1 cup all-purpose flour, spooned and leveled
2 tablespoons sugar
1 teaspoon baking powder

1 cup milk
2 large eggs
4 tablespoons (1/2 stick) unsalted butter, melted
Maple syrup and butter, as desired, for serving

Steps:

  • Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk flour, sugar, baking powder, and salt; set aside.
  • In a small bowl, whisk milk and eggs; pour over flour mixture, and whisk gently to combine (don't overmix). Gently whisk in butter.
  • Following manufacturer's instructions, cook waffles until deep brown and crisp. (For a standard waffle iron, pour a generous 1/2 cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.

These airy, delicate and crisp-edged waffles are so fabulous, yet so simple to throw together, they're destined to become part of your weekend breakfast routine. Freeze leftovers, if you have any, in Ziplock bags and serve them during the week. You can pop them in the toaster to reheat (use a light setting) and they come out nearly as well as freshly made, maybe even slightly crunchier. For a lighter, fluffier waffle, separate the eggs and proceed with step 2 using the egg yolks. Beat the whites until stiff, then fold into the batter. For whole-grain waffles, use 1 1/3 cup all-purpose flour and 2/3 cup whole-wheat flour. You can also substitute brown sugar for the granulated.

These light and crispy waffles come together quickly. Cornstarch is the secret to crispy waffles. It guarantees that your waffles will be perfectly crisp and tender. This recipe makes four standard waffles (1/2-inch to 3/4-inch thick). If you want to make thicker Belgian waffles or use a deep waffle iron, you will get closer to three waffles using our recipe below. Separating the egg is optional but is recommended. We do not do this in the video; however, after years of feedback from readers, we have determined that whipping the egg white thickens the batter slightly and improves the results for deeper waffle irons.

1 cup (130 grams) all-purpose flour
1/4 cup (30 grams) cornstarch
1/2 teaspoon fine sea salt

1/3 cup (80 ml) vegetable oil

Steps:

  • Whisk together the flour, cornstarch, salt, baking powder, baking soda, and sugar in a large bowl.
  • In a separate bowl, whisk the buttermilk, oil, and vanilla extract.
  • For the lightest waffles, separate the egg. Whisk the egg yolk into the milk mixture. If you do not plan on separating the egg, whisk the whole egg into the milk mixture.
  • If you separate the egg, add the egg white to another bowl, use a handheld mixer to beat until stiff, and then set aside.
  • Whisk the milk mixture into the dry ingredients until only small lumps are left. Switch to a rubber spatula and gently fold in the whipped egg whites.
  • Set the batter aside for five to ten minutes while preparing the waffle iron.
  • Heat the waffle iron to the highest heat setting.
  • Cook waffles until golden and crisp, adding enough batter to the waffle iron to fill the entire lower grid. If the waffles look too dark, turn the heat down slightly.
  • Serve the waffles immediately or keep them warm and crispy on a rack in a 200°F oven until ready to serve. Stacking them outside the oven will cause them to steam and become floppy.

2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar (optional)
1/4 teaspoon salt
1 3/4 cups milk
1/4 cup vegetable oil
2 eggs, separated

Steps:

  • In a large mixing bowl, combine the flour, baking powder, sugar and salt. Make a well in the center of the mixture.
  • In a small bowl (or I use a large liquid measuring cup) combine the milk, oil and egg yolks. Beat to break up the yolks and combine.
  • Pour the liquid ingredients into the center of the dry ingredients. Stir just until moistened - the batter will still be lumpy.
  • In another bowl, beat the egg whites until they have stiff peaks.
  • Add about 1/3 of the stiff egg whites to the waffle batter and stir in in to combine and lighten the batter. Add the remaining egg whites and gently fold until no white streaks appear.
  • Heat a waffle maker to high.
  • Cook the waffles according to the directions on your waffle maker.

1 1/4 cup Soy Milk ((300ml) or other non-dairy milk)
2 Tbsp Coconut Oil (Melted)
2 tsp Vanilla Extract

Steps:

  • Set your waffle iron to preheat while you mix the batter.
  • Sift all purpose flour into a mixing bowl and add sugar, baking powder and salt. Mix together.
  • Add soy milk, melted coconut oil and vanilla extract and mix into a batter. Don't overmix.
  • When your waffle maker is heated, grease the waffle iron or spray it with non-stick spray (see notes). Pour even amounts of batter into the waffle machine and close the machine.
  • Cook for 3-5 minutes or until golden.

4 eggs
¾ cup water
3 T salted butter, melted
¾ cup Briana's Baking Mix (or ⅓ cup coconut flour and ¼ cup vanilla whey protein powder together in place of the baking mix)
6 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.)
2½ tsp. baking powder

Steps:

  • Beat all ingredients together until smooth. Bake in a standard-sized waffle iron sprayed with a nonstick cooking spray (my waffle iron used between ⅓ and a ½ cup of batter per waffle).
  • These waffles can be frozen and reheated in a toaster (use the "frozen" button). This actually makes them crispier.
  • Top with your favorite toppings of choice! I enjoy mine with natural peanut butter or butter and homemade stevia-sweetened, glucomannan-thickened syrup.
  • This batter makes great pancakes! Fry on a nonstick pan or griddle sprayed with nonstick cooking spray. Fry until each side is golden brown. You'll get about eight pancakes (4 servings).
  • For an easy single-serve waffle, mix together 1 egg, ½ tsp. baking powder, 1 pack (3/4 tsp.) Truvia, 3 T of Briana's Baking Mix, and 4 T water. Waffle it up!
