- Peel and pit peaches. Finely chop or grind fruit. Measure exactly 4 cups prepared fruit into large bowl. Stir in lemon juice and vanilla paste.
- Place sugar in large saucepan. Add pectin; mix well. Stir in water. Bring to boil on medium-high heat, stirring constantly. Cook and stir 1 min. Remove from heat. Immediately add fruit mixture; stir 1 min. or until blended.
- Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. - Pit and finely chop unpeeled plums. Mix plums and 1/4 cup of the water in small saucepan. Bring to boil. Reduce heat to low; cover and simmer 5 min. Measure exactly 3 cups prepared plums into large bowl. Stir in sugar. Let stand 10 min., stirring occasionally.
- Mix remaining 1/2 cup water and pectin in small saucepan. Bring to boil on high heat, stirring constantly. Boil and stir 1 min. Add to fruit mixture; stir 3 min. or until sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)

- Wash 6 half-pint (1 cup) containers and lids with hot water and dish soap. Rinse and dry thoroughly. Set aside.
- In a large bowl, combine crushed peaches, lemon juice, and sugar. Stir to combine. With the tip of a paring knife, scrape the seeds from the vanilla bean and add the seeds to the peach mixture. Stir to combine, breaking up any clumps of vanilla beans. Let stand 10 minutes, stirring every couple of minutes.
- In a small saucepan over high heat, stir together water and pectin. Bring to a boil, stirring constantly. Boil and stir for 1 minute. Add pectin mixture to peach mixture and stir constantly for 3 minutes, or until sugar is dissolved and no longer grainy. If a few sugar crystals remain, that's ok.
- Immediately fill containers to within 1/2'' of container tops. With a damp paper towel, wipe off the edges of containers. Immediately cover with lids. Let stand at room temperature for 24 hours. Because this jam does not go through the full canning process, it must be stored in the refrigerator or freezer.

- Peel the peaches, cut into large pieces and add to a large mixing bowl. Use a potato masher to crush the fruit. Whatever chunks of fruit you see are what will appear in your jam. If you like it chunky, just mash a little; if you want it smooth, go more heavy-handed with the masher.
- Add the sugar and lemon juice to the bowl of peaches, stir to combine, and let sit for 10 minutes. Transfer the peaches mixture to a saucepan. Slice the vanilla bean and scrape the seeds into the peaches. Toss the bean pod in as well. You do not need to “cook” this mixture, you are just using some heat to draw out the vanilla flavoring from the bean. Simmer the mixture until it is warmed through and you can smell the vanilla.
- Remove the vanilla pod and transfer the mixture back to your original mixing bowl. Allow to cool a bit (shouldn’t take long since the mixture shouldn’t be too hot.)
- Working in about 2 separate batches: Measure out 2 1/3 cups of peaches mixture and add 1/4 cup of the pectin. Stir to combine for 3 minutes. Ladle into clean freezer jars, leaving 1/2 inch room at the top of the container and let stand for 30 minutes.
