SIMPLE SHRIMP MARINADE (GRILLED SHRIMP MARINADE)

Simple Shrimp Marinade (Grilled Shrimp Marinade) image

This simple, yet elevated shrimp marinade is garlicky, lemony, and savory all thanks to a few common ingredients! If you're looking to marinade shrimp for grilling, then this is your recipe!

Provided by Linley Hanson

Categories     Marinade

Time 1h

Number Of Ingredients 11

1-1.5 lbs. jumbo shrimp (peeled and deveined)
2 tablespoons lemon juice (+ more for squeezing on top)
2 tablespoons Worcestershire sauce
4 cloves garlic (minced)
1 teaspoon dijon mustard
1/2 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 red pepper flakes
2 tablespoons olive oil
¼ cup chopped cilantro

Steps:

  • Begin by preparing the marinade. Add 2 tablespoons lemon juice, Worcestershire, garlic, dijon mustard, honey, salt, pepper, and red pepper flakes into a large bowl. Whisk the marinade together.
  • Drizzle 2 tablespoons of olive oil into the marinade while whisking until all the ingredients are combined.
  • Add the shrimp to the marinade and toss to coat the shrimp in the marinade.
  • Place the shrimp into the refrigerator and let the shrimp sit for 30 minutes to 1 hour, but no longer. If the shrimp sits in the marinade for longer than 1 hour the shrimp may begin to cook in the lemon juice.
  • Once your shrimp has marinated, cook in any way your heart desires. Here is an easy recipe for grilled shrimp you will love!

Marinated Grilled Shrimp image

A simple Marinated Grilled Shrimp recipe is the perfect easy and healthy dinner for warm weather months!

Provided by Blair Lonergan

Categories     Dinner

Time 35m

Number Of Ingredients 10

⅓ cup olive oil
¼ cup freshly squeezed lime juice
2 teaspoons minced garlic
2 tablespoons chopped fresh parsley
2 tablespoons Worcestershire sauce
1 tablespoon honey
¼ teaspoon salt
Pinch of pepper
2 lbs. raw, peeled, and deveined shrimp ((I use extra large or jumbo shrimp))
Optional garnish: fresh lime wedges and additional chopped parsley

Steps:

  • In a jar with a lid, combine all of the marinade ingredients. Shake until completely combined.
  • Place shrimp in a large zip-top bag or bowl. Pour the marinade in the bag with the shrimp. Seal the top of the bag and place shrimp in the refrigerator to marinate for at least 15-20 minutes (but not more than 2 or 3 hours).
  • Remove shrimp from the bag and discard the marinade. Thread shrimp onto skewers and grill over high heat for 4-6 minutes, flipping halfway through. If you prefer, you can also broil the shrimp on a sheet pan in the oven for about 7-8 minutes, flipping halfway through.
  • Garnish with fresh lime wedges and additional chopped parsley.

FIVE-INGREDIENT GRILLED SHRIMP-STUFFED MUSHROOMS

Five-Ingredient Grilled Shrimp-Stuffed Mushrooms image

Stuffed mushrooms can be much more than bite-size hors d'oeuvres at cocktail parties-they can also be a delicious entree. Portobello mushrooms stuffed with shrimp are a low-fat, protein-packed seafood dinner option containing potassium, iron and zinc. The meatiness of the mushroom paired with shrimp is a new take on surf-and-turf, with the added benefit of 15 vitamins, minerals and beneficial plant compounds. Round out this meal with slices of French bread brushed with olive oil and grilled. Or serve the patties in 100 percent whole-grain buns along with sliced avocado.

