HOW TO MAKE HOMEMADE FRUIT AND BERRY CORDIALS - BERRY
Cordials are nostalgic and remind us of simpler times. A fast paced life is no reason to forego the finer things - like how to make homemade fruit and berry cordials! In this post, you will find three recipes which will show you how to make cordials with fruit, berries, or citrus!

Steps:
- Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
- Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
- Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
- After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
- Transfer to a sterile bottle or jar. Keep refrigerated.
- To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

50/50 FRUIT CORDIAL
My mum used to make this all the time when we were kids. I used to make it for my DH who absolutely loved it, but now his diet won't allow him to have it. It can be made with all Lemons or all Oranges, whatever takes your fancy, or whatever you may have an abundance of. Mum's recipe was written in pints and not litres so I have left it this way, but the amount you get depends on the size of the bottles, and when serving you may like to add more or use less cordial pending on your taste.

Steps:
- Put sugar and acids in a large mixing bowl. Grate the rind of the fruit and add the sugar and acids in bowl.
- Squeeze juice from the fruit and add to mixture.
- Pour the boiling water over and stir until sugar is completely dissolved.
- Cool the mixture strain and then bottle.
- To serve dilute with ice cold water, mixing one part of cordial to four parts of water.

- Blackberry cordial recipe #1. Squeeze blackberries enough to make a quart of juice. Add to it a pound of loaf sugar and let it dissolve, beating it slowly.
- Blackberry cordial #2. Half a gallon blackberry juice, two pounds white sugar, several sticks cinnamon, teaspoonful cloves, one of allspice tied in a very thin piece of muslin; put all on to boil for fifteen or twenty minutes.
- Blackberry liqueur. Take one quart of blackberry juice and one pound of sugar, add a tablespoonful each of cloves, allspice, cinnamon, and nutmeg, and boil together for twenty minutes.
- Blackcurrant cordial. To every four quarts of black currants, picked from the stem and lightly bruised, add one gallon of the best whiskey; let it remain four months, shaking the jar occasionally; then drain off the liquor and strain; add three pounds of loaf sugar and a quarter of a pound of best cloves, slightly bruised; bottle well, and seal.
- Cherry cordial. To six pounds of cherries, add three pounds of sugar and one gallon of whiskey. Shake the jar often for the first three weeks, then bottle.
- Claret peach cordial. Combine one pound of peaches pared and cut up, one pound sugar powdered and sprinkled on them. Boil them for two hours until they are a rich syrup, then strain and add brandy to your taste and bottle it.
- Cranberry cordial. Boil a large tablespoonful of cornmeal or oatmeal with a small piece of lemon peel in two quarts of water. Mash a cupful of cranberries and mix with a cupful of water.
- Dewberry cordial. Two quarts dewberry juice, one-pound loaf sugar, four grated nutmegs, quarter ounce ground cloves, quarter ounce ground allspice, quarter ounce ground cinnamon.
- Fruit cordial. Half pint black cherries, quarter pound ginger sliced, half ounce cinnamon, the same of cloves. Put these into a jug with proof spirit. Cork it, and let it stand till autumn.
- Ginger and currant cordial. To one pound of picked currants, red or black, add one quart of whiskey, one ounce of bruised ginger; put in a stone jar and let it stand for twenty-four or thirty-six hours; strain through a flannel bag, and add half a pound of sugar; when it is all melted, bottle.
