SUNNY'S 5-INGREDIENT CHILI

Steps:
- In a large pot, add the oil, salt, a few grinds of black pepper and the onions. Cook over medium-high heat until tender, about 6 minutes. Add the chili powder and beef and break up into bits, cooking until done, about 10 minutes. Add the tomatoes and beans. Stir and cover to cook for 20 minutes. Serve with a bar of toppings and freshly fried corn tortilla strips to use for utensils.
- Bring at least 2 inches of oil to 350 degrees F in a Dutch oven or other large heavy pot. Add the tortilla strips one by one and fry in small batches until golden and crisp, about 2 minutes. Remove to a paper-towel-lined plate and immediately sprinkle with salt.
5 INGREDIENT CHILI
Enchilada sauce has all the ingredients for chili in it, except two, meat and cumin. Good restaurants use Tri-Tip for a great chili.

Steps:
- Rub meat with spices ( I use Santa Maria tri tip seasoning ).
- Cook Tri-Tip on BBQ med heat for 30 minute fat side up.
- remove from direct heat and bake in BBQ for another 30 minute.
- Cool then cover and refrigerate overnight. This is important because the meat will retain moisture.
- In A.M. cut Tri-Tip across grain into 1 inch chunks, remove and discard fat.
- Place in crock pot.
- Add enchilada sauce, cumin, and water.
- Cook on low (I use the warm setting on my crock pot when I am at work then when I get home finish on low if necessary).
- Remember this is beef and overcooking is easy to do.
- Add beans if desired.
- Please let sit chili overnight before eating.

Steps:
- Bring chicken broth to a boil in a large pot. Add chicken, cover, and lower heat; simmer until chicken is no longer pink in the center and the juices run clear, 8 to 12 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and shred or cut into small pieces.
- Return chicken to the pot. Stir in onion and seasoning mix. Add beans and cook until heated through, about 15 minutes.

- In a large stockpot or Dutch oven, cook the ground beef and diced onion over medium high heat until the beef is browned and the onion is softened, about 8 to 10 minutes. Stir frequently to break up the chunks of beef.
