This recipe doesn't require much thought early in the morning, and tastes great!

1 cup all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil

Steps:

  • In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center, and pour in milk, egg and oil. Mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

4 ingredients is a new hit food programme on GoodFood Channel, hostedby to Aussies. I swa this recipe and how the pancakes turned out was almost perfect. The 4th ingredient is upto to you from blueberries to raisins or even choc chips but remember to dust your 4th ingredient in a little flour to stop them sinking and allow them to clingto the mixture.

  • Add 4th Ingredient, remember you choose.
  • In a Non stick Pan at a medium heat, pour 4 pancake lots of mixture into pan (so you have four separate pancake cooking). When the surface begins to bubble turn pancake over.
  • Once golden underneath serve!

2 large eggs
2 cups 250ml milk ((skim, low fat or full fat))
2 1/4 cups white self raising flour*

Steps:

  • Whisk the eggs and milk together to combine. Add in the flour, and beat until the batter is smooth and lump free. Add in any option add-ins you like here.
  • Heat a nonstick pan over low-medium heat with cooking oil spray. Wipe over excess; pour about 1/3 cup of batter per pancake. Cook pancakes for 1 to 2 minutes, or until bubbles appear on the surface and the bases are golden brown. Flip and cook until golden; transfer to a warmed plate; repeat with remaining batter (spraying/greasing pan between ever second or third pancake if needed).
  • Serve immediately with yoghurt, ice cream, whipped cream, maple syrup, berries, or any other toppings you like.

2 scoops Whey Protein powder (Click here to see my favorite on Amazon)
1 teaspoon Baking powder
6 Tablespoons Water or Almond milk
Cooking spray, butter, or coconut oil for greasing the pan

Steps:

  • Place a non-stick skillet on the stove over medium heat. Spray with cooking spray or use butter or coconut oil and let melt.
  • Mix the eggs, protein powder, and baking powder in a large bowl. Add the water or almond milk a little at a time until the batter is pancake batter consistency. You may not need all of the water.
  • Using a 1/3 cup measure, pour out the batter into the skillet. I was able to make 3 at a time. They are ready to flip when bubble start to form on the top.
  • Serve with butter, sugar free syrup, and chocolate chips.

  • Place your frying pan on the stove and turn on the burner to medium high and allow the pan to heat up while preparing the batter {use a good non-stick frying pan if not using oil}.
  • {Place a bit of oil on the pan if using and warm it up, or skip if not using oil}. Spoon out some of the batter onto the pan to form little round cakes {if you want thinner ones, spread it out lightly with a spoon, for thicker pancakes leave the batter piled on}. Allow the pancakes to cook until the edges look golden and bubbles form and disappear creating tiny holes in the pancakes — when you see that, it’s time to flip {should be just a few minutes to get to that point}. You can test by carefully sliding the spatula under a pancake — if it separates from the pan easily, it’s ready to flip. If it seems a little sticky, cook a bit longer. When ready, flip the pancakes carefully using a spatula and fry the other side for another minute or two. Remove from the pan onto a plate and repeat until the batter is finished {oiling the pan in between batches, if using}. {I usually make 3-4 pancakes at a time as I find that’s easiest to handle}.
  • Serve warm with maple syrup {or sweetener of choice, jam, fresh fruit, chocolate sauce, powdered coconut milk, or any toppings of your choice}. Enjoy!

  • Pre-heat a non-stick griddle, or pan over medium heat. If using a non-stick griddle, you will not need to grease the pan with oil or butter before adding batter.
  • Place all ingredients in a large bowl. Use an immersion blender (regular hand blender or one with whisk attachment) to blend everything together until nut butter is combined with eggs and batter is smooth. About 1 minute. If you don’t have an immersion blender, you can also whisk by hand or use a blender. Just make sure batter is smooth and can be scooped with a measuring cup.
  • Before adding the batter to a pan, add a 1/2 tbsp of butter or oil or using cooking spray. The butter should be very hot but not smoking.
  • When hot, pour 1/4 cup to 1/3 cup scoop of batter onto pan or griddle and and cook until the edges start to brown and bubbles form in the middle

  • Flip cakes and cook until golden brown on the underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking or if your pancakes are burning, it means your pan is too hot.
