Steps:
- Heat the oil in a medium saucepan over medium-high heat. Add the oregano, garlic and red pepper flakes and cook, stirring, until the garlic is golden brown, 1 to 2 minutes. Add the tomatoes, basil and 1/2 teaspoon salt and bring to a simmer. Reduce the heat to medium and simmer, with the saucepan loosely covered in foil to avoid splattering and stirring occasionally, until fairly thick, 5 to 10 minutes, depending on your tomatoes. Remove the basil.

- Follow the Pizza Dough Master Recipe to prepare the dough. (This takes about 15 minutes to make and 45 minutes to rest.)
- Place a pizza stone in the oven and preheat to 500°F. OR preheat your pizza oven (here’s the pizza oven we use).
- If using fresh mozzarella cheese, slice it into 1/4 inch thick pieces (see the photos of the pre-baked pizza above). If it’s incredibly watery fresh mozzarella (all brands vary), you may want to let it sit on a paper towel to remove moisture for about 15 minutes then dab the mozzarella with the paper towel to remove any additional moisture.

- Potato and Burrata Pizza. Your pickiest eater is no match for thin-sliced spuds, gooey mozzarella and creamy burrata.
- Cheater’s Sicilian-Style Pizza with Jalapeños and Honey. The focaccia base—crispy on the outside, chewy on the inside—is a mind-blowingly simple shortcut.
- Mediterranean Pita Pizzas. Does it get better than a mess-free, 15-minute meal? We think not. Swap sauce for hummus, then let the kids go ham with the toppings.
- Chopped Italian Salad Pizza. Put down the tongs and step away from the Caesar dressing. We’re mixing things up with a zingy mustard vinaigrette and ricotta.
- Cheater’s Prosciutto Hawaiian Pizza. It may sound like a stretch. But salty prosciutto, sweet grilled pineapple and nutty Gouda are more kid-friendly than you might think.
- Mini Cauliflower-Crust Breakfast Pizza with Spicy Garlic Honey. Pizza first thing in the morning might just be enough to get them out of bed (even on a Sunday).
- Cheater’s Vegetarian Pizza with Zucchini and Bell Peppers. This pie is prime for freestyling. Substitute any vegetables they’ll pick off their plates with ones they won’t, like broccoli or sweet potato.
- Roasted Butternut Squash-Prosciutto Pizza with Caramelized Onions. They’ll need their energy for trick-or-treating, and this fall pie has Halloween dinner written all over it.
