CHIPOTLE AIOLI
Tasty condiment for sandwiches, but I think it makes a fantastic dip as well. Adapted from Chile Pepper magazine.

Steps:
- Put all ingredients in a blender and blend until smooth.
- Transfer to a bowl or squeeze bottle, and refrigerate until needed.

5-INGREDIENT CHIPOTLE AIOLI
Steps:
- Add raw cashews to a mixing bowl (or a high-speed blender) and cover with boiling hot water. Let rest for 1 hour (uncovered). Then drain thoroughly.
- Add soaked, drained cashews to a high-speed blender with the water (or almond milk), lemon juice, sea salt, maple syrup, pepper + adobo sauce.
- Blend on high until creamy and smooth, adding more water or almond milk as needed to encourage blending. Scrape down sides as needed.
- Taste and adjust seasonings as needed, adding more salt to taste, lemon for acidity, maple syrup for sweetness, or adobo sauce for heat. I added more salt and another 2 chipotle peppers (amount as original recipe is written // adjust if altering batch size). Adding a little oil is optional and adds extra creaminess. Smoked paprika is also optional and adds a sweet smokiness to the sauce.
- Serve immediately or refrigerate. Leftovers will keep covered in the refrigerator up to 5 days. This sauce is perfect for veggie burgers, sweet potatoes fries, french fries, onion rings, and more!

- Place yolks, lemon juice, garlic, sugar, salt, and chipotle in food processor. Pulse to combine. Alternatively, blend with immersion blender.
- With processor or blender running, slowly pour in oil. Process until aioli forms and thickens, about a minute. Turn processor off, scrap sides, process again until combined.
- Serve immediately or store in air tight container in refrigerator until ready to use. Makes approximately one cup.

CHIPOTLE AIOLI
This zesty chipotle aioli starts with pre-made mayonnaise which makes it fast and easy to make. You can adjust the heat level by using more chipotle peppers. One to two peppers will give the aioli a mild to medium heat level and using three peppers makes it very hot. Use this as a dip for french fries and veggies or as a sandwich spread.

- In a small food processor (or blender), puree chipotle peppers and adobo sauce for 30 seconds. It should be thick and paste like, it will not be smooth. Transfer to a seperate bowl.
- Without cleaning the food processor, add remaining ingredients including lime juice, mayonnaise, cilantro (optional) fine sea salt and ground black pepper.
- Add 1 tablespoon of chipotle peppers at a time until the desired taste is achieved. I use the whole can, however I like things spicy. You are much better off adding in small amounts and taste testing along the way.
- Refrigerate for a minimum of 30 minutes or until served. You can refrigerate for up to a week in an airtight container.