Provided by Michelle Dudash

Categories     appetizer

Time 30m

Yield 4 servings

Number Of Ingredients 9

4 portobello mushroom
2 scallions, white and green parts
1 1/4 pounds frozen peeled and deveined shrimp, thawed, tails removed, blotted dry
Zest of 1 lemon, finely grated
1 tablespoon lemon juice
Freshly ground black pepper
Salt
2 teaspoons rice bran oil, grapeseed oil or expeller-pressed canola oil
Lemon wedges for serving

Steps:

  • Preheat grill to medium, about 350 to 400 degrees F.
  • Rinse the tops of the mushrooms briefly under running water, rubbing off any debris, and pat dry. Gently remove the gills with a spoon (the gills are edible, but their dark shade can muck up the color of the filling). Pluck off the stems, trim the bottom of the stems, and reserve. Trim the rims of the mushrooms with kitchen shears, for a straighter edge. Reserve scraps. Place mushroom caps on a plate.
  • Slice finely slice enough of the green scallion tops to equal 2 tablespoons and reserve for garnish. Place the remaining white and green scallion parts in a large food processor and pulse to chop. Add the mushroom stems and scraps, shrimp, lemon zest and juice, and freshly ground black pepper to taste. Pulse until the shrimp is nearly ground, with some small pieces remaining.
  • Brush the mushroom tops with oil, turn them over, then sprinkle lightly with salt and pepper. Divide the shrimp mixture equally among the mushrooms and smooth with the back of a spoon. Sprinkle with salt.
  • Lightly oil the area of the grill that you will be using. Grill the stuffed mushrooms until the shrimp centers turn white and firm when pressed gently and the mushrooms are tender, about 10 to 12 minutes. Allow the mushrooms to rest a few minutes before serving. Sprinkle with sliced scallions and serve with lemon wedges.

GINGER-MINT GRILLED SHRIMP

Ginger-Mint Grilled Shrimp image

For snappy, well-browned shrimp from the grill, follow just a few simple steps: Make sure they're very dry. (You can even let them air-dry in the fridge overnight.) Get your grill very hot, then cook the shrimp for longer on the first side to minimize overcooking. While you can use a heated grill basket, you don't need to; leaving the tails on means the shrimp won't slip through the grates. (By the way, eat those tails. They're a delicious, crispy bite.) Well-grilled shrimp need just a little brightness to balance their char: A squeeze of lemon or lime, or this herby-spicy mixture of ginger, mint and lime zest made in the style of gremolata, will do the trick.

Categories     dinner, seafood

Time 15m

Yield 4 servings

Number Of Ingredients 6

1 1/2 pounds large shrimp, peeled and deveined, tails on
Kosher salt
Olive oil
1 (1/2-inch) piece ginger, peeled
1 cup firmly packed mint leaves
1 small lime

Steps:

  • Prepare a charcoal or gas grill for two-zone cooking over high heat: For a charcoal grill, pour the coals onto one half of the grill. For a gas grill, heat all the burners, then turn off one of the end burners. (See Tips.)
  • Meanwhile, pat the shrimp dry, then transfer to a medium bowl and season with 1 1/2 teaspoons salt and lightly coat with olive oil. Set aside. Coarsely chop the ginger, then add the mint and a pinch of salt. Finely chop the ginger and mint together until homogenous. Transfer to a small bowl, finely grate 1/2 teaspoon lime zest into the bowl, and mix to combine. Cut the lime into wedges for serving.
  • When you're ready to grill, take the shrimp, mint-ginger mixture, lime wedges, a tightly folded paper towel soaked in olive oil, a serving platter and tongs to the grill. Clean the grates with a grill brush, then oil the grates with the paper towel. Add the shrimp perpendicular to the grates over the flame and cook until well browned, about 2 to 4 minutes. Flip and cook until opaque throughout, 1 to 2 minutes. (See Tips.)
  • Transfer the shrimp to the platter and toss with the mint-ginger mixture and a squeeze of lime.

  • Peel the shell from the shrimp but leave the tail portion on. The easiest way is to hold the shrimp with the split facing you and with your two thumbs, pull down to peel the shell open, then turn and tear around the tail piece so that it stays intact and discard the shell. The tail acts as a handle for guests to hold while eating.
  • In a small bowl, mix the olive oil, vinegar, tomato paste, mustard, sesame oil, celery salt, pepper, brown sugar, paprika, oregano and cayenne pepper with a whisk.
  • Pour into the bag with the shrimp, massage it all over each piece, and marinate refrigerated for at least two hours and up to four hours.
