There's nothing better than the smell of the fresh apple pie baking in the oven. It signifies the start of cozy fall days, and it's the ultimate dessert to kick off the season. This recipe uses Betty's pie crust mix so you can skip chilling your pastry dough and get right to the baking part-meaning less time waiting around for pie and more time eating it! Apple pie is best served warm with a big scoop of vanilla ice cream on top.

1 package Betty Crocker™ pie crust mix
1/3 cup cold water
1/2 cup sugar
1/2 cup Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
5 cups thinly sliced peeled apples (3 large)
1 tablespoon butter or margarine
Milk
Additional sugar

Steps:

  • Heat oven to 425°F. Make pie crust mix as directed for 9-Inch Two-Crust Pie, using 1/3 cup cold water--except trim overhanging edge of bottom pastry 1 inch from rim of plate.
  • Stir together 1/2 cup sugar, the flour, cinnamon and nutmeg in large bowl. Add apples; toss. Spoon into pastry-lined pie plate. Dot with butter.
  • Roll remaining pastry; cut into 10 strips, each about 1/2 inch wide. Place 5 strips across filling in pie plate. Weave a cross-strip through by first folding back every other strip of the first 5 strips. Continue weaving, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends. Fold trimmed edge of bottom crust over ends of strips, building up a high edge. Seal and flute. Brush lightly with milk; sprinkle lightly with additional sugar.
  • Bake 30 to 35 minutes or until crust is golden brown and juice is bubbly.

1 recipe pastry for a 9 inch double crust pie
½ cup unsalted butter
3 tablespoons all-purpose flour
¼ cup water
½ cup white sugar
½ cup packed brown sugar
8 Granny Smith apples - peeled, cored and sliced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
  • Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
  • Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

1 1/2 pounds short crust pastry, recipe follows
7 cups Royal Gala apples, cored and quartered (about 5 apples)
1/2 cup sugar
1 tablespoon lemon juice
2 teaspoons lemon zest, finely chopped
1/4 teaspoon grated nutmeg
Pinch salt
1 egg yolk
2 tablespoons water
2 tablespoons unsalted butter, cold
3 cups all-purpose flour
1/4 teaspoon salt
4 ounces unsalted butter, cold
8 ounces shortening, cold
1/2 cup ice cold water

Steps:

  • Preheat the oven to 375 degrees F.
  • Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
  • Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
  • Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
  • Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
  • With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.

1-1/2 to 1-3/4 lb. Cortland apples (about 4 medium)
1 lb.Granny Smith apples (about 2-1/2 medium)
2 tsp. fresh lemon juice
2/3 cup packed light brown sugar
1/4 cup plus 1 Tbs. granulated sugar
3 Tbs. cornstarch
1/2 tsp. ground cinnamon; more to taste
1/4 tsp. kosher salt
1/8 tsp. ground nutmeg
1 large egg white
2 tsp. unsalted butter, softened, plus 1 Tbs. cold unsalted butter cut into small (1/4-inch) cubes
4 to 6 Tbs. all-purpose flour
1 recipe Flaky Pie Pastry

Steps:

