chopped
1 can (16 ounce size) chopped tomatoes
1 quart tomato puree
1 teaspoon sweet smoked paprika
1 tablespoon olive oil
salt and pepper, to taste
White Sauce
1 tablespoon flour
1 tablespoon butter
12 ounces milk, more to taste
1/2 teaspoon nutmeg, or to taste
Assembly
1 package dried lasagna sheets

Steps:

  • For Lasagna Sauce: Heat the olive oil in a large lidded pot. Put the chopped onion in and fry until the onion turns translucent. Add the smoked paprika. Add the ground pork and beef and fry until browned. Season with salt and pepper. Add the chopped tomatoes and the tomato puree and bring to a boil. Reduce the heat to the lowest setting and let simmer for a couple of hours, until the sauce is thick. Set aside. For White Sauce: In a separate pan, melt the butter and add the flour and make a roux. Cook this for a few minutes but do not allow it to color. Add the milk to the roux a little at a time and allow it to absorb the first few times before putting more in. Add the remaining milk and cook until the consistency of heavy or double cream. Grate in about nutmeg and set aside. To Assemble: Put in a thin layer of the meat sauce into a lasagna dish and put in a layer of lasagna sheets. Alternate the layers until you get up to about a half inch below the rim of the dish, ending with a layer of lasagna. Pour on the white sauce. Put into a preheated 375 degrees F oven for 25 to 30 minutes until the white sauce turns golden brown.

2 (24 ounce) jars prepared pasta sauce or 6 cups homemade sauce
1 cup water
1 (15 ounce) container ricotta cheese
1 egg, slightly beaten
½ teaspoon garlic powder
2 teaspoons Italian seasoning (or an equal blend of dried basil, dried oregano, and thyme leaves)
1 cup grated parmesan cheese
1 (16 ounce) package uncooked lasagna noodles
4 cups shredded mozzarella cheese

Steps:

  • 1. Spray a 9x13 baking dish with non-stick cooking spray. 2. In a large skillet, combine pasta sauce and browned ground chuck. Bring to a simmer and heat through. 3. In a medium bowl, combine ricotta cheese, egg, garlic powder, Italian seasoning, and parmesan cheese. Stir together well. 4. Pour approximately 1 cup of meat sauce into baking dish. Add water and combine with a spoon or fork. 5. Add a layer of lasagna noodles. Do not overlap as the noodles will expand overnight. 6.   • In a large heavy-bottomed pot, heat olive oil over medium heat. Add in onion and saute 2-3 minutes. Add in garlic and ground beef. Break meat apart as it browns. Once meat has browned completely, pour in diced tomatoes, tomato sauce, water, bay leaves, dried basil, sugar, Italian Seasoning and salt. Bring to boil, then reduce heat to simmer. Cook sauce 1-2 hours or until very thick. You may have to add a little extra water as it reduces down to prevent scorching. This is normal.
