9 DOZEN PEANUT BUTTER COOKIES BY FREDA
School time is fast aproaching and I am thinking of all the Mothers that need Kiddie treats. This recipe was from The Chicago Public Schools District. Makes 9 dozen 3" cookies. Recipe is economical to make on any Budget. These bake only 12 min. Kids of all ages enjoy these,from 1 to 100. Even Nursing homes & seniors.

Steps:
- 1. In a Large Bowl of your electric mixer, Beat Butter till light and fluffy, about 3 minutes. Add Both brown and granulated sugars. Beat till no granules remain, that's about 5 more min.
- 2. Add Peanut Butter, Blend til combined well. Add Your Eggs; Continue to Beat on HIGH for 1 more Minute.
- 3. in 2nd large Bowl; Combine the dry ingredients; flour, baking soda, & salt. Slowly add dry mixture to the Butter Mixture, 1 cup at a time till well blended. Mixture will be thick.
- 4. Take 1 TBS of Dough, Roll in palm of your hand to make a ball. Place on GREASED baking Sheet. Flatten to 1/4" thick cookies with Fork in a criss cross pattern, or use palm of your hands, or even bottom of a glass.
- 5. BAKE @ 375 for 10-12 min, or till lightly golden brown on the bottoms. Each cookie is 105 calories, 7 g fat. 2 g protien
- 6. Hints: Your your own Imaginations to make these even more Special, By adding PB or Choc Mini Chips, Nuts, Mini M&M's, Dip half in Chocolate, Drizzle tops with Chocolate glaze, The Ideas are Limitless. Steps:
- Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
- In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
- Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

- Whisk together the flour, baking soda and salt in a medium bowl until combined.
- Add the butter, granulated sugar and brown sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until pale and fluffy, about 5 minutes. Add the peanut butter and continue beating until fluffy, 1 minute. Add the egg and vanilla and beat until combined. With the mixer on low speed, gradually add the dry ingredients until combined. Cover with plastic wrap and refrigerate for 1 hour.
- Position 2 racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Lightly grease 2 baking sheets with nonstick spray.
- Roll half the dough into 1-inch balls (about 1 tablespoon each) and then roll in granulated sugar. Place on the prepared baking sheets about 2 inches apart. Chill the remaining dough while the first batch bakes.
- Bake, rotating and switching the pans halfway through, until the cookies are puffed and lightly golden, 10 to 11 minutes. Immediately press a chocolate candy into the center of each cookie. Let cool 10 minutes on the baking sheets, then transfer to wire racks to cool completely. Repeat with the remaining dough.
CLASSIC PEANUT BUTTER COOKIES
For the best texture, use regular, not natural, peanut butter.

- Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl.
- Put butter and sugars into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, 2 to 3 minutes. Mix in eggs, then peanut butter.
- Reduce speed to low. Add flour mixture in 3 batches, mixing until just combined after each addition. Cover with plastic wrap, and refrigerate 30 minutes.
- Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing about 1 1/2 inches apart. Press cookies with fork tines to flatten and create a cross-hatch pattern. Bake until golden brown, 14 to 16 minutes. Let cool on sheets 5 minutes. Transfer cookies to wire racks to cool completely.

Who doesn't enjoy Peanut butter, Chocolate and peanuts?? These are so easy using your own favorite Peanut butter cookie recipe. I have listed (3) variations of this recipe. - 1. Heat Oven @ 350. Spray with non stick cooking spray a 13 X 9 Pan
- 2. Mix your favorite Recipe for Peanut-Butter cookies. Press dough into 13X9 Pan. Sprinkle with 1 cup of the peanuts and press into the cookie dough. (Save the other cup of nuts til later) Bake 15-18 min, til edges are golden brown. COOL approx 10 min.
- 3. in a small Microwave safe bowl, add chips, heat to just melted. Spread evenly over the bars. Sprinkle with the remaining Cup of Chopped Peanuts. Chill in refer for 20-30 min, until set.
- 4. For Bars cut into 9 rows By 4 rows. For Added attraction on your cookie tray, Tip: # 1. Drizzle with a white glaze of this mixed pdr sugar Vanilla and milk mixed thin, and poured into a zip lock bag, Cut a tiny hole off the corner and drizzle or pipe over your Bars. Enjoy.
- 5. Variation Tip # 2 after baking the Bars, Melt Caramels, then pour this over the Bars, Chill til Caramel sets. Melt the Chocolate above, then spread over the Caramel, Sprinkle the 1 cup of Peanuts over the Chocolate. Chill again til set. Cut into Bars.