  • Position two oven racks in the lower third of the oven and heat the oven to 400°F.
  • Peel the apples, cut each in half from top to bottom, remove the cores with a melon baller, and trim the ends with a paring knife. Lay the apples, cut side down, on a cutting board. Cut the Cortland apples (below left) crosswise into 3/4-inch pieces, and then halve each piece diagonally. Cut the Granny Smith apples (below right) crosswise into 1/4-inch slices, leaving them whole. Put the apples in a large bowl and toss with the lemon juice.
  • Combine the brown sugar, 1/4 cup of the granulated sugar, cornstarch, cinnamon, kosher salt, and nutmeg in a small bowl. (Don't add this to the fruit yet.)
  • In a small dish, lightly beat the egg white with 1 teaspoon water. Set aside.
  • Butter a 9-inch ovenproof glass (Pyrex) pie plate, including the rim, with the 2 tsp. of softened butter.
  • Rub 2 to 3 Tbs. of flour into the surface of a pastry cloth, forming a circle about 15 inches across, and also into a rolling pin stocking. If you don't have a pastry cloth, rub the flour into a large, smooth-weave, cotton kitchen towel and use a floured rolling pin. Roll one of the disks of dough into a circle that's 1/8 inch thick and about 15 inches across.
  • Lay the rolling pin across the upper third of the dough circle; lift the pastry cloth to gently drape the dough over the pin and then roll the pin toward you, wrapping the remaining dough loosely around it. Hold the rolling pin over the near edge of the pie plate. Allowing for about a 1-inch overhang, unroll the dough away from you, easing it into the contours of the pan. If the dough isn't centered in the pan, gently adjust it and then lightly press it into the pan. Take care not to stretch the dough. If it tears, simply press it back together-the dough is quite forgiving.
  • Brush the bottom and sides of the dough with a light coating of the egg-white wash (you won't need all of it). Leaving a 1/4-inch overhang, cut around the edge of the dough with kitchen shears.
  • Combine the sugar mixture with the apples and toss to coat well. Mound the apples in the pie plate, rearranging the fruit as needed to make the pile compact. Dot the apples with the 1 Tbs. cold butter cubes.
  • Rub another 2 to 3 Tbs. flour into the surface of the pastry cloth and stocking. Roll the remaining dough into a circle that's 1/8 inch thick and about 15 inches across. Use the rolling pin to move the dough. As you unroll the dough, center it on top of the apples. Place your hands on either side of the top crust of the pie and ease the dough toward the center, giving the dough plenty of slack. Leaving a 3/4-inch overhang, trim the top layer of dough around the rim of the pie plate. Fold the top layer of dough under the bottom layer, tucking the two layers of dough together. Press a lightly floured fork around the edge of the dough to seal it, or flute the edge of the dough with lightly floured fingers.
  • Lightly brush the top with cold water and sprinkle the surface with the remaining 1 Tbs. sugar. Make steam vents in the dough by poking the tip of a paring knife through it in a few places; it's important to vent well so that the steam from the cooking apples won't build up and crack the top of the crust.
  • Cover the rim of the pie with aluminum foil bands. This will prevent the edge of the crust from overbrowning.
  • Place a rimmed baking sheet or an aluminum foil drip pan on the oven rack below the pie to catch any juices that overflow during baking. Set the pie on the rack above.
  • Bake until the top and bottom crusts are golden brown and the juices are bubbling, 60 to 75 minutes; to thicken, the juices must boil, so look for the bubbles through the steam vents or through cracks near the edges of the pie and listen for the sound of bubbling juices. During the last 5 minutes of baking, remove the foil bands from the edges of the pie. Cool the pie at least 3 hours and up to overnight before serving.

1 double crust refrigerated pie crust (or home made)
1 large egg
1 Tbsp water
2 Tbsp white decorators sugar crystals (optional) or use regular sugar
7 medium granny smith apples, peeled cored & sliced thinly
3 lb red or golden delicious, gala apples,jona gold, peeled cored & sliced thinly
1 c splenda brown sugar, firmly packed
1 1/4 c regular splenda granular
3 Tbsp lemon juice
1 Tbsp apple pie spice ( or use 2 tsp cinnamon & 1 tsp nutmeg)
1/2 tsp salt
5 Tbsp wondra flour or use corn starch
3 Tbsp butter

Steps:

  • 1. PREHEAT THE OVEN TO 425 DEGREES F. Wash core and peel the apples then slice thinly and place in a very large bowl. Alternate both varieties as you peel and slice, that way they will be evenly mixed together. Drizzle with the lemon juice, this prevents them from turning brown.
  • 2. Add both sugars to a medium size bowl, then add the spices and salt, add the Wondra flour, then stir till it is blended well. You may want to divide the sugar mixture in half to have enough for each layer of the pie.
  • 3. Now place the first pie crust into the pie tin, Now spread a layer of the sliced apples in bottom of pie tin. Sprinkle with sugar mixture. Repeat this step at least 2 or 3 additional times, alternating with the sugar mixture each time.
  • 4. Finish with any remaining sugar mixture. Now dot the top of the pie with half of the butter.
  • 5. Cover with top crust, sealing the top crust to the bottom crust. Then flute the edges. Make 6 or more slits in tip crust, this allows the steam to escape as the pie bakes.
  • 6. Create an egg wash by beating the egg with 1 tablespoon of water then brush over the top of pie crust. This allows the crust to cook to an even golden brown color. Sprinkle top crust with white sparkling sugar,Optional if desired, or can use regular sugar.
  • 7. Now line a shallow baking pan with aluminum foil and place pie in pan to catch any potential drips while pie is baking. Place in preheated 425 degree F. oven and bake for 15 minutes.
  • 8. THEN LOWER TEMPERATURE TO 350 DEGREES F. for an additional 50 to 55 minutes or until pie is hot bubbly and golden brown on top. Remove from oven and allow to cool COMPLETELY before cutting and serving. SOMETIMES YOU JUST CANNOT WAIT! SMILE

