Steps:
- In a large bowl combine the flour and baking powder. Next, add in the yogurt and mix with a spatula until the yogurt has absorbed the flour. You will need to get in there with your hands to really bring the dough together.
- Please Note: Depending upon where you live and what flour you use, you may not need all of the yogurt. Start with the initial quantity of flour and add yogurt until you get the same consistency as I did in my video. You may not need all the yogurt so it's best to add it little by little.
- Once the dough is formed into a smooth ball, place it on a floured surface. Using a knife divide the dough into 6 (2oz) balls.
- Working with one ball of dough at a time, roll each one out to an 8 x 8 circle. Try to roll the dough as thin as possible as this will ensure the bread cooks evenly on both sides with nice air bubbles in between.
- Heat a large skillet over medium heat. While the skillet is heating melt together the butter, minced garlic, and salt in the microwave for about 30 seconds.
- Using a pastry brush, brush one side of the rolled dough with the garlic butter before placing it (garlic side down) into a hot skillet. Allow the bread to toast and bubble up cooking for about 2-3 minutes on each side.
- Once the bread is nice and toasty on each side remove from the heat sprinkle with fresh chopped parsley or herbs of your choice
- Repeat this process until all 6 flatbreads are cooked. Stack up on a plate or in a covered basket to keep warm. Store at room temperature for 3 days and reheat on the pan before use.

Steps:
- Add all the flatbread ingredients to a mixing bowl and mix together with a spoon, then use clean hands to pat and bring everything together.
- Dust a clean work surface with flour, then tip out the dough.
- Knead for a minute or so to bring it all together (this isn't a traditional bread recipe, so you don't need to knead it for long - just enough time to bring everything together).
- Put the dough into a floured-dusted bowl and cover with a plate, then leave aside.
- If making the garlic butter: peel the garlic cloves and crush them with a garlic crusher.
- Pick the herb leaves onto a chopping board and finely chop them, discarding the stalks.
- Melt the butter in a small pan over a medium heat, then stir through the garlic and chopped herbs, then set aside.
- Dust a clean work surface and rolling pin with flour, then divide the dough in half, then divide each half into 6 equal-sized pieces (roughly the size of a golf ball).
- With your hands, pat and flatten the dough, then use a rolling pin to roll each piece into 12cm rounds, roughly 2mm to 3mm thick.
- Use a knife to cut 6 lines into the centre of each round, leaving about 3cm at each end.
- Place the griddle pan on a high heat, then once hot, cook each one for 1 to 2 minutes on each side, or until bar-marked and puffed up, turning with tongs.
- Brush the flatbreads all over with herby garlic butter as they come off the griddle, then pile onto a serving board so everyone can dig in and help themselves.

Steps:
- Whisk flour, salt, and baking powder in a large bowl. Make a well in the center and slowly add 2/3 cup water, mixing with your hands or a wooden spoon, until a shaggy dough forms. Knead dough in bowl until smooth and elastic, about 4 minutes. Transfer dough to a clean work surface. Wipe out bowl and grease lightly with oil. Return dough to bowl, cover with a kitchen towel, and let rest 30 minutes.
- Turn out dough onto a clean work surface. Using a bench scraper or large knife, cut into 6 equal pieces. Shape into balls, cover, and let rest 15 minutes more.
- Grease a large cookie sheet or the underside of a rimmed baking sheet with 1 Tbsp. butter. Line another rimmed baking sheet with parchment.
- Place 1 piece of dough on prepared cookie sheet. Pat down to a flat oval with your fingertips, then smear 2 Tbsp. butter over dough. Press and slide dough outward with your fingertips, stretching to a very thin oval, about 12x10".
- Starting at 1 long end, roll dough over itself to create a long tube about 1" wide; flatten slightly. Starting at 1 short end, roll into a coil like a jelly roll. Transfer to parchment-lined sheet; cover with a kitchen towel. Repeat with remaining dough. Freeze, covered, 15 minutes.
- Working one at a time, turn coil on its side and flatten to a disc with your palm. Using a rolling pin, roll into a rough oval about 8x4". Transfer to freezer. Repeat with remaining coils and freeze until ready to use.
- Heat 1 Tbsp. butter in a griddle or large nonstick skillet over medium-high. Add 2 pieces of dough, reduce heat to medium, and cook flatbread until bottom is golden brown with large bubbles forming underneath, about 3 minutes. Flip and continue to cook until second side is golden brown, about 1 minute more. Repeat with remaining dough, adding 1 Tbsp. butter before each batch.

