This is a simple mac and cheese recipe that never fails to please. Not too dry, just right. You can tweak it with cayenne or anything else to make it "your own". The only thing that's a must is Velveeta cheese.

3 tablespoons butter
1/4 cup flour
1 cup milk
8 -10 ounces cubed Velveeta cheese (or more)
8 ounces elbow macaroni or 8 ounces short pasta, cooked

Steps:

  • Melt the butter in a large sauce pan and gradually add the flour. Stir well on low heat. Gradually add the milk and blend well. Cook and stir until it simmers and thickens. Add the Velveeta cheese. Stir till melted.
  • Add the cooked pasta and mix.
  • Pour into casserole and bake at 350 till golden.

10 ounces medium elbow macaroni
2 tablespoons unsalted butter, plus more for brushing pan
2 tablespoons unbleached white flour
2 1/2 cups low-fat milk
2 1/4 cups grated extra-sharp cheddar cheese, divided

Steps:

  • Preheat oven to 400°F.
  • Cook macaroni according to package directions until al dente; drain.
  • Melt 2 tbsp butter in sauce pan over medium heat. Stir in flour and cook 1 minute. Add milk; cook 6 minutes or until thickened, stirring constantly.
  • Remove from heat; stir in 1 1/2 cups cheeses. Season with salt and pepper. Pour over noodles and combine.
  • Transfer to a 9x13-inch baking dish. Sprinkle with remaining 3/4 cup cheese.
  • Bake 45 minutes or until top is crisp and beginning to brown. Let stand 10 minutes before serving.

Especially this creamy kid-friendly mac and cheese, which cooks up in no time. And after it's been gobbled up, you'll only have one pot to clean!

1 pound elbow macaroni
Kosher salt
One 12-ounce can evaporated milk
3 tablespoons unsalted butter
3 cups shredded mild or medium Cheddar

Steps:

  • Combine the macaroni, 4 cups water and 1 tablespoon salt in a 6- or 8-quart Instant Pot® multi-cooker (see Cook's Note). Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 4 minutes.
  • After the pressure cook cycle is complete follow the manufacturer's guide for quick release and wait until the cycle is complete. Being careful of any remaining steam, unlock and remove the lid and switch to the low saute setting.
  • Stir in the evaporated milk, butter and 1/4 cup water. Then add the Cheddar, a little at time, while constantly stirring, until the cheese is completely melted. Serve hot.

1 (5 ounce) can evaporated milk
8 ounces cheddar cheese (grated)
1 -2 tablespoon cornstarch
4 tablespoons butter or 4 tablespoons margarine

Steps:

  • Cook macaroni then drain.
  • Heat milk
  • Add corn starch
  • Heat until thickened.
  • Melt cheese in milk.
  • Stir in butter.
  • Pour sauce over macaroni. Put in casserole dish.
  • Put more grated cheese on top.
  • Bake 30 minutes at 350°F.
  • Serves 6.

Decadent! Everyone raves about this dish. So cheesey and full of flavor. Good southern comfort food. Wonderful with pork chops or fried chicken. Originally I got the base of this recipe from Nell Carter on some TV show. I had to spice it up a bit.

2 cups elbow macaroni
1/4 cup butter, melted
1 cup cream cheese, softened
1 cup sharp cheddar cheese, shredded
1 cup gouda cheese, shredded
1 cup swiss cheese, shredded
1 cup muenster cheese, shredded
2 cups whole milk
3 eggs
1 1/2 teaspoons salt
1 1/2 teaspoons fresh ground pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Cook 2 cups macaroni noodles in salted boiling water for only about 6 minutes > do not over cook as they will continue to cook in the oven.
  • While noodles are cooking: mix eggs, milk, cream cheese, melted butter and spices together in large mixing bowl.
  • Drain noodles.
  • Add noodles and all the shredded cheese to egg mixture.
  • Pour into a greased 9x13 baking pan.
  • Bake in a 325 degree oven for 45 minutes.
