SHRIMP AND CHORIZO TAPAS

Steps:
- In a large skillet or cazuela, heat 1 tablespoon of the olive oil and saute the sliced chorizo until it begins to brown around the edges, 7 to 8 minutes. Add the onion and cook, stirring occasionally, until they are caramelized around the edges and softened somewhat, 4 to 6 minutes. Add the garlic and cook, stirring, for 1 minute. Add 1/4 cup of the sherry and cook for 1 minute. Add the shrimp, paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper, and cook, stirring occasionally, until pink and cooked through, about 4 to 5 minutes. Add the remaining 1/4 cup of sherry and 1/4 cup olive oil, lemon juice, parsley and remainder of the salt and pepper; stir to combine and remove from the heat. Serve immediately, on small plates with any accumulated cooking juices spooned over the top. Pass the bread at the table.

- Heat the olive oil in a frying pan and stir fry the prepared shrimp or prawns for 2-3 minutes until pink.
- Add the sherry to the pan; stir and continue to cook for 30 seconds until the shrimp are very fragrant.

- Melt butter in a medium skillet over medium-high heat; add flour, salt, paprika and garlic. Sauté, stirring constantly, for 2 minutes.
- Stir in shrimp and triple sec; sauté for about 5 minutes, stirring frequently, until shrimp turns pink and sauce thickens slightly.
- Sprinkle with parsley and chili flakes. Shrimp may be threaded on small wooden skewers with small lime wedges.

- Cook bacon in lg. skillet, over med. heat until brown and crispy. Remove from skillet with slotted spoon.
- Drain on paper towels. Set aside.
- Add oil to bacon drippings in skillet.
- Add mushrooms. Cook and stir 2 minutes.
- Add shrimp and garlic. Cook and stir 3 minutes, or until shrimp turn pink and opaque.
- Stir in Sherry, lemon juice, and red pepper flakes.
- Remove shrimp to serving bowl with slotted spoon.
- Cook sauce 1 min., or until reduced and thickened.
- Pour over shrimp.
- Sprinkle with reserved bacon.

- Heat oil in large non-stick skillet.
- Smash garlic cloves to release scent but do not chop. Add garlic, red pepper, and shrimp to oil.
- Cook, stirring to mix, until shrimp begins to turn pink (about 2-3 minutes).
- Add zest, lemon juice, and parsley. Toss to mix. Remove garlic from pan and discard.
- Remove from heat and serve!