- Combine 1/4 cup of your sourdough start with two cups of flour, 1 1/2 cups of water, and 1 teaspoon of salt.
- Leave in a glass bowl on your counter (if it’s a cold winter’s night, you may want to leave it close to a heat source) for 16-17 hours covered with plastic wrap. I have used the dough after about 12 hours, and I really don’t notice a difference, but may be it’s less sour. It will look similar to a sponge, like the picture below, with all of those nice bubbles after the massive hours. It may feel really wet to the touch.
- Place dough on a well-floured surface, and turn a few times. You don’t need to aggressively knead it. The dough can also stay a bit sticky in the middle, but the outside of the dough shouldn’t be sticky. I have had to add a cup of flour before at this point because the outside of the dough kept absorbing the flour. I sometimes use a spatula in one hand, and my free hand to mix it all in. This helps my hands to be cleaner. Make sure the bread looks like the bread dough pictured in the corningwear below or the bread dough pictured in the crock-pot below. It is relatively dry to the touch.
- Put the dough in a colander (I like that colander has holes that allows the dough to breathe and can make a nice little pattern on your bread) or some kind of bowl lined with a cloth and cover completely.

- Combine all the ingredients in a large bowl. Mix with a wooden spoon just until everything is combined. Cover with plastic wrap and let sit for 12 to 20 hours.
- After 12 to 20 hours, your dough will smell like beer and appear bubbly. Using wet hands, place dough on a lightly floured surface. Fold the edges of the dough toward the middle and use your hands to shape the dough into a ball. Place the ball fold-side down on a floured tea towel. Sprinkle a little more flour on top of the dough ball and cover with another tea towel, or by folding the first tea towel in half. Let the dough sit for two hours.
- Half an hour before the second rise is finished, get ready by setting your oven to 450 degrees and putting your empty covered pot inside to heat up. See notes below on choosing a pot.
- Remove hot pot from the oven. Depending on the material of your pot, you may need to grease it with butter. This will make it easier when removing the finish bread. Pick up the towel holding the dough and dump the dough into the pot. Give the pot a gentle shake to even out the dough. It’s ok if it looks messy; it will even out once it’s baked. Place the covered pot back into the over for 30 minutes. Then, take the lid off the pot and cook uncovered for another 15 minutes.

- Place the flour, salt and yeast in a large bowl. Then pour the warm water over top, making sure it's not too hot.
- Generously flour your hands and turn the dough onto a lightly floured surface. The dough will be sticky. Do not punch it down, knead it or roll it out. Gently work the dough into your preferred shape. I typically work it into a French boule (round circle) or 2 loaves and tuck the ends under. Lightly dust the top with flour and then use a bread knife to add 1-4 lines across the top.
- Preheat the oven to 450°F. Place a baking stone, a pizza stone or a iron skillet flipped over into the oven. You'll want the bread to cook on a hot skillet, so let it preheat for about 20 minutes.

- In a medium bowl, stir together all four ingredients. Mixture will look shaggy and a bit dry. If it seems wet, add a little more flour.
- Cover bowl with plastic wrap and leave at room temperature to rest for anywhere between 8 and 24 hours. Dough will get much wetter and will be full of small bubbles.
- Generously flour a cutting board. Gently tip the dough onto the cutting board, using a spatula to scrape it all out of the bowl.
- Dough will be very soft and wet. Using floured hands, quickly grab the top and bottom edges of the dough and pinch them together in the middle, forming a loaf shape. You can see how to do this in the instructional video.