Handmade Pastry
3 tablespoons all-purpose flour, plus more for dusting
3 pounds apples such as Rome, Cortland, or Granny Smith, or a combination, peeled, cored, and cut into 3/4-inch wedges (about 8 cups)
1/2 cup sugar, plus more for sprinkling
1/2 to 3/4 teaspoon ground spices (combination of cinnamon, ginger, allspice, nutmeg, and clove)
1 tablespoon freshly squeezed lemon juice (or orange juice)
1 teaspoon grated lemon zest (or orange zest), optional
Pinch of salt
2 tablespoons unsalted butter, cut into pieces
2 tablespoons heavy cream

Steps:

  • Preheat oven to 400 degrees. On a lightly floured surface, roll one disc of dough into a 12-inch round that's 1/8-inch thick. Fit into a 9-inch pie plate. Set aside in the refrigerator.
  • In a large bowl, combine apples, sugar, flour, spices, lemon juice, zest, and salt; toss to combine. Pour into lined pie plate. Dot with butter. Roll second disc of dough into a 12-inch round that's 1/8 inch thick. Lay dough over fruit. Cut vents into top crust. Trim edges to 1 inch over pie pan, and seal, crimping edges with thumb and forefinger. Chill for 30 minutes.
  • Remove pie from refrigerator. Brush crust with heavy cream, and sprinkle with sugar. Place on a baking sheet; this will catch any juices that may overflow during baking. Bake until pastry is golden and juices in center of pie are bubbling, 45 to 60 minutes. Cool for 1 hour before serving.

I also often make my own crust, but you may use store-bought crust if you prefer. For the apples, I try to mix several types of baking apples for best flavor.

2 tablespoons sweet unsalted butter
8 cups tart baking apples, peeled,cored,thinly sliced (such as Granny Smith)

1 tablespoon apple pie spice (such as Watkins brand Apple Pie Bake blend)

  • Place bottom layer of pie pastry into a 9" pie plate and set aside.
  • Cut up butter into small pieces and set aside in a small dish at room temperature.
  • Combine apple slices with lemon juice, sugar, flour, apple pie seasoning, and salt, mixing gently to combine well, but without crushing the apple slices.
  • Pour filling into pie plate.
  • Sprinkle the butter pieces over the top evenly.
  • Top pie with top layer of the pie pastry, crimping and sealing edges decoratively.
  • Combine egg yolk and water and brush over entire surface of the pie with a pastry brush.
  • Cut a few slits in the top crust to allow venting of steam.
  • Set a foil lined cookie sheet on the bottom rack of your oven and set the pie on the center rack of your oven (the extra pan will help catch any drips).
  • Bake for 15 minutes at 425F.
  • Lower the oven temperature to 350 F and bake another 40-45 minutes, or until the crust is golden brown and the filling is starting to bubble.
  • Let cool before slicing as this will be boiling hot when fresh from the oven (you may serve pie warm or cold).
  • NOTE: I check the pie about halfway through the baking process and if the crust edges are getting too brown, I set a pie ring on top; If you don't have a pie ring, you can make one using foil.

2 cup rolled oats
5 large Granny Smith apples (pealed & chopped into thin bite-sized pieces)
1/4 cup white sugar
1/4 cup brown sugar

1 tablespoon cornstarch
2 tablespoons unsalted butter
1/2 cup water

Steps:

  • Preheat the oven to 325F degrees. Grease 2 muffin trays with non-stick cookie spray.
  • In a large bowl beat the butter and sugars together until fluffy (about 2 minutes).
  • Beat in the eggs and vanilla extract.
  • With the mixer on low, beat in the flour, cinnamon, baking powder and salt. Then mix in the oats.
  • Spoon about 3 tablespoons of batter into the bottom of each muffin cavity. Press the dough down into the bottom and up along the sides to form a little bowl shape. If the dough is too sticky to work with, place it in the fridge for 15-20 minutes.
  • Bake the cookie cups in the oven for 15-18 minutes or until they're just starting to get golden around the edges. If they puff up in the middle that's ok.
  • Remove the pan from the oven. Lightly grease a spoon or the bottom of a shot glass. Press it down into the middle of each cookie cup to form a little bowl shape again. Trace around the edges of each cup with a thin sharp knife.
  • Cool the cookie cups for about 20 minutes, then pry them out of the muffin tin using a thin knife.
  • In a large bowl toss the chopped apples with the sugars, cinnamon, nutmeg and cornstarch.
  • Melt the butter in large saucepan or skillet over medium heat.
  • Add in the apple mixture and gently stir. As the apples begin to bake, pour in the water. Cook for 5-10 minutes or until the apples are starting to soften and the mixture caramelizes.
  • Spoon the apple pie filling into each cookie cup.
  • Serve warm or at room temperature. Cookie cups can be warmed up int he microwave for about 20 seconds before enjoying.
