Steps:
- On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2-quart casserole or gratin dish, or in individual sized dishes, as desired.
- Scatter the cheese over the beans. Halve and seed the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.
- Mix the yogurt with the cilantro and then spread over the lettuce. Add a layer of tomatoes and, finally, scatter the scallions on top. Chill until ready to serve. Garnish with a few cilantro sprigs and serve with baked chips.

- In a large bowl, mash the avocados with lemon juice, garlic salt and hot pepper sauce. Spoon into a deep-dish 10-in. pie plate or serving bowl. Layer with sour cream, olives, salsa, tomatoes and cheese. Cover and refrigerate for at least 1 hour. Serve with chips.

- Layer shredded lettuce on a 12 inch serving platter.
- In a medium bowl, stir together black beans, red chile peppers and green onions. Spoon the mixture on top of the lettuce. Gently spread sour cream over beans. Sprinkle with jalapeno peppers and lime zest.
- Drain excess liquid from salsa. Place salsa in a medium bowl. Stir in avocado. Spoon the mixture over sour cream layer. Sprinkle with Monterey Jack cheese. Top with black olives and cilantro. Serve immediately, or chill in the refrigerator.

Make ahead dip, with make your own chips. Colorful and a great flavor! Time does not include frying of chips, if you prefer go buy a big bag!

- In a small bowl stir sour cream, mayo and taco mix.
- In another bowl mash the avocado.
- Stir in the salsa, lemon juice and 1/4 tsp hot sauce.
- Stir 1/2 hot sauce into the beans if desired.
- In 13x9 dish, spread the beans.
- Top with the avocado mixture.
- Top with the sour cream mixture.
- Sprinkle cheese over this.
- Top with tomatoes.
- Sprinkle with olives.
- Cover and refrigerate overnite.
- To make tortilla chips.
- Stack tortillas and cut into 6 wedges.
- In deep skillet heat oil to 1/2 inch.
- Fry wedges a few at a time til crisp and lightly browned.
- About 1 minute for corn or 45 secs for flour.
- Drain well and serve with the dip.

Steps:
- Place salsa in a sieve to drain any liquid (this keeps your dip from getting runny).
- Combine refried beans and milk (or you can use the liquid from the salsa if you prefer) until smooth. Spread in the bottom of a 9x13 pan.
- Combine cream cheese, sour cream and taco seasoning with a mixer on medium. Spread over refried beans.
- Spoon guacamole over cream cheese and gently spread. Repeat with drained salsa.
- Top with cheese, olives/tomatoes and green onions.
- Chill 1 hour before serving. Serve with tortilla chips or crackers.

- Spread sour cream mixture over refried beans.

- For the Seven Layer Dip: In a serving dish, spread the refried beans evenly into a layer. In a small bowl, combine half the greek yogurt with the taco seasoning and mix until taco seasoning is evenly dispersed. Spread the taco seasoned layer over the refried beans layer. In another small bowl, combine the remaining greek yogurt with the avocados and using a potato masher or the back of a fork break down the avocados. Alternately, add the greek yogurt and avocados into a food processor and pulse until completely combined. Pour the layer onto the taco seasoning layer. Add the cheese blend, diced tomato, black olives, and scallions on as the 4th, 5th, 6th, and 7th layers in that order. Cool in the refrigerator for at least 30 minutes for best flavor or serve immediately. The dip will remain fresh for up to 5 days in an airtight container in the refrigerator.
- To make the tortilla chips: Preheat a saucepan with a few inches of oil. Let the oil heat up to 370 degrees F. Fry quartered tortilla a few pieces at a time for just a 2 -3 minutes. Let the tortillas brown slightly before removing with a slotted spoon. Remove them onto a plate lined with paper towel. Season lightly with sea salt. Serve immediately. Keep any leftover tortillas in an airtight container at room temperature.

- Preheat oven to 350°F. Line two large rimmed baking sheets with foil or parchment paper. Brush tortillas with oil and sprinkle with 1/2 teaspoon taco (or chile-lime) seasoning.
