Found this recipe in David Rocco's Dolce Vita and my daughter loves it! I've adjusted some of the ingredients to the way we like it. Also, I doubled up so I could freeze some.

Number Of Ingredients 8

1/2 cup good olive oil
2 garlic cloves, minced
1/2 onion, chopped
1/4 teaspoon red pepper flakes (optional)
2 (24 ounce) cans tomato sauce (or plum tomatoes)
1/2 teaspoon salt
1/2 tablespoon basil
1/2 tablespoon parsley

Steps:

  • In a stockpot, heat up olive oil and lightly brown garlic and onion. (and red pepper flakes, if using them).
  • Add tomato sauce, salt, basil and parsley.
  • If using plum tomatoes, in stockpot, puree whole tomatoes with hand blender.
  • Simmer sauce for 5 minutes.
  • Cook noodles according to pkg.
  • Spoon sauce over noodles and serve with a fresh salad and bread.

This recipe is courtesy of Heidi Swanson at 101cookbooks.com, and it makes some of the best pizza sauce I've ever had! It also works well with a variety of pastas, as breadstick dip, or just about anything else you could need tomato sauce for.

Number Of Ingredients 6

1/4 cup extra virgin olive oil
1 1/2 teaspoons crushed red pepper flakes
1/2 teaspoon sea salt
3 medium garlic cloves, finely chopped
1 (28 ounce) can crushed tomatoes
1 pinch lemon zest (of 1 lemon)

Steps:

  • Combine the olive oil, red pepper flakes, sea salt, and garlic in a cold saucepan.
  • Stir while you heat the mixture over medium-high heat, saute just 45 seconds or so until everything is fragrant - you don't want the garlic to brown.
  • Stir in the tomatoes and heat to a gentle simmer, this takes just a couple minutes.
  • Remove from heat and carefully take a taste (you don't want to burn your tongue) -- If the sauce needs more salt add it now.
  • Stir in the lemon zest, and that's it! Simple, quick, and delicious.

12 -14 large roma tomatoes, cored and chopped
1/2 cup red wine or 1/2 cup tomato juice
2 garlic cloves, minced
6 -8 fresh basil leaves, chopped
1 teaspoon fennel or 1 teaspoon anise seed
1 -2 tablespoon fresh oregano
salt
pepper
olive oil

Steps:

  • Spray saute pan with non stick cooking spray. Add garlic and cook. Add tomato, red wine or tomato juice, basil, fennel or anise and oregano. Saute for 4-5 minutes.
  • Remove to blender and puree to desired consistency. Return to stove. Adjust thickness and seasonings to taste.

This quick and easy supper is so relaxing to make and there won't be a scrap left over

5large ripe tomatoes
140g spaghetti
3 tbsp olive oil
100g diced bacon or lardons
2 garlic cloves , chopped
50-85g/2-3oz soft fresh rindless goat's cheese
handful basil and/or snipped chives

Steps:

  • Pour boiling water over the tomatoes to cover, leave for 1 min, then drain and slip off the skins. Quarter and seed the tomatoes, then chop the flesh.
  • Bring a large pan of salted water to the boil, add the spaghetti and give it a stir. Boil for the timing given on the pack.
  • Meanwhile, heat 1 tbsp of the oil in a frying pan, add the bacon and fry until starting to crisp up. Add the garlic, tomatoes, the rest of the oil and pepper and salt, if using. Heat through for 1-2 mins until just simmering.
  • Drain the spaghetti and add to the pan, tossing in the sauce until lightly coated. Divide between two warm soup plates, crumble over the cheese and scatter over the herbs. Serve with crusty bread and a glass of red wine.
