When I first fixed this, we were living on a ranch along a river with lots of game. Wild turkey can be dry, but not prepared this way! Of course, it's just as tasty with store-bought turkey. And the gravy it makes is out of this world. I'm a widow with two children, five grandchildren and a great-grandchild.

1 cup soy sauce
1 cup canola oil
1/4 cup honey
4 teaspoons Worcestershire sauce
2 teaspoons ground ginger
2 teaspoons ground mustard
2 teaspoons lemon juice
4 garlic cloves, minced
6 to 7 pounds fresh turkey parts
1/4 cup all-purpose flour, optional
Salt and pepper, optional

Steps:

  • In a small bowl, combine the first eight ingredients. Place turkey in a large heavy-duty plastic bag; add half of marinade. Close the bag; refrigerate overnight, turning bag occasionally. Cover and refrigerate remaining marinade., Drain and discard marinade from turkey; arrange turkey in a single layer in large shallow roasting pan. Pour reserved marinade over turkey. Bake, uncovered, at 325° for 1-1/2 to 2 hours or until tender, basting occasionally if desired. Remove turkey to serving platter and keep warm. , If desired, make gravy: Strain pan juices into a large measuring cup. Skim fat and reserve 1/4 cup in a medium saucepan; discard remaining fat. Blend flour into saucepan. Add water to pan juices to make 2 cups. Add to saucepan; cook and stir until thickened and bubbly. Cook and stir 1 minute longer. Season with salt and pepper. Serve with turkey.

This recipe makes your turkey moist and full of flavor. You can also use this recipe for Cornish game hens, chicken breasts or roasting chicken. Select a turkey sized according to the amount of people you will be serving.

¾ cup olive oil
3 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 tablespoon chopped fresh basil
1 tablespoon Italian seasoning
1 teaspoon ground black pepper
salt to taste
1 (12 pound) whole turkey

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a small bowl, mix the olive oil, garlic, rosemary, basil, Italian seasoning, black pepper and salt. Set aside.
  • Wash the turkey inside and out; pat dry. Remove any large fat deposits. Loosen the skin from the breast. This is done by slowly working your fingers between the breast and the skin. Work it loose to the end of the drumstick, being careful not to tear the skin.
  • Using your hand, spread a generous amount of the rosemary mixture under the breast skin and down the thigh and leg. Rub the remainder of the rosemary mixture over the outside of the breast. Use toothpicks to seal skin over any exposed breast meat.
  • Place the turkey on a rack in a roasting pan. Add about 1/4 inch of water to the bottom of the pan. Roast in the preheated oven 3 to 4 hours, or until the internal temperature of the bird reaches 180 degrees F (80 degrees C).

TERIYAKI TURKEY TIPS



Teriyaki Turkey Tips image

This easy, quick dinner is healthy and VERY filling! The spices I used are my preference; spice differently according to yours. You should be able to find turkey tips at a local butcher.

1.5 lb turkey tips
1 Zucchini (or summer squash)
1 small onion
1 tbsp Extra-virgin olive oil
Teriyaki sauce (or marinade)
Low-Sodium Soy sauce
Salt
Pepper
Garlic powder
Basil
Ginger

Steps:

  • 1) If not already done by the butcher, cut the turkey tips into small chunks (around 1 or 2 inches in diameter)
  • 2) Marinate turkey tips in teriyaki sauce for 10-20 minutes
  • 3) While tips are marinating, dice the onion and the zucchini. Coat the bottom of a pan (10" or 12" works well) with the olive oil.
  • 4) Over medium heat, sautee the onions and zucchini, until the onions just begin to brown and the zucchini starts to become translucent (about 5-10 minutes).
  • 5) Dump the turkey tips and marinade into the pan, with the zucchini and onions.
  • 6) Add dashes of soy sauce, salt, pepper, garlic powder, basil, and ginger, to taste.
  • 7) Let mixture cook, stirring occassionally to help turkey tips cook evenly and thoroughly, for about 10-15 minutes, or when turkey is cooked through. You'll know the turkey is thoroughly when the inside of the thickest piece is white all the way through to the center.
  • 8) Enjoy!
  • I serve this dish over brown rice seasoned with a little margarine, soy, garlic, and ginger. Over rice, it is an incredibly filling dinner!
