EATING SUBURBIA'S 5 MINUTES 3 BANANAS BANANA BREAD
While looking for something entirely different, I found this recipe, entitled "5 Minutes/3 Bananas/1 Loaf of Goodness" Banana Bread. As I'd been looking for a good, simple banana bread recipe for some time, I decided to add this one to my recipes here, because it definately fits the bill. Personally, I add nuts, as they're a must in banana bread in this house, but add whatever you like best in yours.

Steps:
- Preheat oven to 350 degrees. Grease and flour 9x5" loaf pan.
- In large bowl, mix first 5 ingredients, then cut in the margerine or butter with a pastry blender until mixture resembles course crumbs (a potato masher works well for this, too)/ With fork stir in mashed bananas and beaten eggs, just until blended. Spread batter into a pan.
- Bake 55 minutes to 1 hour until toothpick comes out clea. Cool for 10 minutes on a rack, then remove from pan.
BANANA BREAD MUG CAKE
The most fun way to use up that last single banana just waiting to be consumed. 1 mug, 5 minutes, and a delicious single-serve mug cake!

Steps:
- Spray a microwave safe mug with cooking spray.
- In a bowl, or right in the mug, whisk flour, sugar, salt, baking powder, and soda. Add egg and combine until just incorporated with dry ingredients. Mix in vanilla, oil, milk and mashed banana.
- Pop into the microwave for up to 3 minutes, with no fear to stop and check after 90 seconds for doneness.
- Like all magical things that come out of the microwave, the inside of this will be hotter than the surface of the sun when you first remove it from the microwave. Give it a few minutes.
- Seriously, that easy.

This is so good! It's really dense. A nice little treat. If your counting Weight Watchers 1 Point. I found this on Thinner Times. This came from Obesity Help. I have not tried this, just posting for safe keeping.

Steps:
- Mix everything but the nuts in blender/bullet-- stir in nuts with a spoon. Pour into Pyrex measuring cup, small bowl or small loaf pan (glass loaf pan -- do NOT put metal in the microwave, precious) sprayed with a little non-stick spray. Microwave on high for 5 minutes. When cool, cut into thin slices with sharp knife and store in Tupperware.
- And seriously? 5 minutes in the microwave. Don't tell me you don't have time.

- Preheat the oven to 350 degrees F (180 C). Lightly spray a loaf pan, approximately 9x5 inches, with cooking spray; set aside.
- In a medium bowl, combine the flour, baking soda, and salt; whisk together and set aside. Set a fine-mesh strainer over a separate medium bowl.
- If using bananas that have been frozen and defrosted, scoop banana innards into the strainer and let drain, stirring occasionally, for 10-15 minutes, until you have about 1/2 cup liquid in the bowl.
- If using fresh bananas, scoop innards into a microwave-safe bowl. Cover the bowl with plastic wrap and cut 3-4 slits in the wrap to act as steam vents. Microwave on high for about 5 minutes, until the bananas are soft and have released their liquid. Transfer to the fine-mesh strainer and let drain, stirring occasionally, for 10-15 minutes, until you have about 1/2 cup liquid in the bowl.
