Another dip mix from "Gifts in a Bag" recipe book. Don't forget the gift tag. You can make this one as hot as you like by adding crushed red pepper. Gift tag should read: Combine the Mexican Fiesta Dip Mix with the mayonnaise and sour cream. Stir until well blended. Cover and refrigerate. Dip is better if made 8 hours before serving. Serve with chips, crackers, or fresh vegetables. Cook time is chill time.

1 tablespoon chili powder
2 teaspoons dried parsley
1 teaspoon sugar
1/2 teaspoon garlic powder, plus
1/8 teaspoon garlic powder
1/4 teaspoon onion powder, plus
1/8 teaspoon onion powder
1/4 teaspoon dried cilantro, plus
1/8 teaspoon dried cilantro
1/8 teaspoon cayenne pepper
1/8 teaspoon pepper
1/8 teaspoon salt
1 cup mayonnaise
1 cup sour cream

Steps:

  • Combine the dry ingredients and stir until well blended.
  • Place in a 3x4-inch ziplock bag and seal.
  • Attach a gift tag with the directions on how to prepare the dip.
  • To prepare dip:.
  • Combine the Mexican Fiesta Dip Mix with mayonnaise and sour cream.
  • Stir until well blended.
  • Cover and refrigerate.
  • Dip is better if made 8 hours before serving.

2 cups sour cream
1 can (16 ounces) refried beans
1 can (4 ounces) chopped green chilies or jalapenos
1 envelope fiesta ranch dip mix
2 cups shredded Mexican cheese blend, divided
Sliced ripe olives, chopped, tomatoes, sliced green onions and shredded lettuce, optional
Tortilla chips

Steps:

  • In a shallow 1-1/2-qt. microwave-safe dish, combine the sour cream, beans, chilies and dip mix. Stir in 1 cup cheese. Cover and microwave on high for 2 minutes; stir. , Cover and microwave 1-1/2 minutes longer or until heated through; stir until blended. Sprinkle with remaining cheese. Top with the olives, tomatoes, onions and lettuce if desired. Serve with tortilla chips.

Packed with plenty of protein and a bit of spicy punch, you'll see this dip disappear before you can say "Touchdown!"

1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) great northern beans or navy beans, rinsed and drained
1 can (15 oz) corn, drained
3/4 cup red salsa, any kind
2 cup shredded cheese
1 jar (16 oz) salsa verde
1 package (8 oz) reduced fat cream cheese, softened
1/2 cup light sour cream
Whole wheat tortillas & Sea Salt (optional--these are for the "football crisps" or you can just use chips)

Steps:

  • Preheat oven to 400°F. Mix black beans, great northern beans, corn, red salsa, and shredded cheese in a large bowl. Spread in a 9 x 13 pan sprayed with cooking spray. Bake at 400 degrees for 15 minutes until warm and bubbly. Remove from oven and let set for 5 minutes.
  • While dip is baking, place a stack of tortillas on a cutting board and cut out football shapes. Spread on a greased cookie sheet and spray tops with cooking spray. Sprinkle sea salt on top. Bake in a 400°F. degree oven for 5 minutes until crispy.
  • After dip has cooled for 5 minutes and set a little bit, gently spread salsa over the top. In a gallon freezer baggie, mix cream cheese and sour cream. Snip an end off the bag and pipe on yard lines and hash marks. If the mixture is too thick to pipe out, add a little more sour cream. Hike!
