Cornbread is a great side dish that your family will love to eat on its own or use to wipe their plate clean of all the deliciousness you serve up. This recipe for cornbread works equally as well with yellow, white or blue cornmeal so you can choose the color of cornbread you want! With Gold Medal™ flour and 10 minutes of prep time, you'll be pulling a golden brown cornbread out of the oven before you know it.

1/4 cup butter (1/2 stick)
1 cup milk
1 large egg
1 1/4 cups yellow, white or blue cornmeal
1 cup Gold Medal™ all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt

Steps:

  • Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.
  • In a 1-quart saucepan, heat the butter over low heat until melted.
  • In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sugar, baking powder and salt all at once; stir just until the flour is moistened (batter will be lumpy). Pour batter into the pan; use a rubber spatula to scrape batter from bowl. Spread batter evenly in pan and smooth top of batter.
  • Bake 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.

I love tasting different cornbread recipes, and I have to admit, I think this is the best that I've ever tasted. Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. 1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1 large egg
1 1/4 cups white cornmeal or 1 1/4 cups blue cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
you might want to reduce the sugar to 1/3 cup and use 2 egg

Steps:

  • Heat oven to 400³F.
  • Grease bottom and side or round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg in large bowl with hand beater or wire whisk.
  • Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy).
  • Pour into pan.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm if desired.

4 tablespoons unsalted butter
1 cup all-purpose flour
1 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg
3/4 cup milk
1 cup frozen corn

Steps:

  • Preheat oven to 350 degrees. Put butter in 8-inch square baking pan or 9-inch ovenproof skillet; place in oven just long enough to melt butter. In a bowl, stir together flour, cornmeal, sugar, baking powder, and salt. Stir in egg and milk until just combined. Stir in frozen corn.
  • Spoon batter into prepared pan, and spread evenly. Bake until golden, 30 minutes in pan or 20 minutes in skillet.

  • Stir baking mix, lemon-lime soda, sour cream, and softened butter together in a bowl until dough is well-mixed; knead with your hands, adding more baking mix as necessary, until dough is smooth but still sticky.
  • Roll dough into 15 equal-size balls and place dough balls in prepared baking dish, turning to coat each completely in melted butter.
  • Bake in the preheated oven until biscuits are golden brown, 15 to 20 minutes. Let rest for 5 minutes before serving.

1 1/4 Cups Milk ((lukewarm))
6 Tablespoons Unsalted Butter ((softened))
2 Eggs ((lightly beaten))
1 1/2 Cups All-Purpose Flour
1 Cup Yellow Cornmeal

1 Teaspoon Baking Powder ((aluminum free))
1 Teaspoon Baking Soda

Steps:

  • Unplug the bread machine and remove the bread pan.
  • Soften the butter in a microwave.
  • Lightly beat the eggs.
  • Add milk, butter, eggs and then the rest of the ingredients into the bread pan.
  • Place the bread pan back into the bread machine and then plug in the bread machine.
  • Enter the bread machine settings (Sweet Quick Bread, Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make cornbreads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as cornbread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct cornbread setting used by your SPECIFIC bread machine model or the cornbread could be under or overcooked.
  • When the bread machine has finished baking the cornbread, unplug your bread machine. Remove the bread pan and place the bread pan on a wooden cutting board. Let the bread stay within the bread pan for 10 minutes before you remove it from the bread pan. Use oven mitts when removing the bread pan because it will be very hot!
  • After removing the cornbread from the bread pan, place the bread on a cooling rack. Use oven mitts when removing the bread. Let the cornbread cool down for 60+ minutes or it will be more likely to break/crumble when cut into slices.
  • Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.

Steps:

  • use two large bowls for mixing one for liquid ingredients and one for dry ingredients mix well after EACH ingredient is added. add in order of ingredient list. after both bowls are mixed add and stir the dry ingredients into the liquid ingredients until the batter is lump free.
  • Preheat oven to 350 degrees F.
  • pour batter into a greased or coated baking pan evenly. (size of pan depends on thickness desired).
  • Place battered pan into oven after preheat set to bake.
  • let the cornbread bake until golden on the top make sure center is cooked using a bakers toothpick.
  • Mix the lemon juice and lime juice with the melted butter.*optional
  • immediatly lightly coat the top of the cornbread with the melted lemon lime butter using desired utensil. ( i find a small baste brush works best) *optional.
  • let cool for a few minutes best if served warm.

2 cups buttermilk
4 tablespoons shortening or lard (melted)

Steps:

  • Heat the oven to 350 F.
  • Grease a 9-by-5-by-3-inch loaf pan with shortening or bacon drippings.
  • In a mixing bowl combine the cornmeal, flour, sugar, soda, and salt. Blend well with a whisk or spoon.
  • Stir the buttermilk and melted shortening into the dry ingredients. Blend well.
  • Spoon the batter into the prepared loaf pan.
  • Bake for 40 to 50 minutes, or until lightly browned.

1 pkg corn muffin mix (small 7.5 oz size)
1/2 c sour cream **
1/2 c 7-up (not diet)

Steps:

  • 1. Preheat oven to 450.
  • 2. In a large bowl, blend sour cream into biscuit and corn muffin mixes.
  • 3. Add 7-Up. This makes a very soft dough.
  • 4. If making Muffins: Line muffin tins with paper muffin cups, and spray muffin tins with Baker's Joy.
  • 5. Spoon mixture into 9 muffin cups. And bake for 12-15 minutes in a 450 degrees pre-heated oven.
  • 6. If making Rolls/Biscuits: Sprinkle additional biscuit mix on counter or table and ever so lightly pat the dough out. Slice dough into 9 squares; or cut with biscuit cutter. Melt 1/2 stick of butter in a 9-inch pan. Place cut biscuits in pan and bake 12 to 15 minutes until golden. Makes 9.
  • 7. **No sour cream? No problem: You can use 1 tablespoon white vinegar plus enough milk to measure 1 cup.
